Milk Buns and Breads with herbs recipes
1. Milk Buns
Recipe for fluffy buns leavened with milk! They are eaten warm and pleasantly accompany all meals of the day!
Ingredients
320 gr. flour for all purposes
130 gr. fresh whole milk
70 g. lukewarm water
25 gr. fresh yeast
15 g. white sugar
1 tsp salt
extra flour for the flour
Step by step cooking recipe
Put the water in a large bowl and dissolve the fresh yeast and sugar in it. Wait until the yeast foams a little and then add the milk and mix lightly to make our mixture one.
Add the flour and salt and knead well, regularly folding the ends of the dough inwards. Then leave the dough covered for half an hour at a warm temperature.
Lightly flour the workbench. Divide our mixture into 5 equal pieces. In this recipe, each piece yields about 110 grams. We make each piece into a ball and flour it very lightly. Then we will work on each ball separately.
The procedure for each piece of dough is as follows. With the rolling pin, open each ball vertically (oblong) to a thickness of about half a centimeter. Then we fold the strip in half from top to bottom, then in half from right to left and then again in half from top to bottom. We open it again like this with the rolling pin vertically long and narrow. Fold again in the same way and open one last time lengthwise. Between each long and narrow opening with the rolling pin, very lightly flour the surface that the rolling pin will press on, but before folding it, dust it with too much flour.
Now we take our longitudinally opened dough and with a damp paper towel we stroke the upper surface of the dough. We do this to make the surface sticky. Finally, start and roll from top to bottom like a roll but gently without pressing. We don't need to press for the dough to stick because when it rises, it sticks by itself. We leave our rolls on parchment paper laid on the sheet and leave them at room temperature for 50-60 minutes to rise.
In a preheated oven at 190 degrees, bake them for 16-18 minutes in the middle position of the oven. Then leave them on a rack to cool. Ready!!!
2. Breads with herbs

500 gr. flour for all purposes (11% protein minimun)
450 gr. water
25 gr. honey
25 g fresh yeast
10 g. salt
20 g olive oil
5 g extra olive oil for greasing the mold
For the top we want
Sea salt
Oregano
Garlic powder
Step by step cooking recipe
Put the fresh yeast and honey in a bowl. Add all the water in the recipe at lukewarm temperature and stir to dissolve the honey and yeast.
Add the sifted flour and salt. Put the kneading hooks in the hand mixer and mix our dough well for 5 minutes. Add the 10 gr. olive oil and mix with the hooks for another 1 minute.
We place parchment paper in our mold and grease it with olive oil on the bottom and walls. Pour in our dough which is quite thin. We cover the form with film in which we make a few small holes with a fork so that it can breathe and let it rise for 45-50 minutes at room temperature.
After it swells, pour a few drops of olive oil on top and let them roll onto the surface. Finally, sprinkle sea salt, oregano and garlic powder on top. Preheat the oven to 230 degrees and put the mold on medium heat where we let it cook for 30 minutes.
