The Bechaeml sauce is quite straight forward ... Butter, flour, salt, black pepper and grated cheese. The last beer of the evening comes from Swedish Stigbergets, From a Dry Camel. A west coast IPA 7%. Very fruity taste with clear bitterness, hints of mango, orange marmalade, dried pineapple, rosemary and grapefruit. When it comes to Swedish craft beer, especially from Stigbergets, you will never be disappointed! (And yes, I forgot the beer in the freezer.. 😄) #Food #Beer
Beer number 2 this Saturday comes from Ofrälse Brygghus at the bottom of Sweden, in the county "Skåne". A soft and slightly milky beer, NEIPA. Clear focus on the hops, but the wheat malt contributes to the "milkiness" or rather balances the taste in a pleasant way. Fruity taste with a little sweetness, hints of grapefruit, pineapple, wheat bread (a lot!), Herbs and honey. The Big Cone NEIPA 6.8%, a very well-balanced beer! #Beer
The tomato sauce is ready and should simmer for a while before I add the ground beef. Baked tomatoes and garlic become the basis of the tomato sauce. Mix with water, salt, black pepper(a lot) and beef stock, and add the mixture after you have fried the onion, garlic and grated carrot in olive oil. A splash of red wine from Italy will raise the dish to a whole new level and a very good tip is that the wine you use in the food will be extra good to drink with the food! #Food #Wine
Finally Saturday afternoon! I've booked myself in the kitchen all afternoon. Today I cook lasagna from scratch. Start by slowly cooking fresh tomatoes with a little garlic, about 2 hours at 110 degrees. The tomatoes will be incredibly fresh and sweet. Saturday's first beer comes from Swedish Omnipollo, Maz 5.6%. Hop aromatic taste with clear bitterness, hints of passion fruit, rosemary, pineapple, white pepper, gooseberries and grapefruit. Simple but delicious pasta dish. If you take the time, you do not need any special ingredients.. time is the special ingredient! Onions & garlic are fried on low heat, then add cherry tomatoes that have been baked in the oven on low heat with thyme, basil, salt, black pepper, simmer on low heat and add cream and aged cheese. The Friday beer comes from the Swedish brewery Stigbergets, Sugar Ape NETIPA (Triple IPA) 10%. High alcohol content so it will only be this beer today 😄. Today we bake Swedish classic oatmeal cookies / "Havrekakor". Very easy to do. Whisk butter with sugar, add ”Hjorthornsalt” / deer antler salt (makes the cookies extra crispy), flour and oatmeal. Bake in the oven for about 10 minutes. Perfect to take on a picnic or fishing trip. #Food

Thursday! Wonderful Thursday and today we eat vegetarian. Once or twice a week I try to cook vegetarian food. For the children but also for the environment. When I cook vegetarian food for the family, especially the children in mind, I try to do something a little extra. Today I make spinach soup and for this I will have egg halves and Quesadilla stuffed with cheese and oven-baked cherry tomatoes. Spinach soup is easy to make, it just needs love. A good base with onions that are fried slowly in olive oil, homemade vegetable broth and spinach leaves .. Few ingredients but really good and above all incredibly healthy! #Food
Rhubarb, rhubarb, rhubarb ... There is so much to pick now, I take the opportunity to make homemade syrup. Today I try a new combination of rhubarb and mango. It's a lot of work but well worth it, will be appreciated on the pancakes this weekend .. Or it will be earlier than that!?😋 #Food

Mozzarella, basil and pesto-filled chicken. "Butterfly" chicken fillets and baked them in the oven on a bed of cherry tomatoes. For this I serve rice and a creamy paprika sauce. Not entirely wrong on a Monday evening!😋 #Food
Mother's Day and we celebrate with my parents. Today we eat tacos for the children's happiness! A walk in the woods where I spend much of my youth, beautifully! Also take the opportunity to check out my crops that I have planted here. It looks like there will be a lot of currants this summer! Lemon balm, which is an herb, I take home with me. I eat this raw, and make tea from it. An incredibly healthy herb!
Chicken with rice and homemade garlic sauce. A dish I often cook and which the family always longs for. However, I could not resist buying a large piece of sirloin steak, SEK 30 (3 bucks)! It is cheap here in Sweden. Since I am the only one who likes red meat here at home, I really enjoy the few opportunities I get! Serve the meat with a bearnaise sauce, which is a must! #Food

Omnipollo in collaboration with Other Half, I'm With Stupid NEIPA 7.1%. So Sweden wins by far, but a somewhat awkward fight where a Dry-hop beer is set against a regular IPA beer from Canada(which was awesome!). Friday! Full up all week now we can unwind and cook. Have just finished a pita bread dough that will ferment for 2 hours (when the dough has risen, I will mix in a little more flour and let it rise again). Two new beers purchased. Sweden against Canada and I hope it goes better for Sweden with the beer compared to the ice hockey championship where Canada defeated Sweden. First out is Canada and the Brewery Collective Art. Love this brewery and this beer is called IPA No 20, 6.5%. Nuanced, fruity, hop-aromatic taste with hints of light bread, orange, passion fruit, pineapple, herbs, mango and pine resin. Very good but can it win against Swedish Omnipollo or will it be just like with the name, "I'm with stupid"? #Beer #Food
Gyros with french fries, tzatziki and homemade pita bread / flatbread. Simple awesome where all components need to work together. Pork tenderloin marinated in honey and lemon (fry longer than you think, makes an incredible difference ..), tzatzika with a lot of grated cucumber and garlic, fresh tomato & cucumber that balances the flavors. The only thing missing is a Mythos and a sunny Greek beach. #Food

I have a few hours myself at home and then I take the opportunity to cook something extra good for supper. A summer-ish Gyros with french fries and possibly homemade pita bread if time permits. Pork tenderloin that I marinate in olive oil, honey, lemon juice and lemon zest. In addition, there will be some vegetables and a homemade tzaziki. Today's beer (yes it's "Friday"😊) comes from a nearby brewery, Business Monkey Sweden. An New England IPA, Vacationland Juice 6.5%. Very fruity taste with clear bitterness, hints of pineapple, pine needles, nectarine and grapefruit. Top notch! #Food #Beer

New week, new recipes! The days go by fast, taking care of our daughter and today our son also takes a friend with him after school. Afternoon "Fika" will be American pancakes with homemade raspberry jam. Tonight's dish will be a tomato soup, we can call it "6 hour soup". I roast the tomatoes on low heat (125 degrees) in the oven, 4 hours. This will transform the tomatoes and they get a lot sweeter. Then mix the tomatoes with fresh garlic, salt, pepper, beef stock, fresh basil and a little water. It is then allowed to boil down on low heat. In the mean time I "burn" leeks, yellow onions and peppers in the oven (Grill mode, 275 degrees) to get a smoky taste. It should then be mixed and blended into the final soup with heavy cream. #Food
Minced meat beefs with oven-roasted potatoes, carrots and red onion, cream sauce and black currant jelly. Incredibly good, a lot of cheddar in the ground beef makes the beefs juicy. The red wine worked quite well with the dish! #Food

Minced ground beef, cheddar cheese, thyme, garlic and spices. I will roast the vegetables in the oven with olive oil and a little honey to balance the saltiness. Today's beer comes from Mikkeller brewery from Belgium, 'Kærlek' Hazy Pale Ale 4.9%. Very fruity, hop-aromatic taste with clear bitterness, hints of pineapple, mango, grapefruit and pine needles.
