16. Samgyeopsal – (Korean dish) This is grilled meat that is easy to prepare. You can buy pre-sliced beef or pork for samgyeopsal, these meats are sliced thinly. Or you can prepare the meat ahead, deboned and skinless, and slice the meat thinly. You can sprinkle it with salt and pepper if you like before grilling. While waiting for it to be cooked/grilled you can prepare some lettuce, kimchi, fried eggs, etc. as side dishes. You can also mix mayo and ssamjang (a Korean spicy thick paste) for the dip. When the meat is cooked, get a piece of lettuce then place the meat in the lettuce put some dressing, and wrap it before you devour it in your mouth.
17. Ramyun/Ramen (hot pot) – follow the instruction indicated in the package of the noodles, set it aside. In another bowl, boil water together with the noodles seasonings then put the crab sticks, crab balls, lobster sticks, seafood bun, sea urchin bun, prawn roll, beef balls, etc. (these mixed balls are available in the groceries), and add in some dried seaweeds. Before serving toss in the noodles. (you can also add in slices of cheese, dumplings, other veggies, eggs, fried tokwa/tofu, onion leeks, etc.)
18. Fresh Lumpia – Prepare first the wrapper. Mix eggs, a little flour, and a pinch of salt. Cook in a non-stick pan. Or you can buy from the market ready-made lumpia wrapper. For the filling, sauté minced garlic and onions, strips of ubod or singkamas, shredded carrots and potatoes, sprouted monggo, fried tokwa, salt, and pepper, mix until cooked. Now make a sauce, dissolve cornstarch in water with soy sauce, sugar, and pepper. Cook and stir constantly until it becomes thick. To serve, get a piece of lettuce, place it inside the lumpia wrapper with the precooked veggies. Wrap it around, pour the sauce and garnish with fried garlic and crushed peanuts. (you can include other veggies, meat, or kinds of seafood if you like)
19. Crispy Pata – Clean and wash the pork leg. In a pressure cooker, pour water, garlic, onions, bay leaf, peppercorns, lemongrass, ground pepper, and salt. Cook until it's tender. Drain and let the meat cool and dry, let it sit in the refrigerator overnight. The next day, defrost the meat and let it rest for 3 hours. Prepare a big pan full of oil and heat it, toss the meat and cover it (make sure it's deep-fried). Turn the meat until all the sides become golden brown.
20. Dinakdakan – In the most common recipes of dinakdakan they use pork ears but since I don’t like it I use pork belly instead. It’s either I boil or grill the meat before I slice it into bite sizes including the slices of siling haba, onions. Adding mayonnaise and calamansi juice with salt and pepper. Mix well and garnish with onion leeks and fried garlic.
