Vegetable Dish: Foods For My Picky Eater Kids

Not all kids love to eat vegetables so as a mother we need to find ways to let them eat vegetables because it is one of the most essential sources of vitamins and minerals for their body. With my four kids, Adam and Xander are a little bit picky when it comes to vegetables. And sometimes I am stressed about how to let them eat vegetables without forcing them to do so. So I would search for some dishes on YouTube or on Facebook about foods that are best for picky eater kids and try them here at home.
Here are the dishes that I tried cooking at home that become my kid's favorite:
Fried Cabbage Roll
I saw a recipe about this on Facebook but the ingredients that they used are ground meat as the fillings, but since I don't have money to buy ground meat at that time so I used corned beef instead.
I first boiled the cabbage leaves so they won't be torn when I rolled them after putting the fillings.
After done rolling all those, I put it in a steamer and steam it for how many minutes so that the vegetable fillings (Chinese cabbage leaves, chayote, and corned beef) will be cooked.
After done steaming, I let it cool down for a minute before coating it with crispy fry, and when I'm done coating all those, I fried it.
At first, I was reluctant to let my kids try it since it was their first time and they might not want it but that feeling was gone when I saw my kids enjoying it and consuming all those cabbage rolls that I fry.
Vegetable Spring Rolls
This is one of my kid's favorite viand. What I put inside as fillings is tuna, cabbage, small slices of squash, and chayote. What kids love in this is the crispiness of the wrapper and they love it more when they can dip it in ketchup. But with me, I prefer having soy sauce as my sauce and putting a small number of chilies to make it a little spicy.
Bola-bola (made of Vegetable and Fish)
This evening I decided to cook bola-bola since we have lots of chayotes here at home. We harvested those last Saturday and others were brought by my partner to his workplace but still, there are many left here at home so I find ways how to cook them in different ways.
Yesterday, I cooked spring rolls. I used ground chicken meat with lots of small slices of chayote and the kids really liked it a lot. So today I decided to make another viand as chayote as the main ingredient.
Cutting the chayote into small pieces then add the leftover fish then mix those. After mixing I add two pieces of egg, and flour then seasons it to have a better taste. The next thing to do after I'm satisfied with the taste, I fried it. All of it is consumed and kids even asked for more.
I'm really happy to see my kids enjoying the food that I served to them. Adam and Xander might be picky eaters but when this kind of vegetable dish is what I cooked, they really ate a lot.
It's another busy day for me and I'm not active here again during day time. And another reason why I can't even visit more articles is because of the poor internet connection that we have. It's been days that I'm struggling with my internet connection. I just hope that in the next few days, it will be okay since I want to grind more here in the online world.
