Hi guys, good morning to all of you.. hope you all are doing well.. Yesterday we had minimal rains from the typhoon and I was thinking we got lucky as it is getting ended soon but there is a red alert issued to us that there are much more heavy rains, storm in coming two days.. Hence, today we went out to buy vegetables, groceries and other necessities to stock them up for next week and I decided to post a recipe today.. Cauliflower is a vegetable that most of the people like when they taste it but I have come across many people who asked me to teach them how to make Cauliflower fry Indian version over the years.. so today I have decided to make an easy post about it... if you guys are ever interested, you can make this and enjoy with bread and rice as a side dish.. let's go...
The recipe I listed below has cauliflower as main ingredient and could be made within 15 minutes maximum including the chopping time. So why waiting, let's dive into that.
The ingredients we need:
Cauliflower: Cut into smaller flowers, wash them twice and dip/soak them in warm water mixed with salt to clean it
Onions: one or two depending on how much vegetable you have
Tomato: one or two
Green chilly: If you can bear spiciness, take 3 and if you want less spice, take 2
Curry leaves: few
red chilly powder: 3/4 spoon, again depending on how much green chilly you add and how much spicy you want the fry to end
Turmeric powder: 1/4 spoon
Cumin seeds and cilantro seeds to saute :1/4 spoon each
Coriander powder or Indian garam masala powder: 3/4 spoon.
Ginger garlic paste: one spoon
Now the method:
take a pan and put 5 spoons of oil in it.
Put the cumin seeds and cilantro seeds in it once the oil is hot and wait for the seeds to burst or else it will ruin the dish.
Add curry leaves and turmeric powder. Mix well and wait for 20 seconds so that the oil would observe the flavor of the leaves
Add ginger garlic paste and mix it well and wait for 30 seconds by keep stirring it. Now add the onions and fry them until they are golden yellow.
Now add the tomatoes and fry the same for another 3 mins, cook all this in a medium heat.
Now add green chilly and all the powders I mentioned (coriander powder, red chilly powder, masala powder). If you want to avoid too much spiciness, just remove the green chilies from the recipe altogether and also can minimize the quantity of the red chilly powder. And now add salt and mix everything together. Now you get that fantastic Indian aroma in your kitchen. Keep mixing for a minute.
Now add the cauliflower slowly and mix all the vegetables and the masala together so that all the flowers has equally distributed masala.
Close the lid of the pan or use a plate to close it and wait for 10 minutes or until the cauliflower is cooked. remember to cook it in a slow mode.
Now add the cilantro leaves before you switch off the pan and if you want to add some more flavor to your dish, you can always add some lemon juice AFTER switching off the pan and mix it well together. It will look delicious like this.
I hope you make this easy dish and have fun eating it. you can eat this with rice or chapati (tortilla) or inside taco shells or with pancakes and also as a snack alone.
Using the same recipe, you can also make Beans fry adding beans instead of cauliflower... and also same recipe can be used for Potatoes fry, just replace potato in the place of cauliflower.. once you make this, you will keep making it because this is drool worthy recipe :)
