11. Pork Steak with Pineapple – I use either pork chop or pork belly. You can marinate the meat in sliced garlic, soy sauce, ground pepper, calamansi juice, a dash of salt and leave it overnight but if you are in a hurry you can marinate it for 30minutes to 1 hour. I normally add pineapple juice in marinating to soften the meat. I fry the meat and set the meat into the pan with some bay leaves, calamansi juice, pineapple juice, peppercorns, soy sauce, and oyster sauce. Let it boil for some time and when the liquid is reduced you can put the slices of onions and pineapples (slices or tidbits). It’s like cooking adobo the only difference is you substitute the vinegar in adobo with calamansi juice for the steak.🥩
12. Pinapaitan – Beef innards are readily available in the market so that’s what we use, wash clean thoroughly internal organs with water and coarse salt. It's best to cook these in a pressure cooker with water, garlic, ginger, and salt to cook until tender. Then drain the water and slice them into small or bite sizes. Saute in garlic, onions and ginger add pour beef stock together with the salt, peppercorns, kamias, tamarind mix, and the ‘papait’ (make sure to strain it) and let it boil. Lastly, add in the siling haba. Garnish with chopped onion leeks before serving.
13. Macaroni Salad – Boil and cook the macaroni salad according to the package instruction, wash and drain. Add in the all-purpose cream, condensed milk, mayo, and fruit cocktail (I include the syrup to keep the salad moist). Optional, you can add other fruits that you like. Mix and chill.
14. Jelly/Gelatin with Strawberries – (My kids love desserts and this is one of their favorites.) Follow the instruction on how to cook the gelatin (Agar- agar or gulaman). Set it aside to cool down and harden. Cut it into cubes or strips. Combine in condensed milk, all-purpose cream, then mix and top with fresh strawberries. (you can use other fruits that you love).
15. Pesto – Cook the pasta according to its instruction and make it al dente (use any kind of pasta whether spaghetti pasta, linguini, fettuccini, penne, etc). prepare the pesto sauce, in a blender put in fresh basil leaves, fresh or dried rosemary, roasted peanuts, garlic, salt, ground pepper, and olive oil. You can make it very fine or a little coarse. Add the sauce to your pasta and top with shredded cheese 🧀.
