Good afternoon Noise, finally Friday! Today I will be cooking the whole afternoon. Tacos tonight and will pickle a few different things today. Among other things, lime-marinated radish and cucumber. Adding honey for a little sweetness. Then there will be pickles red onions and guacamole. #Food
Freshly bathed bearded dragon. He is so kind and loves to take a bath in warm water. A perfect reptile if you have children at home. #Pet
Perfect comfort food, "Taco-låda" / Taco gratin. Consists of three layers. Creme fraiche and cream cheese, ground beef with Mexican spices and peppers & red onions. Everything topped with grated cheese. For this, nacho chips, guacamole, pickled red onion and lime-marinated cucumber and radish are served. #Food
Finally it's time again! A whole day with old friends (we have hung out since we went to primary school). Wonderful sunny day for BBQ and enjoy cold beer. Towards evening there will be video games and charcuterie. Wish you all a really good Saturday!
Fun activity! Air rifle shooting. Very hot so a couple of cold beers are needed! Today we test a black IPA that an acquaintance has brewed. A little like stout, dark but with a lighter taste.

Today we bake classic Swedish cookies for our "Fika". "Hallongrottor" / Raspberry Caves. Easy to bake, flour, butter, baking powder, sugar and vanilla sugar. We also made our own raspberry jam that you fill the cookies with. Raspberries, sugar and a handful of currants (natural thickener). Now it is time for FIKA 😊
When we were at the market, I saw these sun-ripened Swedish tomatoes! And just then I got hungry for Gazpacho. A cold, cooling vegetable soup. For this, oven-toasted bread with a toasted garlic mayonnaise and radishes is served. #Food
We continue to bake classic Swedish cookies. One of the absolute favorites here at home is ”Vanilj drömmar” / Vanilla Dreams. This cookie is also very easy to bake. Butter, sugar, vanilla sugar, rapeseed oil, flour and deer antler salt (this is what makes the cookies fluffy and crispy).
Tomatoes! There is so much to do with this vegetable, and it is now it is as best in my country. Tonight it will be bruschetta with burrata cheese and lemon zest. A lovely combination that really enhances the summer feeling. #Food
I love just taking ingredients and throwing together a quick lunch. Fried a couple of slices of bread with butter and garlic. Serve this with tomatoes, carrots, peppers, chili, pickled red onions, lots of lemon thyme and tops with spring onion salt & black pepper. #Food
Onion rings with roasted garlic mayonnaise. The star here is simply the dip. Roast the garlic in foil with a little olive oil in the oven for an hour. Squeeze out all the wedges and mix with mayonnaise, squeezed lemon, black pepper and salt (today I use spring onion salt) #Food

Good afternoon / late morning! Today we are going out into the forest on a picnic. See if we can find some berries to pick. For the picnic, there will be American pancakes and a smoothie of watermelon, lingonberries and a touch of honey and lemon balm.
Ended up in "Annelundsparken" / forest area. 91,400 square meters large and more than half the area is a nature park. Centrally located in Borås. Nice nature and a fantastic playground. Wild hazel bushes also grow here.
So we have these incredible young fresh potatoes, 100% home grown, organic! Saving some to just boil and eat with butter. But tonight I will make a roasted potato salad with pea sprouts, sugar peas, green onions and a vinaigrette on olive oil and lemon. For this we have chorizo sausage and possibly a cold garlic sauce. I will roast the potatoes really hard in the oven, crispy outside and silky smooth inside. #Food

Wonderful day out at "Kypegården", Borås, forest walk and swimming. We found blueberries but someone had already picked most of the berries at this very place. Now we have just come home and I take a cold apple cider with mango taste. Lots of ice and it cools well!
More classic Swedish cookies, "Havrekakor" / Oatmeal cookies. A real classic that even my mother often baked when I was young. Again, I use deer antler salt to make the cookies extra crispy. This time I use flour and oatmeal from Vänga (which I wrote about a while ago).
Cooking afternoon! My favorite, especially today when you can combine cooking with a glass of red wine and enjoy the summer holidays! New beer from my favorite brewery. Stigbergets with the beer Glow. A farmhouse IPA 5.5%. Fruity, nuanced taste with clear bitterness, hints of dried pineapple, rosemary, honey, gooseberries and citrus peel. It was perfectly fine, but I'm not a huge fan of beer brewed with wheat. Served ice cold in a frozen glass. 🥵😊 34 celsius in Borås today. #Beer
Rich, thick, full of aroma! Light tones of cinnamon, cherries. The wine selection for the minced meat sauce / bolognese was a success! Our daughter screamed GOOD! That is a good grade.. 😊 Boiled the sauce until the chopped garlic was dissolved, about 4 hours. Served with spaghetti, creme fraiche, green onions, pea sprouts and romaine lettuce. #Food
Today we are with my parents and I end up in the kitchen as usual 😊. Grill sausages and some other yummy things. For this I make a tzatziki. I think the most important thing is to get the liquid out of the cucumber and to let the garlic lie in the olive oil for a while. Then I add yogurt, salt and black pepper.
Wonderful summer berries! Raspberries, white currants and gooseberries! Now I am extra excited, because the gooseberries are almost ripe. Now I can start preparing my own special dish that I do in the summer. Habanero pickled gooseberries and have this for Taco Asada. Mmm I long to eat this!
Pickled gooseberries with habanero. This is something I've been waiting for since last summer. Gooseberries, habanero, sugar, lemon and water. Boil sugar, squeezed lemon and water to light syrup. Add habanero and remove the pan from the heat. When the temperature of the liquid has dropped, I add the gooseberries. If it is too hot, the berries become mushy. Will stand overnight and tomorrow I will make one of my signature dishes. 😊

