Today I want to offer you a recipe that is unusual even for me. Kai always found the information on the internet and decided to experiment. It is, strictly speaking, not really with acorns, it is with acorn meal. Just before the first snow, in October-November, acorns are collected (early, green acorns are harmful and even poisonous), and then, after many days of torture, get out of them flour (it is on sale, but the finished acorn meal can cost 5-10 times more expensive than regular flour). It is better to take ripe acorns for flour, in which the cap is easily removed. "When the acorn is ripe..."
And with it you can replace half of the nut flour or cereal in baking, add it to bread, use it as a substitute for nut flour in cookies and biscuits. I made a nut cake and chocolate oatmeal cookies with it, as well as bread and shortbread for a cake - everything turns out well, the taste may not change much, but the texture is excellent, inside soft, outside crispy. Truly, I have not tried meringue with acorn flour, so I'll guard against speculating on this subject.
So, what should I do with acorns? On the Internet the same thing, most often in the same words: soak for three days, pour boiling water, bring to a boil, turn off, drain the water and you can grind. Bullshit is your copypasta. Can you dissolve the tannins that give acorns their preternaturally bitter taste in cold water? Have you ever tried making tea with cold water? And if you've had that experience - why soak something that doesn't soak? I honestly kept the acorns for three days in cold water, changing it regularly - but no, if there was less bitterness, my receptors did not catch it.
Then I poured boiling water over the acorns and began to heat them, gazing intently into them as into the abyss. The abyss of acorns stared back at me, but was in no hurry to part with its bitter taste. Anyway, I gave up and started to boil those acorns. When the water became muddy, I poured it off, poured fresh water on it, and boiled it again. And so four times, each time for about two hours. The acorns tasted bland, a little rubbery, with a nutty undertone. I let them dry out overnight on a tray, and the next morning I ground them into crumbs.
Dry in the oven until dry, dry. You can first leave this mass to dry in the air for 24 hours, but I dry immediately in the oven at about 100-120 degrees. For 1 hour. In this form it's a grits that you can to make porridge...
The result was not like almond flour. First, the color is different, second, the taste, third, the texture, in general, everything is different. I had to sift and grind the remaining pieces larger than a millimeter in diameter, one more time. Probably, if I had a coffee grinder, everything would have worked out the first time, but this way the grind stretched for two steps.
Yes, of course, it was a hassle. But! In the first place - acorn flour and even coffee (nasty) are useful. Especially for diabetes. They lower sugar. I, however, have not yet figured out how much - still shoveling cake and cookies in connection with a birthday and "finished eating," and then still want to lower the sugar, I think it's already impudent. So far the flight is normal😁
In the second place, of course, a freebie is a freebie, and an experiment is an experiment. I love both. If I can avoid spending money on a new kind of flour, why not try making it?
Ah yes, cookies. You can bake any kind of cookie with this flour. Just replace half of the flour (or if using oatmeal, oatmeal) with acorn flour. That's the whole recipe.

Three breakfasts for winter mornings

You still want to believe in miracles, even if you're an adult, even if you haven't believed in anything for a long time, for a long time now. People need fairy tales, because people are children of all of all ages. Melt 100g of sugar in a saucepan (dry caramel), add 100g of butter, and mix gently! The butter has a tendency to sputter. Salt (pinch) If you don't have experience making caramel, you don't have to make caramel. And add the butter to the sugar before it caramelizes - it's different, but it's also delicious. Pour the hot orange juice (200g) and liqueur (50g). Boil it down. Form the pancakes into triangles and fry both sides. Pour the liqueur into the pancakes - it is strong - and set alight. Be careful! Do not bend over the pan!

I often make cheesecakes for breakfast. Rarely do I make them from recipes from books or the Internet. For example, Cheesecakes with Cherry Cinnamon Sauce.
I mix the cottage cheese with two eggs, and the rest is pure improvisation and "by eye. Sometimes 2 tablespoons of sugar, sometimes 4. And with flour, too. Sometimes 3 tablespoons seems too much, sometimes 4 is not enough. It all depends on the consistency of the cottage cheese, its "acidity" and the size of the eggs.
And sometimes I salt with a pinch, and sometimes I forget. Sometimes I also add vanilla, sometimes not.
I serve it with sour cream and sometimes sprinkle sugar on top of the sour cream. With coffee! I don't like it with tea. We also serve eggs all year round. But I'm always too lazy to bother with poached eggs. I make them in exceptional cases. Mostly in winter.

How easy is it? If you know how and often make poached eggs, simple. If not, it is better to make a glazed egg. For a simple sauce: Cut 50 grams of butter into cubes, one egg yolk from a big egg, a teaspoon of water. Put everything in a saucepan, pan to the boil and stir constantly with a whisk. The custom of decorating the Christmas tree came from Germany.

Right now I can't even remember what my wish would have come true over the years.) But, every year I pray for wisdom, for patience so that in the heat of the moment I don't devalue all the years I've lived and get caught up in not believing in the New Year's fairy tale.

What a beautiful winter in New Year's Eve decorations. Bright lights, garlands, amusement rides, a gift fair, even a holiday skating rink, you can see it all in almost every part of our planet.
Any decoration can become a bright photo area for a memorable photo. Residents and guests of the capital go to the square for the mood. Even frosts are not terrible for fans of beauty and celebration.
Why should they be afraid? If you look to the left there is coffee on offer and if you look to the right there are buns with freshly heated sandwiches for sale. You're refreshed and you're on your way to the merry-go-round or the ice-skating rink.
Folk artisans sell their wares. I envy creative people who can do beautiful things))) in a good way; ) And occupation, and gifts with their own hands made. And who can not do all this, thenelcome to the craftsmen. There and wooden toys, and forged flowers, and exclusive clothing, in single copies sewn. And you can also buy unusual beautiful Christmas-tree toys at the fair.

On the eve of everyone's favorite holiday New Year's Eve everyone wants to read an interesting book, that will create a good mood and a feeling of the approaching miracle. I read books and watched a lot of different articles on the Internet about New Year, Christmas, Christmas tree...Christmas tree! And then I wondered: where did the Christmas tree in our homes, yards, parks come from in the first place? Whence came the tradition to decorate this fluffy and thorny beauty just in anticipation of the holidays?
I think this will be interesting for you, because the information I found, threw me into shock !!!!!!!.

Often trees were decorated with apples (a symbol of fertility), nuts (incomprehensibility of divine craft), eggs (a symbol of a developing life, harmony and complete well-being).
The tradition of decorating the Christmas tree is over 2000 years old. The evergreen spruce had a special place among all the trees. It was the sacred center, the "world tree," symbolizing life itself and the new rebirth out of darkness and gloom. Many believe that the evergreen spruce is the heavenly tree of immortality; the burning candles or lights are human souls, and the decorations are symbolic sacrifices.
The paws of the tree covered the grave in winter, and somewhere it was forbidden at all to plant spruces near the house for fear of the death of men. Otherworldly symbolism was also reflected in oral folklore, even one of the names of the devil as "YolS."
And so after this "news" the hair on my head stood on end, and at first I thought that this green tree will not exactly be in my house!!!! But curiosity didn't stop me and I started looking for more information about this "sinister evergreen wonder".
The history of the Christmas tree goes back to the late Middle Ages. There was a an ancient custom was to go to the forest on New Year's Eve, where they would decorate a pre-selected tree with colored cloths, candles and sweets. Over time, trees began to be cut down and brought home to fill the home with the pleasant smell of pine, to enjoy their beauty in the warmth and in the company of the closest relatives. The spruce would be placed on the table and decorated it with burning candles, fruit and sweets....However, no!!! The tree was not put up first! They hung it by nailing it to the ceiling!!!
After baptism, all these traditions of celebrating New Year's celebrations with Christmas tree began to take on a Christian rite.
We, the New Year's Eve, can't think of a Christmas tree, richly and brightly decorated. However, in the olden days, our ancestors decorated the Christmas tree a little differently than they do now.
Remember the fairy tale "The Nutcracker"? It describes exactly that: (quote): "The big Christmas tree in the middle of the room was hung with golden and silver apples, and on all the branches, like flowers or buds, grew candied nuts, colorful candies and all kinds of sweets"?
So, first of all, they were edible decorations: real apples, gingerbread and figurines made of sweet and salted dough, covered with multicolored glaze, gilded nuts, strings of colorful lollipops. Apples and other fruits were wrapped in colored foil. Such decorations can be made together with a child: kids usually happy to paint nuts or paint the empty egg shells.
Of course, we decorated Christmas trees with real candles🕯.
In the poorest homes candles were glued with hot wax directly to the branches, but there were also special clothespins for candles. Later candles were put in glass lanterns: it's prettier and safer.
The first Christmas balls came much later. At first, spheres (and later other glass toys) were produced by different factories. So if you have on the entresol or under the couch is a box with old toys: parachutes, balls, icicles, corn cobs, and so on, even the old days - feel free to decorate the tree with them! Of course, the most important Christmas tree decoration is the star. On the Christmas tree, it symbolizes the very star of Bethlehem that heralded the arrival of Christ into the world.

