Good afternoon! Now I have bottled the beer. Now I have to wait another two weeks when the beer is stored in a bottle. You add a little sugar, which forms carbon dioxide. Have also poured in some pure passion fruit(strain to remove seeds). Maybe I sketch a own label because I used old bottles. #Beer

Savoy and leek soup with oven-baked pork tenderloin. Still a lot of meat left over from the weekend so I tossed together a creamy soup. Fry leeks and a little potatoes (make the soup thicker), add savoy cabbage and fry further until the cabbage softens. Season with salt, pepper, onion powder and pour on chicken broth. Boil for 10-15min and mix the soup smooth. Then add cream and serve with the meat. #Food

Good afternoon! Today I am busy with my new hobby, homemade beer. Today I will do an IPA and will add dried mango to the boil. Maybe even a little passion fruit .. Be careful with sugar levels because too much sugar destroys the fermentation process. #Beer

Good evening! After a full day of ice skating, it's time for supper. The children are were hungry for the classic Swedish "Korvstroganoff" and for us adults I make a meat stew. I still have pork tenderloin from New Year, so then it is perfect to use the last in a new dish. Bacon, shallots, garlic, peppers, cream and season with salt, black pepper and thyme. Could not hold myself, the bottles will stand for another week so that the carbon dioxide has time to form clearly. This is my first home-brewed beer. Cooking time! I make fried rice so we have lunch boxes during the week. Perfect when I have all the ingredients. Fry red onion, garlic and ginger in sesame oil. Then I add peppers, carrots and kabanoss sausages. In the end I add eggs and rice. Season with black pepper and soy sauce. For lunch today we eat hot dogs. #Food

Good evening! We have tomato sauce left, then we have to make pizza! Once you have made pizza dough a couple of times, you make it automatically. Everyone in the family wants different pizzas. Good afternoon Noise! Today I will make a small experiment with oven-grilled chicken. Will make a spice butter with passion fruit. First I squeeze out the fruit juice, then I will boil the juice with honey to make it a little thicker. Then I mix in this with the butter, garlic and various spices. #Food

Passion fruit and garlic chicken. Incredibly juicy and the trick is to throw ice cubes in the oven to create moisture. 180 Celsius for 80-90min. Also important to season under the skin of the chicken. Very happy and this will be done more times! #Food

Late supper, the kids have gone to bed and I'm tossing together some French Toast. Cornbread and some pancake batter that is left over in the fridge. Leave the bread slices in the pancake batter for a couple of minutes and then fry the bread crispy. Top with cinnamon sugar. #Food

Friday afternoon, my favorite time! This is because I have a lot of time for cooking. Tonight it will be chicken hamburger (panko breaded chicken thigh fillet) with cheddar cheese and a coleslaw. Specifically, a roasted garlic slaw. Will roast a whole garlic with olive oil, then squeeze the garlic into mayo and then add grated carrots and cabbage. #Food

Nebuchadnezzar from the brewery Omnipollo (Sweden). This was their third beer and won the prize for best beer from Sweden in 2012. Swedish beer, yes we have really mastered the art. Stigbergets Brewery - Existens Essens Trancendes, IPA 5.9%. A solid hop note with Mosaic & Enigma gives fruity tones with hints of should and overripe citrus fruits! Smooth and good, but I think if you had pushed it up to 6.5% -7% it would have been magical. Easier said than done but this is a really good IPA! #Beer

Panko -fried chicken burger. Flatten the chicken thigh fillet and turn in flour, eggs and panko. Fry crispy and serve with bacon, cheddar cheese, red onion and homemade coleslaw. #Food

Today it's time to try my second homemade beer. It has been fermented for 10 days. In this beer I have added dried mango and fresh passion fruit juice. Incredibly nice color and taste already now. Tomorrow I will bottle the beer for further storage in a bottle for 1-2 weeks. #Beer

Final test of my first home-brewed beer. It has been stored in a bottle for 13 days. An American Pale Ale brewed with Citra. For bottling, I added a few drops of fresh passion fruit juice. It is a smooth and fruity beer. I will refine recipes and at the next brewing I will also use hops Mosaic. And I will start to design my own labels, and find a cool name for the beer. #Beer

Good afternoon! Monday and tonight there will be chicken with a tomato, mozzarella and bread salad. I marinate chicken with olive oil, orange zest, orange juice, honey, garlic, chili flakes and salt. Oven-grilled chicken thigh fillet with tomato & mozzarella bread salad. Had leftover bread which I fry up in olive oil. The vegetables have absorbed the juices from the chicken and marinade, which include orange and honey. Very tasty and the bread croutons soak up the delicious sauce, yummy! #Food

Leftover cooking. Have a ciabatta bread that I baked this summer left in the freezer. Gives the bread a new life by first grilling it with mayonnaise mixed with garlic. Then add red cheddar cheese and let it melt. Roast beef, tomatoes and lots of red onion. Quick, easy and very good! #Food

Time to brew my third beer. I have increased the level of difficulty a bit and will use three types of hops for this beer, Citra, Mosaic and Ekaunot. This combination will be a very fruity and tropical IPA, almost a DIPA(Double IPA) because I will add suger. The yeast loves suger and will turn the suger into alcohol. Will also try to dry hop the beer. I will do this 7 days into the fermentation and the day before the beer is to be bottled (after 13 days). But first I have to…

Here you see two kinds of hops, as pellets, which I will use in today's beer, Mosaic(left) and Ekaunot(right). The aroma is very strong, Mosaic with character from mango, tropical fruits and pine needle while Ekaunot is a bit peppery and citrus but with also a tropical aroma. I save a bag of Mosaic and Citra for dry hops. #Beer

Now the hops are added and I have to wait 20-40min before I can cool the beer to 21 degrees. I have to do this for the yeast to be activated. When I cook, I always go on my own feeling .. But when brewing beer, you have to follow certain rules. So here are the short steps I have made. Finally done! This is a craft that I really like to do. The beer is cooled to 21 degrees, strain, yeast added and now I just have to wait. Today I dry hop my beer. The color starting to be clearing and now it is starting to look more plesant. The most intense fermentation has slowed down(took 3 days) and today I add hops, 25g Mosaic. The brewing technique will give the beer a more intense taste and aroma. Now I wait 10 days and then on day 13 I will add 10g Citra. Day 14, the beer is ready for bottling. #Beer

Good evening! Tonight it will be a Swedish classic, "Köttfärssås och spagetti". A very common dish in Sweden and it is prepared in many different ways. When I make it for the family, I keep it simple. Minced beef, garlic, yellow onion, carrots, broth, mashed tomatoes, salt and pepper. One of my favorite thing to do, baking with my daughter. Today we make classic chocolate balls, and the name is not the same if you look back 30-40 years back in Sweden. Something I do not intend to say here on Noise or something I will teach my children 😄. Sugar, muscovado (should actually be vanilla sugar but did not have it at home), a pinch of salt, cocoa, oatmeal and butter. Mix everything and roll balls, cover with sprinkles and place in the fridge for 1-2 hours. #Food

Luckily I only bought one of these beers. It is not a sour beer, but a simply spiced beer. Connecticut Valley from the USA with the beer Fruit Smoothie Orange Pomegranate 5%. Low carbonation, mostly fruit juices taste without any hops or barley malt flavor. The only thing that is still good about this drink is that it contains a little alcohol, especially since it cost more than if I had bought regular fruit juice! 😄 But still I think this is something my wife would enjoy…

This is a project I started almost three weeks ago. For fun, rice wine. Water, rice and yeast. An odor that is bordering on horrible, especially when the rice is fermenting.