Now that I'm boozted with the Pfizer-BioNtech vaccine, I'm going to bake blondies with white chocolate and white currants. First try, we'll see how they turn out. I'll wait a bit with the beer for a few hours.. if I get some strange side effects from the vaccine.
I do not know why but once or twice a year I sit out with a pair of good headphones and listen to an Italian group that did goatrance in the 90's. Always listening through the whole album, somehow it clears my mind and new ideas hatch. Pleiadians with the album I.F.O. Can be one of the most magical goatrance albums ever created. Taco Asada. Flank steak, salsa, avocado, red onion, bacon & chorizo sprinkles and habanero pickled gooseberries. I think I have achieved my own number one dish. I am speechless, when the gooseberries pop in my mouth, sweet, sour and the heat from the habanero (it is intense but not long lasting). If I stood in the square and sold this in summer, it would have been a hit! Luxury to it with a wonderful IPA from Spain, expensive but actually worth the price. #Food

Good morning! Today it is cleaning and laundry day. On Monday we go to a Swedish town, Katrineholm, and meet my in-laws. The cake I baked yesterday has been in the fridge overnight. Sticky and wonderful. White chocolate and the white currants popping in the mouth. Delicious!
Finally, forest raspberries can be picked. Crazy how fast they start to ripe when the heat comes. This is the same place we visited about two weeks ago, when all the berries were green.
We actually found a couple of blackberry bushes. Not very common with blackberries in my area, thrives better further towards the coast. Did not see these last time we were here because they look like unripe raspberries right at the beginning. But now you can easily see the difference in the berries.
Good morning! Here we start the day by cleaning our cockroach farm. It's Dubias, an Argentine cockroach that our lizard eats. Now that he (Godzilla is his name) is almost two years old, he should eat less insects and more vegetables. But as you see, he goes crazy when it is Dubia-time. The advantage of dealing with Dubias despite millions of years of evolution, they can not climb on plastic. 😄
"Pyttipanna" is a dish that is usually counted as Swedish traditional home cooked food. You take what you have left and fry it up. Usually sausages, potatoes and onions. Traditionally, this is served with fried eggs and pickled beets. But I try something new today because I still have habanero that was pickled with the gooseberries (yes, they are already eaten 😄..). Time for a holiday trip to Katrineholm. The trainstation / "Borås Järnväg", as it was originally called, was inaugurated on July 30, 1863 in the presence of Karl XV. Now it is called Borås Centralstation. We have 4 hours before we arrive. Even here they display art due to the 400 years celebration of our town, Borås, Sweden.
Holiday mode! Took the opportunity to buy some local beers, or rather decent local. Produced in Örebro, which is a short distance from where we are now. The Try Out's IPA Azacca / Simcoe, 6%. Hop aromatic taste with clear bitterness, hints of passion fruit, pine needles, honey, pineapple and grapefruit.
Walk before bedtime in an old "troll skog" / troll forest, as we call it in Sweden. And here is an abundance of wild blueberries.
Lingonberries also grow here. The lingonberry bush is slightly smaller than blueberry bushes and the berries grow denser, a bit like currants. They mature later in the summer and are red when they are ready to be picked. A real super berry and has a unique taste with a variety of vitamins, minerals and health benefits. We have to wait a month or two before we can enjoy fresh ones.