And those who for such photos are ready to tear you to shreds. And what kind of people would you be?

I don't usually write about food and I am not a fan of food photos, but I am an aesthete by nature and I love all beautiful things, so I like to put beautiful food on my camera or phone memory card. But now they will shamelessly burst through all at once, lined up one by one, and won't ask you if you are hungry or not. It may come as a surprise to you to learn that I learned to cook early on, and as a child I even enjoyed it. I was taught by my grandmother, whom I helped in the kitchen from a young age. I remember making minced meat in a meat grinder, stuffing cutlets and making dumplings and dumplings by hand. My grandmother and I fried pancakes and fritters, cooked soups, borscht, compotes, and jams, made casseroles for the winter, baked cakes and "crunchy," as we called ponytails. So, up to the age of eleven, I loved to cook, and I did it quite well under the supervision of my householder grandmother.
As a child, cooking seemed to me a very responsible occupation and flattered my self-esteem, allowed me to be "like an adult. And then, like many teenagers, I rebelled. I had already seen too many American movies and the image of a strong, independent woman stuck in my heart. I was much more interested in learning how to fight, shoot and drive a car, and the last thing on earth I wanted to be was a "hostess" and a "model wife," as my grandmother tried to raise me. My rebellious moods were a thing of the past.
I prefer humble food without much frills, which can be cooked quickly and easily, and even better - eaten raw. I make sure that the food is always fresh. I prepare small portions, so that I can eat them all at once. Unlike my grandmother, who loved to cook for the whole family, I never leave anything unfinished in the fridge, with few exceptions. I only eat when I am hungry and cook only what I eat myself. No scheduled breakfasts, lunches or dinners, just a feeling of hunger. I should say right off the bat that it is important to be able to distinguish between physical hunger and emotional hunger. Many people eat to stress, "because it's supposed to," "otherwise the hostess will be offended," or even just out of boredom.
Now, this is not hunger, but an attempt to compensate for other needs of the mind and body with food. This way leads to overeating and does not solve psychological problems. The desire to eat "something tasty" while there is food in the fridge, but you do not want it is also not hunger, but the need to relieve stress, relax, get pleasure. I also consider the popular online advice to encourage yourself with something tasty for a job well done to be harmful. First, the focus of attention is shifted from work to encouragement, and now you are thinking about food instead of thinking about work, which affects its quality. And second, if you reward yourself like this often, you may soon not even get in the door! I once fell into this trap and gained a lot of weight.
In general, I am for healthy eating and natural plant-based foods, but without fanaticism, so I can eat anything that is edible. There are a lot of aggressive super-health enthusiasts and vegans these days, but I'm not one of them. There was a time when I was a yoga fanatic and was very serious about nutrition, but over the years my fanaticism has gone away. Now I think that the main thing is to be in moderation in everything, including food. If you don't indulge in gluttony, you can eat anything. Here, as in everything else, awareness is important. From time to time it is useful to organize cleansing fasts and fasts, from which you should withdraw slowly and gradually. The main thing is to remember that "we eat in order to live, not live to eat," and not to become a slave to food. And it's not just gluttons who can become slaves to food, but also, who would have thought, vegans.
I once traveled with such a woman. We were in a remote village, and we were sure that there should be no shortage of fresh fruits and vegetables in the summer. It turned out that many fruits and vegetables do not grow there, and for others it is not yet in season. In addition, there was not even a market in the village because everyone fed themselves with what they grew and did not need to sell it. They had only two stores where they sold food and other basic necessities. There was canned goods, bread, sausage, cheese, chips, candy, and even ice cream, but no fruit and vegetables! Everyone took it easy, except that vegan woman. She suffered and resented for a long time that she had nothing to eat. In the end, she bought herself something, but was heartbroken that she had to get over her principles and eat this "crap". And once on a camping trip all we had left was lard, and one ardent vegetarian had to eat it. He ended up liking it so much that he thought about reconsidering his views on food. 😁
I prefer vegetables, fruits, berries and nuts at any time of the year. I love mushrooms, seafood and especially sushi! I eat meat not too seldom and cook it with great pleasure at home and I don't refuse a portion of chicken shashlyk in the countryside or in a restaurant. I like milk and cereal, except pumpkin porridge. Though I know that pumpkin is healthy, I cook different dishes with it too. I eat sweets in moderation, I like chocolate, and I just adore ice cream!!! In our couple, the sweet tooth, strangely enough, is a tough guy, my husband. And he has it in a severe form and does not seem to be cured. I'm more of a spicy and salty person.
Every hostess has her own specialty, and even more than one. Naturally, I have such dishes, too. My husband eats vinaigrette and crab salad made by me with great pleasure. He also likes fried potatoes with onion and mushrooms, mashed potatoes with herring, or fried chicken slices. Of course, that doesn't mean he has a choice. But it certainly means it's edible. He is less enthusiastic about my summer preferences. Stewed cauliflower, zucchini, eggplant, and fresh vegetable salad are much less satisfying to him. I don't like first courses, and I don't think it's necessary to eat them, but I cook them, and what the heck))) It is a rare case when you can wait for such a "feat" from me - to try my version of vegetarian red borscht. Or green borscht if you are in the mood for it. I can cook shashliks in the open air too and do it much more willingly than bothering at the stove.
You can create your own holiday spirit. Even if you do not know how to bake, and you do not even have an oven at home, because even the most ordinary rolls that are sold in the supermarket you can put together a Christmas cake. You just need your imagination😉or you can put it on a beautiful glass dish. Decorate with a variety of candies in the form of ice cream, fruit, bottles and bears, nuts and candied fruits. Along the edges - "flowers" of tangerines. On top stick chocolate New Year figurines on sticks and candles from Birthday sets. Light them, and - bingo, the birthday cake is ready. Once again, all it takes is creativity and imagination. Or come up with edible Christmas balls(sweet or salty, or maybe bitter and spicy, as who likes;)
So, the easiest and fastest recipe. We bought a jar of butterscotch, cookies, nuts, and various small candies and candied fruits. We crushed the cookies, stirred it all up thoroughly. We put it on a plate, put a banana inside the roll, which we rolled in a circle with this mixture.
Of course, my eating habits are a little different in the summer and winter. In the summer, I'm drawn to eating things that grow at that time of year. It is so nice to enjoy fresh strawberries, raspberries, gooseberries and currants, to harvest cherries, apricots, peaches, apples, pears, and in mid-autumn, grapes. Enjoy a salad of fresh tomatoes, cucumbers, bell peppers, green onions and garlic; stewed cauliflower, zucchini and eggplant. Watermelon and melon are also my favorite seasonal foods.
In winter, seasonal fruits and vegetables are replaced by potatoes, cabbage, pickles, beets, carrots, beans, avocados, bananas, oranges, tangerines, kiwi, apricots, raisins, dates, figs, dried fruit and ginger. Onions, garlic, lemon, apples and nuts stay in my diet year-round. And fish, there's plenty of it in town, and we catch it too. As for meat, it seems like you should want it more in the winter, but no. In summer, the smell of kebab wafts from everywhere, which is a temptation.
I'm not a big fan of flour. That's why buns, puffins and other pastries, gingerbread men, and cookies are not for me. But cakes like this are hard to pass up.
I prefer jellies, yogurt, light desserts like tiramisu, cheesecake, and bird's milk. I like milk chocolate, marmalade, candies and dried fruit - bananas, pineapples, strawberries and other things.
Another one of my favorite sweets is stollen. It's a German traditional Christmas pastry. I remember the first time I tasted this miracle at our fair. I fell in love with the first piece and for life! Of course, there is no difference between a Stollen and a Stollen, but the real German Stollen never disappointed me. I love good red wine, especially sweet and semi-sweet. Let me tell you right off the bat - I don't know anything about wines. I either like wine or I don't. I remember on my birthday the girls from the dance gave me a bottle of Gato Negro, which means "Black Cat" in Spanish. They knew what to give to make me smile. I liked the wine, now I buy it myself. My husband and I once discovered a marvelous pomegranate wine and our semi-sweet "Wine of Love", and recently we tried cornelian wine - also not bad.
As for non-alcoholic drinks, I adore tea with lemon, herbal teas and juices at any time of the year. Sometimes I want a "poisonous" cola, too.
On the table this time are mashed potatoes, herring with onions, some sausage, cheese and smoked fish, olives, nuts. For the sweet, we had the stollen again, a piece of cake and candy, which are more for beauty. Of course, we didn't manage to eat the stollen and candies, we finished it later. Well, it didn't last till Christmas.
I can't stand eating. I think the roots again lie in childhood. My grandparents had a huge family and a broad hospitable nature. The house was always full of guests, the tables were packed for the holidays. But the guests did not see what was left out of the picture, namely my grandmother and I's hard work. And the older grandmother grew, the more work fell on my shoulders. Mom worked and came home late, very tired. So when my grandmother became completely ill, all household chores fell on me...
But the feasts did not become less lavish and guests still continued to come to grandmother. I remember that feeling well: you would work like a horse before the New Year or the Eighth of March, you would cook, clean up, set the table. You make slippers so that they do not dirty the floor, but they still walk in shoes and do not even wipe their feet, and you keep quiet because you are not mature enough to open your mouth. You serve everybody, you entertain the kids, and it doesn't matter how, you can tear yourself in two, but make sure everyone has a good time. And after the party - a mountain of dirty dishes and cleaning up again...
And what annoyed me the most was that there was always too much food in the fridge. We cooked three times more than the guests could eat. Grandma was always afraid that someone wouldn't have enough. And then we had to finish it all ourselves. And then you can't eat this salad anymore, and you choke and choke on it, but you eat it - it's going to spoil! And it's a shame to throw away food, especially your own work!
That was the reason why I hated not only parties, but holidays in general. I was pressured until I was eighteen, and then I finally rebelled and said that I would not take part in it any more. And it was only when I realized that I also have the right to a holiday and I can spend it the way I want, that my attitude toward holidays changed. Of course, I wasn't "cured" right away, and all the student parties were held at my place. When it dawned on me that I was doing the same thing as my grandmother, I stopped throwing them and offered to meet on neutral ground. I still do that!!!
And I don't like to go visiting either. I don't understand it, sitting at the table and eating for hours on end, and waiting for something hot to come. I'm already full of salad, what's another hot meal? I wish there was room for cake! And the hostesses take offense. You can die not only from gluttony, but also from boredom! If we're going to celebrate at home, we should do something interesting: dancing, games. My student parties were more varied and fun than our boring family gatherings, and the food was a hoard.

