Kare-kare is a Filipino dish often served on special occasions. It's a stew with thck peanut butter sauce. There are a lot of versions of kare kare, there's beef kare-kare, chicken kare-kare and pork kare kare. Many filipinos don't cook this recipe because they think it's hard to cook. Here I will teach you how to cook pork kare-kare in very simple steps.
First you will need:
pork
oil
onions
garlic
3/4 cups peanut butter
anatto (atsuete) powder or seeds
Cornstarch
Eggplant (sliced)
String beans (sitaw) cut into about 2 inches pieces
Bok choy (pechay tagalog)
broth cubes
fine pepper (pamintang pino)
2 tablespoon fish sauce (patis)
Boil pork until tender. Set aside. Combine anatto powder/ seeds in warm water (lukewarm if you're using powder) and stir.Set aside. Combine cornstarch in cold water and stir. Set aside.
In a pan, Saute onions and garlic and pepper. Put pork and pork stock (pinaglagaan ng baboy) and broth cubes. Put peanut butter. mix until well blended. put anatto (atsuete) liquid and cornstarch liquid and stir until well blended and thick. put fish sauce. Put eggplant and string beans. Let it boil for 5 minutes. When vegetables are tender, put bok choy (pechay tagalog). cook until bok choy is tender. Best serve with sauted shrimp paste(bagoong alamang)
Sauted shrimp paste:
saute onion, put shrimp paste, add finger chili (siling haba), and a bit of sugar to taste.