Rose hip are very common in Sweden. Not something I usually pick. Rich in vitamin c and something we buy at the store is rosehip soup. Beautiful flowers now and you can do something fun with the seeds. When we were kids, we used to take out the seeds and put them in front of each other's sweaters, like a prank. Because it itches something unbelievable when the seeds come in contact with the skin.
Tuesday is coming to an end. Tonight I test a local sour beer from Örebro, Pina-Collab-Ada 5.3%. Fruity, sour taste with a little sweetness, huge taste of coconut with hints of pineapple and citrus. This was unique but unfortunately I think the coconut taste intersects with the rest. Too bad but it was an interesting combination! #Beer

Time for beer tasting. Today we have a local beer from Eskilstuna. ”Eskilstuna Ölkultur Fruktad IPA colada”. A hazy IPA with a fruity taste with clear bitterness, hints of pineapple, rosemary, honey and grapefruit. Very good and suitable for a hot summer day. #Beer

After a wonderful day out by the lake, everyone is tired. It must be something simple for supper. A very traditional Swedish dish. "Korvstroganoff". Made from the Swedish classic sausage, Falukorv. There is probably no Swede who does not know what kind of sausage this is. Easy to cook by just adding chopped onions and a few more ingrediens for a sauce.
Dugges Tropic Thunder, 4.5%. One of my favorites among the sour beer. The taste is quite sweet thick at first with sweet-sour notes of apricot, pineapple, passion fruit, mango and star fruit. Sweetness is subdued and leaves room for sour freshness. The aftertaste is more… immature with harsh tones of mango and passion fruit. The long end is slightly sweet with clear tones of passion fruit. #Beer

Lovely Friday excursion to "Ljusgryten" about 20 minutes outside Katrineholm. No swimming lake but here there is trout. And of course the abundance of blueberries.
Plum tree, Prunus domestica. The most common variety that people have in their gardens in Sweden. Not rip yet and will be ready to be picked in mid-August. We make plum jam from the fruit.

In short, Stigberget's West Coast IPA is a masterpiece from Gothenburg. One of my absolute favorite IPA. Clear taste of tropical fruits such as pineapple, orange, passion fruit and citrus with clear bitterness. Rich and a very well-balanced taste. #Beer

”Villa Sandhem”, a cozy place just outside the center of Katrineholm, Sweden. An old place where the growing punk culture of the 80's was really big. Now it's a little restaurant. Tonight we indulge in it, I took entrecote with béarnaise sauce and french fries. I was also lucky that they had one of my favorite beers, Hanalei. Fruity beer with hints of passion fruit and guava. Good morning! Great weather for a forest walk. Thick, mysterious forest. Love it! There are no predators here, but during the last 10-20 years, the wild boar has taken over the forest. Fortunately, they avoid people, they can get really big!
An arboretum is a planting of trees and shrubs, often created for the purpose of studying the planted varieties. Many different kinds of trees have been planted in the "people's park" in Katrineholm. Among other things, Chinese sequoia and copper maple.

Good afternoon Noise! Now our holiday week in Katrineholm is over. In a few hours we will take a train back to Borås. But we still have two weeks of wonderful holiday left. Finally home, home sweet home! It's funny that my in-laws asked for rain in Katrineholm, but there will never be any rain up there. It's dry. And then we come home to Borås and it pours down. Those who have followed me for a while know that we call Borås Sweden's rainiest city. That's very true! Tonight there will be easy food so we can then put the children to bed. Hot dogs!
Time to make new health water. Today I use ginger, black currants, lingonberries and gooseberries. Mix everything with water, strain and remove the starch from the ginger. Result = an incredibly refreshing and healthy drink.
Finally time left for cooking. Tonight the children want mashed potatoes and breaded fish. Actually bought pre-breaded fish today, found no good fresh fish at the supermarket. Will also make a pea pesto made on peas, garlic, olive oil, salt and pepper. #Food
Breaded cod with mashed potatoes and pea pesto. I always make my mash silky smooth, that's how the children and even my wife want it. Mash the potatoes with butter, then salt, pepper and milk. Mix with an electric whisk (important not to whip for too long, then it will be hard as cement). I always take a handful of freshly ground black pepper on my plate. 😋 #Food
Dugges Mango Mango Mango, 4.5%. Sour beer. Smells of pure sweet mango juice, some soured malt. Slight lemon, orange juice and bright passion fruit notes. Pineapple and guava notes as well. We Swedes really know this with sour beer! #Beer
Whole specials and half specials are sausage dishes that are usually served in a fast food restaurant. It came about in the 1930s in Gothenburg, Sweden, when two young football players ordered sausages and bread "... but with a little mashed potatoes on top." Today we make our own "Halv special" / half special. Topped with chipotle mayo and ketchup. #Food

Like most Swedish cookies, these are very easy to make. Butter, sugar, vanilla sugar, baking powder, cocoa, flour and a pinch of salt. Mix everything, shape the cookies, brush with beaten egg and sprinkle with powdered sugar.