This is how I've been accustomed to eating kutya since I was a kid. But most of all I like to eat what I picked myself, and not just in the garden or vegetable garden. In our fields and forests you can pick blackberries, blueberries, strawberries in huge quantities right from the bush! There are whole fields of them. These berries are sold for a lot of money! I used to do that when I was temporarily unemployed. There are also plenty of mushrooms and herbs in our forests. I love picking them, but I only eat the mushrooms I know. Of course, white mushrooms I am unlikely to confuse with anything, but about the rest - not a fact. When I was a kid I often went to the woods and picked mushrooms, I even had a little book "For mushrooms" and I always checked with it. But that was so long ago, and my catch was always checked by an adult. Now I don't remember anything. The city spoiled me.
I also loved fishing. At the age of ten I could easily take a boat alone to the middle of the lake and fish there. The cat had fresh fish from me every morning. Getting up at five in the morning was no problem! By comparison, to wake me up for school, my mother had to pour a glass of water on my head, otherwise I wouldn't wake up. What can I say, both the mushrooms and berries that you gather, and the fish that you catch yourself seem especially tasty!
The best holidays for me are outdoors. I love camping romance! The food outdoors, cooked over a campfire, is the most delicious. Such meals always come first for me. Fortunately, my husband and I have completely the same views on feasting, he can't stand them either. That is why we not only on holidays, but just at any opportunity strive to get out of town and wander somewhere.
In second place for me city holidays. Before I met my husband, I often went to such events alone. For many years I met in the city center on New Year's Eve, went for a walk on Shrovetide, City Day. At such events you can always buy something delicious and have a snack.
In third place - restaurants and cafes, but not too expensive and posh. In winter or in rain, when you can't go out in the countryside, it's the best option for a holiday or a friendly meeting. Most of all I like art cafes with democratic prices or thematic, original places. And the company is not necessary at all, it's pleasant to sit alone in a cozy cafe.
In addition, you can buy amazing cakes in the cabin across from the cafe!

