Recipe to make Iskrambol or otherwise recipe for Ice scramble, the famous street candy from the Philippines.

Iskrambol or Ice Scramble is one of the delicious Filipino version of Slushy made of ice and milk powder, with banana flavor which is usually sold by street vendors.

The origin of this dessert is still a mystery, but what we do know is that the street vendors of the Philippines were the ones who really made it popular in this country. With all these colors and abundant toppings, how can it not catch the eye of passers-by?

In other countries it is a bit difficult to find banana extract so as an alternative we can use caramel extract which goes very well or any other extract we like in taste.

Ingredients:

  • 1 cup powdered milk

  • 1 tbsp sugar

  • 1/2 tsp banana extract (or other flavor if you can't find it, e.g. caramel)

  • a few drops of red food coloring to get the right shade of pink

  • 3 cups crushed ice

Toppings per cup

  • 2 tbsp milk powder

  • Chocolate syrup

  • 1 tbsp colored chocolate truffle

  • 2 chocolate chips

  • and practically anything else we like! In the Philippines they put small marshmallows but in other countries they are a bit hard to find.

Step by step cooking recipes

  • Put the grated (shaved) ice in a bowl, add the milk powder and mix lightly but as quickly as possible.

  • Then we add the sugar, the caramel extract (or banana if we can find it) and a few drops of red food coloring and mix, as quickly as possible so that the ice does not melt, until they are well mixed. We put our mixture back in the freezer for 2 minutes.

  • mix the crushed ice with the powdered milk and caramel extract

  • In a plastic cup (250ml) put chocolate syrup around the perimeter and let it run down the walls. Then fill it to the middle with the mixture with the crushed ice and put a tbsp of milk powder on top. On top we put another layer of crushed ice up to a finger below the rim of the glass. On top, put another tbsp of milk powder, a little chocolate syrup, sprinkle the truffle, dip the two chocolate bars and add any other topping we like.

  • Serve immediately with a spoon!

  • Crushed ice melts easily, be sure to store it in the freezer until needed.

2. Apple crumble

An easy and quick recipe for grated apple pie! Delicious apple pie ideal for all hours!

To make this wonderful recipe for grated apple pie you will need two large bowls and a shallow pan.

Ingredients:

For the dough:

  • 400 gr. flour for all purposes

  • 200 gr. white sugar

  • 160 g. sunflower oil

  • 2 eggs

  • 1/3 tsp salt

  • 1/4 tsp grated cloves

  • 1 1/2 tsp baking powder

  • 1 tsp vanilla extract

For the filling:

  • 800 gr. red apples (weight of peeled apples)

  • 150 g. brown sugar

  • 1/8 tsp ground cloves

  • 2 tsp cinnamon

  • 3 tsp cornflour

  • 1 tsp caramel extract

  • 1/2 tsp orange extract

Step by step cooking recipes

  • In a large bowl, put the flour, the 200 gr. sugar, salt, grated cloves and baking powder. Mix them well and then add the olive oil, eggs and vanilla extract. Mix very well with a fork. The dough becomes like crumbs. Don't expect to see the classic cake batter. Our dough should look like crumbs.

  • In a large bowl, cut the apples slowly into thin slices. Then add the sugar, cinnamon, caramel and orange extracts, grated cloves and cornflour and mix very well so that all the ingredients go everywhere.

  • Line the pan with parchment paper and lightly flour it. Then spread 3/4 of the dough and press it well with your hand to make a flat bottom.

  • Press the dough into the pan with our hand. After that spread the filling evenly over the dough. Then crumble the rest of the dough over the apples. Spread the filling on the dough. Then sprinkle the dough crumbs over the filling.

  • Bake in the middle position of the oven at 190 degrees for 50 minutes until our apple pie is golden brown. As soon as we take it out of the oven, let the temperature drop a bit and then cut it into pieces.
