1. Chickpeas with lemon

DELICIOUS WINTER FOOD!

The tastiest way to cook chickpeas.

Servings : 2 Degree of difficulty : Moderate

Ingredients:

  • 250 gr. chickpeas

  • 1 L water

  • 60 gr. onion

  • 20+20 ml olive oil

  • 1 large lemon

  • 4 tsp salt

  • 2/3 tsp black pepper

  • 1 tbsp rosemary

Total weight of ready food: 800 g.

Total calories of prepared food: 1264

Calories per 100 grams of food: 158

Calories per 400 gram portion: 632

Step by step cooking recipes

  • Put the chickpeas in a large bowl and fill it with water. We leave it for about 24 hours for the chickpeas to swell.

  • The next day, cut the onions into thick pieces and fry them on 4/6 heat together with 20ml of olive oil. While frying, add 1 tsp of salt. Then, after the onions have softened and started to wilt, add the chickpeas, after having previously emptied the water from the bowl. Fry them for 2-3 minutes and add the rosemary. Fry them all together for a minute and add the lemon juice, the rest of the salt, pepper and water. Boil them with the lid closed at 5/6 of the heat for about an hour and a half until you see that the chickpeas have softened.

  • Take the pot off the heat and pour the contents into a shallow pan, having preheated the oven to 200 degrees. Then add the remaining 20 ml of olive oil and place the pan in the oven in the middle position. Leave it for about 20-25 minutes, checking that the chickpeas do not seize. If necessary, mix carefully every 10 minutes.

  • The purpose is to let the already reduced water from boiling remain so that, together with the lemon and oil, they will make a tasty juice in which the chickpeas will sit.

2. Fried noodles with grated cheese

A QUICK, TASTY AND SATISFYING FOOD.

Easy food, perfect for cold winter days.

Servings : 6 Degree of difficulty : Easy

Ingredients:

  • 3 medium tomatoes (500 g peeled)

  • 700 g noodles

  • 1.6 liters of water

  • 200 gr. onion

  • 100 gr. grated goat's head

  • 400 g. chopped canned tomato

  • 2 tbls tomato paste

  • 3 tbls olive oil

  • 3 tsp fine salt

  • 1/2 tsp black pepper

  • 1 tbls oregano

  • 1/2 garlic powder

  • 1 tsp sweet paprika

  • 1 tsp dehydrated leek

Total weight of prepared food: 3,485g

Total calories of prepared food: 2,974

Calories per 100 grams of food: 85.3

Step by step cooking recipes

  • Peel the tomatoes and cut them into very small cubes after removing the skin. Put the olive oil in the pot and as soon as it heats up (do not burn completely) add the chopped onion and mix it well so that it is all oiled. Add the oregano. Fry it on medium heat and add the paste. Mix well so that the pulp is spread everywhere and then rub it on the bottom of the pot until you see that the onion and the pulp have become one and that the pulp has left its color everywhere.

  • Always on medium heat (4 out of 6) add the can of chopped tomatoes and mix well while waiting for our mixture to heat up.

  • After about 5 minutes, add the chopped fresh tomatoes and mix well. Add the salt, pepper, paprika, garlic powder and dehydrated leek and mix well so that they are well coated. Leave the mixture covered for 5 minutes on medium heat.

  • After the mixture has thickened and boiled slightly, add the noodles and mix well so that all the noodles are mixed with our mixture. After this is done, add the water, which covers the noodles by at least 2 to 3 fingers. ATTENTION it does not need more water because it will be too watery.

  • Cover with the lid, always on medium heat, and stir every 1 minute, being careful not to let the noodles stick to the bottom of the pot.

  • When the noodles are ready they will have absorbed almost all the water and in our pot there will be the noodles together with the tomato sauce.

  • Turn off the heat and take the pot out of sight. Add the grated cheese, stirring until it melts from the temperature of the food. This bit of cheese will give the food an extra flavor and bind it a little more.

  • When we serve the food we can put extra grated cheese on our plate.