Today I want to talk to you about a family topic. The topic of your choices or hobbies, how our relatives and friends feel about it. And let's look at your "choice" from different sides.
It often happens: the wife develops, but the husband does not. The wife goes to psychological training, works on herself, grows, while her environment, herself, and often her eating habits change. She becomes more ethical, humane, and, for example, becomes a vegetarian (she no longer wants to kill animals). Or understands all the harm of white bread and flour and sugar and tries to eliminate them from her diet, and so, the wife changes her eating habits and the husband doesn't want to !!!
She starts doing practices: yoga, qigong - and the husband makes fun of her !!!
Wife begins to improve the body, body, starving, organizing days of discharge, and the husband defiantly eats French fries and pork knuckle!!! Do these situations sound familiar?
Especially hard when there are children! There will be constant disagreements about feeding.
Why do people not have disagreements in the beginning and then later it escalates into an inability to get along together?
Is there a chance to live with different food disagreements, different views on parenting, tempering, early development? I want to discuss these issues from different perspectives, both husband and wife.
And so, let's look at the situation from the husband's point of view. Do you think the husband, when he married a certain woman with certain habits, did he expect her to change from a brunette to a blonde, to gain or lose twenty pounds, to criticize him for the way he has always lived - and generally to get into some kind of cult that also blows his mind? Purely your opinion I'm curious, how do you think the husband feels about this change in his wife? How does he feel? Well, for those of you who think your husband owes someone something, I have some sad news. They didn't agree to this! Agree that when he took this woman to be his wife, he made an agreement with her that things would be as they were when they were dating. A normal sane man doesn't understand the humor that "we marry brides, but that was a totally different person" than the wife. He thought we were doing fine - and I was going to live like I was living. Basically, he hoped that his wife would not get into any sect of cheese-eaters, yogis, blessed, and other citizens. That it was a person close in outlook, in beliefs...
That is, the husband is deceived. The next point: the wife, not having any real measurable results (you just cannot measure, you cannot see the result, you cannot envy, you cannot admire and say: "Oh, cool, I also want so!"), she immediately starts to blow her husband's mind, so that he suddenly changes. Well, her husband thinks that she was lured into some kind of cult, obviously harmful to health, because his mother told him in childhood that he should eat meat, and the doctor says.
He doesn't believe it - and rightly so, since his wife has no proof! It would be one thing if she was a wreck, she would start to eat right, and she would feel great and get better. Then there would be a chance he would appreciate it. There are no real measurable results, but he is required to make himself feel bad. Because he's already feeling good now: he's eating pork knuckle and potatoes, and he feels good. And for what joy he has to eat grass - he does not understand.
My husband had no idea that this was possible. In this situation, we can only influence other people if they are jealous of our results and want to be like us, and the key word in this situation is "if. We can't make an impact on my husband by blowing his brains out, except that he will think of us as crazy, in a cult, stupid girl needs to be rescued. I can absolutely say that the complaint is to my husband: "You have to raise awareness",- it's the way to nowhere, it's the way to destroy the relationship, to destroy the marriage.
**He doesn't owe you anything, he doesn't owe you anything and neither do you!!!**
Well you got into any diet, any practice, any class, well then come up with an acceptable explanation so he doesn't freak out.
That's right, and not just my husband thinks so, but all the relatives around me!
That is, if you do any bullshit, make up that this is what the doctor recommended to you, prescribed, forbade. If you're on a diet because you have an ulcer, then it's clear: here's the prescription, here's the diagnosis, here's the ulcer, let him sit on his diet. And I, as a healthy person, will eat what I want. And if you're just blowing your brains out, because you haven't heard and read enough about it, but you haven't got a real result, then something is wrong with your head - "otherwise I'll die", yes, approximately like that.
So you need to separate your desire to eat a certain way, your desire to do some physical exercises like yoga and other meditations - and your claims to your husband. You have a right to eat as you want and to do any practices, your husband has a right not to do it - and he has a right to have an acceptable explanation of why you're living this way. And then, when he sees a really measurable result - not your fantasies: "Oh, I feel so good" - but a really measurable result. And then you look at photos of those who are on a diet, and there's a thin girl in her twenties, but she looks like she's in her fifties.
A separate story is that those who sit on a diet sharply change their usual diet, without taking into account the fact that they are in symbiosis with parasites, and from this sharp change parasites begin to multiply, and their waste products simply poison the body, and ruin it. And the brilliant idea of cleansing and checks, of course, rarely goes to anyone's head there. There is a separate sad story with these sects, but most "dieters" look older than their years, they have worse skin, hair, nails ... In general, everything is very, very sad and sad, if judged by the results in terms of quality of appearance - quite justifiably their husbands think it is stupid. Because the results are a clear deterioration in appearance and health.
Further-if what you're doing really benefits you, brings measurable results, and your husband wants to have measurable results, then he may be interested and do something by your example, but not before. As long as there are no measurable results, as long as it's just wishful thinking, or you just feel better inside, but it doesn't manifest itself outwardly in anything, then your husband has every right not to believe it - and rightly so!
It's one thing if I say, for example, that I can do healing, but I don't back it up with anything, but it's another thing if I make a suit in half an hour. "Yeah, well, you really took your classes for a reason." Or when I stop blood in a couple of minutes, or when I take a child's fever or a sore throat. There you go, there's a problem - there's a measurable result👌
And that's when your life hobbies will bring measurable results, and your husband will want to have a measurable result, then he may be interested and do something by your example, but not before. As long as there are no measurable results, as long as it's just a passing off of what is desired, or you just feel better inside, but it does not manifest itself outwardly in anything, then your husband has every right not to believe in it - and rightly so!
"Yes, you're right. So what do we do when husbands change?"
As I said before, if we take the elevator from the first floor to the hundredth floor, we don't have to go all forty floors with one person, someone needs to get out early, someone will get in next. With any person in our lives, we're temporary. And maybe people go in different directions, you know, like a train track can go - one to the right, one to the left, and they go apart. And there's nothing you can do about it. You just have to accept that this person is all, some task in your life has already completed and gone, and the next one will come.
I am an advocate of not terrorizing my husband with my hobbies, but to show him real measurable results, repeatedly confirmed. If there was an ulcer, there is no ulcer. That is some understandable things.
The next point is about children:
Here we need to divide the zones of responsibility according to the principle: he who feeds, he who heals. Or who toughens, he heals. That is, there shouldn't be a situation where one deals with some nonsense and the other deals with the consequences. As soon as the consequences are on the one who is screwing up, the screws stop immediately.
As an example, the baby can't have sweets because he's allergic. As long as mom cures allergies, dad buys sweets - dad doesn't care. As soon as the baby moves in with Daddy for a month, and Daddy sees the allergy three days later, and realizes that he has to buy ointments and creams, to smear, to treat, to deal with, he won't buy any more sweets - because the consequences were on him, and he doesn't need them.
Here you have to be clear that whoever does something has to deal with the consequences.
If you refuse to treat your child, you close your eyes and don't look at what or who I feed. I will treat it.
That's the principle of agreement, who does something, takes responsibility for the consequences, and all actions to return them to normal condition.
Concerning nutrition for children - we need to be very careful with these experiments. It is one thing to definitely avoid unhealthy foods, and another thing to completely deprive a child of some chicken. I wouldn't risk it. I mean, I could eat only seafood myself, but still, when the child grows up, he will choose the diet he likes best. He will look at mom's results, look at dad's results, listen to both the first and the second, and he will choose himself!!!!! I personally would not risk testing an unconfirmed and unproven feeding technique on children, against the opinion of my husband, relatives, and doctors.
And at the end of all of this discussion, I want to conclude with a small conclusion: that we all have the right to choose what you like, but this "like" should not be imposed on anyone. Not your husband, not your children, not your friends. Here the gift of persuasion does not work, you need real examples of what it "like" something useful to the other person. And maybe, but only maybe, he will take your side.

Today I don't feel like optimizing at all...The morning started late, but breakfast happened only now. One question plagues me: is it really more important for a five or six year old to learn a letter than to get well? Why do moms take knowingly sick kids in class?
Yesterday was a day in which I was tired, but it was very good... And in the evening "it was good" was taken away...It's a shame.
I don't know how or from where, but cool, interesting, soulful people have come into my life. I often find myself in new places that I had only heard about before.
I'm very curious about life! It turns out there are so many people-universe people around! Not the ones who draw all the positivity out of you with a big spoon, but the ones with whom you feel good. And it's a shame when that feeling of inner happiness is taken away... So it was decided to climb back into the shell and sit there quietly.
In winter I found ice cream, which I love tenderly and am even eating right now. It's my comfort in the most difficult situations, when I feel like shit and can't get a bite down my throat, or when, on the contrary everything is so great that I don't (ah, I don't want anything)))
What good has the past year brought? At first glance, it's the same as everyone else: endless streams of chatter about Covid on TV, scare-mongering, compulsory vaccinations, cuar codes, restrictions on everything and everywhere.
Amid reports of more and more people being admitted to psychiatric clinics with acute psychosis, it has become clear that what will save us, as before, is the ability to take everything to the point of absurdity and turn it into a joke. Yes, because "the world survived because it laughed!"
Because! Laughing! We take a gel pen in our hands, and draw funny pictures on the subject of real news. And the world plays with new colors! Already not all so sad, sometimes funny, and sometimes very funny. In general, cartoons can draw on the subject of covid to infinity.
But I will digress from my reflections. Today's recipe to me thrown no one, and my husband. he periodically likes to throw me a recipe. He sent me a recipe with a scary name Gravlax. I read the recipe and ha-knaked, they say, ha-ha! Yes, you this gravlaks almost every month eat! :) No, well, just insulted, you might say. Gravlax is not a roll. It's just a dry salted fish. Salted fish. But salted is so trivial, and gravlax is so mysterious. So we're going to make rolls out of this gravlax.

*Preparation:*
Wash and dry fish.

I only had cognac, so I took it, salt, sugar...And suddenly, oops. What's that in my pictures? I didn't cook it yesterday, I forgot already, and then I remembered. My enemies took the fish above and ate it, I didn't even have time to take a picture 😂 So I had to cook again.
This time the fish is not fillet. So I had to cut it, and then I had to do everything that was already described above.
And now again... Poured gin (it already appeared), in 10 minutes splash some Tabasco, sprinkle a little sugar, generously salt, sprinkle coriander. Sprinkle to make it all stick.

For many years now, when the city hides under the first heavy snowfall, we have been reminded of the same winter story.
And it begins with a well-known folk wisdom - the steeper the jeep, the farther to follow the tractor.
From point A to point B drove the car with the family, rushing to their friends at the cottage. At that time, navigators only worked on ships exploring the space, where no man had set foot. And country highways were illuminated only by headlights. In general, we safely passed the right turn to the village. It was almost thirty kilometers to the nearest junction where we could turn around...
But they already had cell phones back then. Small, push-button phones with a small cellular network coverage area. One for the whole family! We called a friend and asked about another travel option. He didn't know. He had to run to a neighbor at the cottage who didn't have a cell phone yet. The neighbor turned out to be a city man, too. The two of them went to a local man who lived two doors down. He told us on the phone where the bypass road was.
We found the right turn. We cautiously slid off the highway onto a snow-covered road. Or rather, a semblance of a road. We drove slowly and carefully in our van, trying not to speed up too much to avoid getting stuck. Soon the lights of street lighting of the settlement appeared, we heard the barking of dogs. We safely got out on the village road and reached our destination. But...
The next day our neighbor decided to repeat our feat. He got into his four-wheel-drive UAZ from the late 1970s and took a detour to the highway, so he too would know the back way. When this all-terrain vehicle returned, the driver was smiling happily. Then he turned around and... headed out into the field.
It was beautiful: the powerful car was bouncing around, making waves of snow. The khaki car hid in them, and then reappeared. Billions of snowflakes sparkled in the sun in the clouds of snow. We watched the spectacle spellbound. After ten minutes it was over...
And then everyone was waiting for the tractor. It could not come until closer to midnight. There is one tractor for tens of kilometers and a lot of work. There is an urban people's winter fun - drowning a car in a snowdrift, - said the tractor driver)))))). And started to work.
But that's a whole other story...
At this point, I have a great desire to be in some kind of painting. A winter the forest, the hut, the river, the light in the window and the smoke from the chimney. Today every line is as hard as if I were...as if I were digging potatoes. But afterwards... I'll be glad I dug it up.
But when I start to write...is already flying over...
The better part of December has passed, and it's time to take stock of the past year: the most important thing is that we lived! We dreamed, we fulfilled our dreams, we drove, we went for walks. Just living is great these days, too!!!

Baked duck
Hello dear read.cash! I hope you found some free time to read and evaluate my article today. This is how I would like to begin my entry... Why do I address to read.cash and not to you? It's simple, it is he who brings us all together as a family, gathers for reading new posts, arguments, participation in various contests and so on. Several times I tried to write something, and then. everything was left hanging in the draft. Maybe this post will be there too. I decided to publish it, though. To be honest, I want to tell you a lot about my life, to complain (as usual), to get a dose of sympathy and support, to brag, to share the good and not so good. But I won't! Recently I realized that I am read by people I know, and even people I don't know at all. I am a person whose life is spent most of the day in four walls, who is not bored alone, and it really "strains" me. An unpleasant feeling has emerged that I am being watched, and it is no longer possible to say all the things you could say before without thinking. Also, for the first time in my life, I was disappointed in people. And for the hundredth time, I realized how much I love being alone... and cats and dogs. Cats more.... Because I don't have dogs, but I do have cats.))))
And now for the... the duck. The holiday is almost upon us, maybe someone could use the recipe 😉 It's nothing out of the ordinary. But as we all know the simpler the better. The main thing is that the duck should be soft and not dry. And for the result to be exactly like that, it is important to buy a good bird initially, but such a bird runs in my yard, well, and cook it correctly.
Oh, what a wonderful and delicious bird it is! And that's how it is - a chicken, no matter how you look at it, has the most delicious meat in the legs and wings, while a duck has the most delicious meat in the breast. Although, legs are also good if well-cooked. And for that, you have to simmer a little longer. You have to simmer it on a low heat. But I don't want to get distracted.
*We should:*
Duck.
Salt.
Freshly ground pepper.
Juniper berries.
Onions.
Sauerkraut.
Fresh cabbage.
Prunes.
Vegetable oil, or duck fat.
Honey.
Mustard.
Apples.
Quince.
Cinnamon.
Potatoes (optional).
I also used candied pears (also optional).
*Cooking:*
I cooked the duck in three steps. That's how it turned out. Two is enough - marinating and cooking. But I got some nuances, that's why I mention that there were a little more steps.
The duck is washed and placed in a deep baking pan, in which it is then cooked.
Mix and grind in a mortar juniper berries, pepper and salt. With this mixture rub the duck on the outside and inside and leave for 24 hours to marinate. Cover the duck with foil and send it to stew in the oven on low heat. I prefer to simmer in the oven at 120-110 degrees, so it takes me two, or even three hours, but the meat is wonderfully tender and juicy, and you can do as you like.
Boil the potatoes until half cooked and cooled. And here's the tricky part. Since the duck was slightly stewed the first day, and I left the main cooking for another day, I left it in the baking tray in the cold. And all the fat from the duck, which had melted out of it, solidified. I took it off carefully. Thus got a great bonus - the cabbage on which the duck was cooked was not too greasy. I used the fat to fry the onions and subsequently the cabbage. And also for making the crust. Thus no additional fat was used. The onions were to be sautéed. As I wrote above, I did it in duck fat.
Soak the prunes.
Squeeze and chop the cabbage. Add to the onions and sauté together until the color changes. Shred the fresh cabbage. Yes, I take either 50/50 fresh and sauerkraut, or a little more sauerkraut. But I like sauerkraut stew. Once the sauerkraut is sauteed with the onions and darkened, add the fresh cabbage to it.
When the cabbage is almost done, season it with cumin and pepper.Add chopped prunes.
This is the duck, which had already stewed the day before. You see, I took off all the fat, not much of it, but I left the juice and put the cabbage in it. Yes, that's not the juice that came out of the duck, though that too. But before I put it to simmer, I poured a glass or two of water on the tray.
Now we have to make a dressing. To do this, mix a little duck fat (it is fusible and melts at room temperature), honey, madera, salt, mustard and pepper. Everything to taste, so I do not give proportions. Coat the duck with it. There should be something left over.
Cut apples and quinces into pieces. Sprinkle with cinnamon, let soak a little, assimilate the cinnamon. Mix with the kale. Stuff the duck with part of this mixture.
Place the rest on the baking tray where the duck was cooked, directly in the juice. I also dipped the potatoes in the duck coating. And put them on top of the cabbage. And I put candied pears in between.
Put the tray with the cabbage in the oven below, the duck on the rack above, and let the juice and fat from the duck drip into the cabbage and soak it up. This, by the way, is the second bonus I got from cooking in three stages, since I didn't have to fish the hot duck out of the tray to put it on the rack. I made the fire low so that the potatoes would be cooked and browned, and the duck would not burn on top. But basically all I had to do was to cook the potatoes and brown the duck, which I coated a couple more times.
I think it's done. It looks quite festive. If you stick a skewer in the leg and the light juice comes out and the skewer enters the meat easily, the duck is ready. We take it out of the oven, cover it tightly with foil, let it rest for 20 minutes, before serving. I serve it sliced into portions, on a large platter, with fruit or vegetables, as you like.
You can also serve in portions, so the breast.

It was this anxiety that always prevented me from noticing the unexpected and opportunities were missed... I've never known how to take advantage of random opportunities, and I've never even tried.
What is the point of all this talk? And to the fact that modern reality proves quite the opposite and that luck is a matter of blind chance, that one cannot escape from the fate and it is difficult to argue with providence - all a myth. Luck can and should be attracted to yourself)). Of course this is a reference to the younger generation. We, the middle-aged people, have managed to drag out our existence in an environment that is hostile to our body. All we have to do is give advice and teach a little about "life" )))).
Listen to your instincts, they will never let you down. Courageously open yourself to everything new, learn to learn...Keep a positive attitude towards life. Not so easy to do it, as they say, but if you really want to and try hard, then catch luck by the tail is quite real.

I would like to say that I write about cooking and cuisine, as well as everything related to it.
I continue to publish recipes, menus, and other stuff, that solve one problem: "how to make sure that at home there is always a healthy, delicious homemade food, and you spend a minimum of time, effort and money.
In the run-up to the holidays, there are more and more people in stores. Many have already begun to look for gifts for their loved ones, and stores are generously enticing with advertisements with various offers.
If usually in the store more often you can hear replicas with inquiries about this or that thing, then in the pre-holiday period everything can be even more interesting.
I stand recently at the rack next to the mirror and look at things. A mother and her child are standing near the mirror. The mother is trying something on, and her son is waiting. And then, in the midst of all the fuss, the child says that he does not like the New Year, so I always have to go to the store or buy something for the holiday.
Indeed, the search for gifts, this is a special ritual and it is not fast at all. If there is no desire to participate in it all, then you can get pretty tired from this process. I know some people who do not like to go shopping and choose something, and then save the time online shopping.
Yesterday I went to several sites and there I saw a selection of gifts for Christmas, and some already made them for the New Year.
Also yesterday I was standing in line at the checkout line to pay and in front of me was a very nice grandpa who was buying vinyl records. It was obvious that the grandpa knows about them and collects them. The salesman asked if he would pay by card or cash. To which the grandfather said with a smile that he only pays by cash, and he doesn't use demons, the last thing he said was about cards.
Have you ever thought about New Year's or Christmas gifts?
The day before yesterday I found a very easy dessert on the World Wide Web. I was interested by its peculiarity in an unusual for me design. I took the necessary products in the store, and I hurried home. And today I want to share this recipe with you. And so here we go.
*We need for the dough:*
200gr flour
200gr sugar
Three medium sized hen eggs
One packet of baking powder
4g vanilla sugar
150g butter
150g sour cream
Coconut flakes
150g yogurt (in my version with pineapple slices)
Chocolate jam (optional)
*For the cream:*
200g butter
150g sugar
200g sour cream
2g vanillin
*For the jelly window:*
50gr gelatin
2 lemons(you can do without it, I didn't add it)
Coconut shavings
150gr sugar
1L boiling water
*For the word read:*
White chocolate
Blue food coloring
Eclair filling nozzle
Pen
Smooth cardboard
*For decoration:*
Marmalade candy bars
Coconut shavings
*Knead the dough:*
The butter needs to be melted in a water bath.
Mix all the other ingredients and add our melted butter.
We place our well kneaded dough in a mold with a diameter of )twenty-four centimeters) lined with parchment paper.
And bake at 180° for twenty-five minutes.
When the pie has cooled, take it out of the mold.
Using a round iron punch, cut out a circle in the middle of our pie. Cut a little off the bottom of the pie (to set it upright). From the circle that we cut out, carefully cut out parts with a knife. It should look like this:
Use a pen to write the word Read on a smooth surface. We put the letters on these letters with the nozzle and put them in a cold place to wait for their time😊.
Pour the gelatin with warm water to swell. Meanwhile, sugar and vanilla sugar also pour water and bring to a boil. Mix the cooled, but not completely syrup with the gelatin until completely dissolved.
The recipe called for adding the juice of two lemons, or citric acid. But I didn't do that, because our "window" would have been a little lighter and clearer, but it would have been awfully sour!!!!
Now, we put our "snowman" and "house" cutouts in the middle of the cake and pour our slightly cooled jelly, up to the middle, sprinkle with coconut shavings and put it in the fridge for ten minutes, so that it would stiffen a bit. And so repeat two more times. In the second step, we add our word Read.
Beat our cream with a mixer.
Carefully cover our cake without touching the jellied part. Level the cake. Well, we have a snow window! So we don't have to make it super even!
**Decorate:** sprinkle our cake with coconut shavings, and cubes of marmalade candy.

This will probably be one of my favorite posts because I love Christmas! So if you're interested, sit back...I'll tell you about it.
Once again, I am an Orthodox Christian. But on December 25 we also have a holiday, but not Christmas! And the day of St. Nicholas, this patron saint of children and for some reason he is associated with Santa Claus. It is to St. Nicholas our children write letters of desire, and to Santa Claus whisper in his ear. Yes, the one under the tree (toy). Maybe that is why my sister and I always got presents which we wanted 😁 because my mom and dad heard us whispering.
We Ukrainians have a special attitude towards the celebration of Christmas, because the happiness of all the following days of the year depends on the richness and joy of this day.
Holiday in Ukrainian families begins in the evening of January 6, and lasts until January 14. On the night from 13th to 14th we Ukrainians have the opportunity to spend the old year and the New Year for the second time. The holiday is called the Old New Year))) And I want to tell you not only about our Christmas, but about Christmas Eve and Santa Claus.
I think you will be interested, maybe you've never heard of it :-)
In the evening, the whole family (and it is mandatory that all family members get together and move in) gather around the holiday table.
Only Lenten dishes are prepared, the number of which corresponds to the number twelve - as a tribute to the twelve apostles. It is forbidden to speak loudly.
At the feast table it is imperative to try all twelve dishes. Until dinner is over, one must not leave the house, lest evil spirits enter the house.
All day long adults eat nothing but drink water (oh how hard it is), children of course can. First we read a prayer, and then each family member eats three spoons of *kutya.*
We give it special attention. It should be made of whole wheat. Cooked wheat is topped with honey, raisins, poppy, dried fruits, uzvar and other sweets. Porridge made of wheat grains is called **"poor Kutya".** is also an indispensable meal at our funerals. And uvvar is usually cooked at the birth of children.
Uvzvar is a compote of dried pears and apples, plums, dried fruits - in one word.
Twelve Lenten dishes are borscht, fish, mushrooms, pies with beans, cabbage, mushrooms, stewed potatoes, cabbage, dumplings with potatoes and cabbage, pancakes, ***uzvar and kutya.*** But I am not much of a believer, and I don't always adhere to these criteria. BUT! I always make red borscht on Christmas Eve (I have a zedes recipe, look it up just don't add meat!), uzvar, cabbage pies (also have a recipe) and kutya porridge. I make it with boiled buckwheat, poppy seeds, nuts (hazelnut and walnut), dried fruits (dried apricots, prunes, raisins) and fill it with honey. Each of the ingredients means something: for example poppy seed means abundance in the house, nuts mean abundance and so on I will not go too deep.
On the night before Christmas, we have carols: "A carol, a carol, a caroler...good with honey...".
After supper is over, crowds of young people dressed in costumes pour out into the streets. At the porch of each house, performances are staged, with a goat as the central figure. It's called vertep... "to drive a goat." It's kind of like Halloween, only they dress up as different animals, not horrors. The trick-or-treaters wish the owners happiness. And they give different treats in return. Like this👇
***"Goat"*** is a performance where each participant has a correspondence to his or her own character. The main characters are ***"Grandfather" and "Goat".***
During the ritual performance and according to the lyrics of the song, the Grandfather "kills" the Goat with a stick, and then "cries" for her and tries to revive her. He succeeds by means of ritual actions - singing and dancing, as well as gifts that have to be brought by the masters. Or so👇
The idea of this performance is a victory of life over death!

Back when I was a kid, we had a huge box with all of our Christmas toys in it. (I was about seven at the time). And it had a picture of Santa with short pants and reindeer. I asked my mom: "And why is Santa Claus in short pants, isn't he cold? Why did he take off his coat? He's going to freeze to death, isn't he? And where's his granddaughter, Snow Maiden, and who are those reindeer and why are there so many of them?" So I asked my mother a lot of questions😁😁

"Mom, I'm bored," my five-year-old son complains as he walks into my room. I'm having deja vu. I've heard it before. In fact, my child of that age came to me with the same statement: "Mom, I'm bored." I used to think he didn't know what to do, so I suggested a dozen options. It never worked. Upon leaving, the child seemed dissatisfied with my suggestions. I shook off the resulting discomfort by remembering what I had read in popular psychology magazines about how boredom is healthy.
As the years go by, our homeschooled children get over this phase. And we never hear them complain about boredom. They seem to have found an inexhaustible inner source of creativity that fills them with endless curiosity. Yes, they will come to you, but more often to ask questions like "What is a black hole?" or "What's the difference between government and parliament?" or "Why does a car have a gearbox?"
Having studied the approach through some psychology books, I found words for many things I knew intuitively, and got confirmation of things I wasn't entirely sure of. But I never really understood what it meant to say, "Mom, I'm bored," until I came across this advice.
Armed with this knowledge, I even rejoiced when my five-year-old came to me with the statement, "Mom, I'm bored." I caught his look and asked: "Really bored?" He nodded. I patted myself on the knees and said: "Come on my lap."
He reluctantly walks over and sits down. But as soon as he sits down, something begins to change. After a minute, I feel him relax in my presence. I make sure he is comfortable. Then we watch something together on the computer or tablet or talk about something. Sometimes I just keep working while my son sits on my lap. After a few minutes, I can feel his strength returning to him. Soon he says smiling: "I've figured out what to do!" - and walks away.
Now I realize that childhood boredom usually has nothing to do with a lack of activities or even a lack of interesting activities!!!! It arises from a lack of energy due to a lack of affection. A child who lacks affection often becomes obsessed with it. The phrase "I'm bored" really means "I don't have the energy to do anything. I need to be hugged, held on my lap, or talked to by those to whom I am attached, such as Mom, Dad, or Grandma." When a child's need for affection is met, a reserve reserve of energy (inner energy) opens up, and the child sees for himself or herself many possibilities of what to do.
In today's busy lives, it is often not obvious what is behind our children's difficulties and behavior. Lack of contact with those to whom they are attached is the cause of many problems. We need to nurture our children's attachment to us, no matter what they do, because it gives them the energy to grow, mature, and learn.
We don't pay much attention to our children...
But they share their childhood secrets with us in the hope that we parents are their "best friends and will never leave them. And a higher happiness than ironing your child's hair your baby's hair when he's crawling all over you, trying to get a better to get a better fit,

Good day to all and good mood my dear readers read.cash. I would like to say that I write about cooking and cuisine, as well as everything related to it.
I continue to publish recipes, menus, and other stuff, that solve one problem: "how to make sure that at home there is always a healthy, delicious homemade food, and you spend a minimum of time, effort and money.
So the lazy week began - nothing is desired, nothing is done... It remains to mope a little and get ready for the New Year holidays)))) Even my cats ... ...are getting tired of inactivity.
My cockroaches have quieted down, do not disturb, whispering about what to lay the lawn for the New Year))))
Asked my husband today what he would like to eat on New Year? I did not get a sensible answer. Since a week will start to act actively... I have already researched the necessary information (all the prices of products). Change of course will not work and will have to spend not planned amount of money, but, I think it's worth it. Prices are for the holidays, so that our New Year's Eve minimum can at least be bought in a quiet atmosphere.
We all want everyone to have a happy New Year, and not necessarily at night or in the morning. Not necessarily in January or in February. Not necessarily in good weather. But it must come...suddenly...!
It is often said that one must fight for happiness, one must go to the barricades...

I don't want to "reinvent the wheel" today. And so today we have a slightly unusual, but delicious and simple dish on the menu called :
***Liver and vegetables and green rice.***
*Need:*
Liver preferably chicken liver.
Rice.
Parsley.
Basil.
Dill.
Green onion.
Onion.
Smoked potatoes.
Tomatoes.
Bell pepper.
Butter.
Salt.
Black pepper.
*Preparation:*
Boil rice until tender.
Finely chop the parsley.
Mix with the rice.
Slice the kurduk thinly and line the bottom of the cauldron with it. Bottom of the cauldron.
Onion feathers on top. Quite a lot of onions.
Then the liver. Salt and pepper it.
Chop the parsley, basil, dill and sprinkle them over the liver.
Put chopped green onions in it.
Place tomato rings on top.
Bell peppers. Put it on the fire. Allow the turkey to brown slightly. How does how do you know when it's cooked? Yes there's gonna be an aroma. And then we put the lid on and keep it on a low heat until until the peppers are ready.
Before serving, drizzle the rice with with butter. Serve with liver.

To answer this question, remember how many friends you have? Not the ones who subscribe to you on social networks or send you holiday greeting cards, but the ones with whom you have complete understanding and sincere sympathy?
I'm sure that some people will say that they have only one friend, and others will smile happily and say that they are friends with half of the world.
I think it would be difficult for us to compare answers, because friendship, like love, is understood differently by everyone. I have my own criteria for distinguishing friend from mate, some have other criteria.
But there are those whose ideas of what friendship and who is a friend coincide with mine, and this coincidence is the first sign that we can become friends.
Actually, if there is no coincidence in the first position it is useless to try to become friends, because if two people are guided by different ideas, they will communicate as foreigners - like everything is clear, but the nuances (the most important part of communication) will be left out of the picture.
For me, friendship is not only a coincidence of interests and sympathy.
For example, I believe that only children and parents have the right to be rebuked. Neither cousins and cousins, nor neighbors and neighbors, nor husbands and wives should make claims, accuse someone (except their own children or their own parents) of indifference, coldness, greed, that is, lack of something that one wants to get.
Well, maybe I overreacted about wives...
After all, spouses have obligations to each other.
Of course, it is better to be free of claims (first of all, internal ones), but if you really want to reproach someone, you should unconditionally cross friends and girlfriends off the list. They are beyond reproach, beyond reproach and beyond accusation.
What is rebuke?
It is the aggressive lashing out of a person who claims something, but does not receive it or receives it in insufficient quantities.
Behind almost every rebuke is the same meaning: You don't give it to me...

Caesar, or have time for everything
Good day to all and good mood my dear readers read.cash. I would like to say that I write about cooking and cuisine, as well as everything related to it.
I continue to publish recipes, menus, and other stuff, that solve one problem: "how to make sure that at home there is always a healthy, delicious homemade food, and you spend a minimum of time, effort and money.
No matter what is going on in the kitchen, outside the window, in the sky, or in your own head, it is always possible to look in the mirror, to shrug, to say to your reflection, "It is so! And then turn away and move on, not wasting time and energy on meaningless regrets. To go on living, because we are still alive, and life is a damn hard sometimes, but fascinating, fun thing, and that too - so!!!
And here comes Saturday! Although it's not a big holiday, it's a permanent one! So I wish the day was easy and the weekend interesting! It wasn't an easy day for me... Finally our city was given a subsidy for heat, but our name was not there. I will have to deal with the heat distributors for this winter personally and firmly))))
What's the point of being indignant, life will still impassively braid the future... ...and will knit our days out of gray yarn...

I can't let you go today without a recipe. I cook different dishes, but you have to cook something anyway! Sometimes I make it to order, sometimes friends or relatives come, sometimes it's just a coincidence, and sometimes just for the purpose of writing read.cash. Yes, I will not hide it! Since I chose the direction of the kitchen, I have to comply with the content of what I write about. Of course, before read.cash I, let's just say, did not have such a variety, well, this is for the best))) But now I am surprising everyone!
My husband has four days off. On those days and every morning he starts "What are we having today tasty?" He's already used to the fact that something tasty is sure to happen. Sometimes I cook at night, yes, yes. The lights go out in our town to save money, and there's a lot of work to do during the day, you have to do it in the evening! And it is even imperative to take time for your child, take time for his development: learning letters, numbers, drawing, modeling, etc. He needs his mother and her attention)))
People change, and changes them the world around them. Especially, if that world was new to you and you had to re-form your circle your circle of acquaintances, build your life in a new way and re to get used to the things you're used to. I learned this from my own experience when I got to know read.cash.
Time flies. I would not say that now I do not have time for anything, I manage something, but not everything I would like to. But soon the New Year's eve work madness will start, and so far I'm trying to organize some kind of reserve, doing something in advance. I even started preparing gifts for friends for the New Year :) I guess I'm the only one so far? :)

I've been thinking for a long time about what salad to make for New Year's Eve. An unexpected decision was made by chance. I found the recipe online. There are a lot of variations. And I will not go into details about its history and why it is called that way. I liked the ingredients. In the end, very tasty and unusual turned out. It's like a salad and a salad. And it's like, what's easier? And everybody cooks it differently, and, the main thing, it turns out well differently. And let's face it, most Caesars don't taste good. Or not as good as they could be. At least the Caesar with chicken, which I love. With fish, shrimp and other perversions, I don't accept it at all. To me, it's not even a salad, but some crap on a salad leaf.
Only with chicken, but chicken is not as easy as it seems. It's the kind of salad I tried, made once. I was already adoring Caesar at the time, but after that salad - all the other Caesars I tried were not the same.
What is the secret? In my opinion, the secret to a delicious Caesar with chicken is four things:
1. subtle flavor and a hint of garlic, but by no means dominant!
2. Fresh, crispy, non-oaked croutons made from fresh bread. Croutons like these get soggy quickly. It's like a test of freshness.
3. Sauce. Absolutely not mayonnaise! A special sauce for Caesar. You can make a store-bought one, but it's not right for Caesar, and that's for sure. Or you can make your own.
4. И... in properly cooked chicken! Absolutely not boiled! Only fried!
Yes, yes, connoisseurs, this is not the classic Caesar, which has no chicken at all, but it is a delicious Caesar with components that you can experiment with. I like it the way I write below, for me it's the perfect combination and nothing else is needed and what to add or remove is up to you.
*We will need:*
Olive oil.
Fresh white bread for croutons. I used to use toast bread, I just didn't have any other. I have to say it turned out beautifully, I think I'll take it another time.
I used quail eggs to decorate, or I could do without. You don't need them at all. It doesn't affect the taste.
A fresh chicken egg.
A small head of garlic.
Chicken breast and seasoning.
Salad. It tastes the best with it. It also tasted good with Rucola, but they were out of stock, so I had to get Iceberg, it somehow tasted closer to Romano.
Half a lemon.
Worcester sauce.
Anchovy sauce, or three pieces of salted anchovies. And if you don't have anchovies, whatever, don't use them at all.
Parmesan cheese and grated, and a bar. Or you can grate the bar a little and cut some of it into slices.
Pine nuts.
Salt.
*Prepare:*
Cut the bread into squares.
Drizzle with olive oil, season with salt, and place in the oven to crisp and brown. These will be the croutons.
Boil the quail eggs.
Dip the chicken egg into the boiling water for exactly one minute. Then cool it down.
Rub the garlic on the salad plate.
Wash, dry, and season the breast. Here I don't make a big deal about it, I use a ready-made Santa Maria chicken mix. I find that of the ready-made spices, these are the best. But if you want to use your own spices, be my guest! Just please add some ground coriander, paprika, turmeric, pepper, and a dash of zira for flavor and beauty. Better yet, add some fenugreek. And don't forget to salt.
You should season the breast very generously, literally, so that there is not a single spot left. Well, what do you feel sorry for?
And send it to fry in a pan. Under the lid in the oil for 10 minutes on one side and 7 minutes on the other side. Don't overcook! The breast should not be dry! It can be ready sooner (I just got it too thick this time), but not later!
How else can you tell if a breast is done? It usually has that separating part that tends to come off during frying-cooking. So, separate it a little, see - the larger part is no longer pink? So beat the egg and garlic, then squeeze the juice of half a lemon and beat again.
Next, we add olive oil to the sauce. While whipping, we pour in a thin stream to the desired consistency (mayonnaise thickness). I poured directly from the throat, well, about 100 grams poured, I guess.
It went like this. And then I added anchovy sauce (just a teaspoon, well, two), and Worcester sauce to taste (but also not much - one to two teaspoons), they also salted the sauce so that the salt was not needed.
Well, the sauce itself got a little greasier. Don't be frightened! That's what we need, because the sauce for Caesar isn't supposed to be thick. Plus it will thicken a little bit in the process.
Preparing the cheeses. I took grated Parmesan and Parmesan bar, and using a potato peeler I sliced the bar into thin plates. If you do not have grated parmesan, first remove the desired amount of shavings from the bar, and then grate it a little on a fine grater.
We begin to assemble our salad.
Mix the lettuce leaves with some croutons and season with salt.
Peel the quail eggs, cut into halves.
Pour the dressing over the lettuce leaves.
Arrange the egg halves in a circle (this is completely optional).
Sprinkle with grated parmesan.
Now our chicken breast is ripe. We cut it not very thick and not very thin slices. Remember, when we serve the salad, it should still be warm!

Of course, this is a loud title of this article, but in fact, this topic is very interesting to me lately, because everything is one to one :)
There are all kinds of events happening around, so different that... well, for example, some people have a serious illness in the family, others have a wedding, some have problems at work, others have the birth of a child... and there are not so grandiose, but still noticeable in equal measure - new clothes, accidents, trips to warm places, parties, the dog is lost. And there are events that seem to be ordinary - those pie burned, those - my sister was rude (to me, I have it)))... in short, life consists of different events, and there are those that are specifically in our lives, and there are those that occur in others.
And here comes the most interesting thing. After all, we look at these other people's events and somehow react. In this respect, zero reaction is also a reaction, but more often a more extensive reaction. And that's what I really want to talk about.
There are all kinds of reactions, and I'll just focus on a few. And my reflections will be confused, more of a stream of consciousness.
The first reaction, which I will say, pisses me off so much that if I were not me, I would kick the interlocutor, but otherwise I just try to avoid these topics.
Let the code name be "someone else's grass is greener.
This is when a person learns something about others, and it doesn't matter if it's good or bad, still gives out a negative evaluation.
Example: one acquaintance found out that another acquaintance was being hurt by her husband. Reaction: "she stupid vi novata" or even "hurts... but he bought a mink coat!", and then starts savoring the details, as someone bad there, and "so all should, I do not have anything, and they have...".
The second - not annoying, but that's not very much, too. And it is obsessively found in every second person, although it is clear where the legs grow from. Let the code name be "lawyer".
This is when, for example, you say, "This .... and the person you're talking to says "well, it's not his fault, it's just his..." and goes on with a long list of why the bad guy isn't bad, but you're the insensitive creep, because you're sitting here, raising a vicious accusation against a person who is pure. And no matter what happens, there's always an argument to defend someone. And this same lawyer stands there in a white coat, not knowing a damn thing about the situation and spitting in your face, while he himself has the full confidence that he's balanced the world. I do not know how, but the face of the "lawyer" is benign and almost divine,
And at first you are tempted to defend yourself, to justify yourself, to punch your fist in his pious face, well, to do something so you don't feel guilty! The "lawyer" sees this and considers it a moral confirmation that it is you who is crazy here.
The third reaction is a fake-positive reaction, again, no matter what happens.
It's when the person you're talking to doesn't want to hear anything about how bad it can be for someone else, and tries to turn everything around on its beautiful side. I agree that sometimes this is just what the doctor ordered, but sometimes this attitude comes across as clearly spitting and even mocking
Example. "If you don't have a dog, you won't get poisoned by a neighbor, and you won't have a fight with a friend - unless you have a friend, hahaha." Well or in my life is an example of my mom's attitude to my sister and me problems, my mom thinks we are the ones freaking out, making stuff up, or in general she turns on ignorance and lives like there are ponies, butterflies and rainbows around.
And another reaction is contradiction.
You complain about someone, you get an excuse. You praise someone - you get reprimanded. That is, the main thing here is to say something against him.)
This makes me laugh, because we have constant friction with my husband on the subject of his contradiction to me. You need to be supportive and agree! And he's like, "well that's how you look at it" and something to counterbalance it right away. Wooooo!!! :)))))))))

Today my husband said, "Wife, cook horseradish (hren)...
Well, I was shocked, of course, because to do it indoors is like death. And to go outside and cook it would freeze my fingers off.
But I would not have been me if I had not thought of a genius solution! I have a blender, so he grinds my horseradish (he grinds well into a fine such mush). And then I ran out of the kitchen after cooking, and had to open a window, even though it is freezing outside. It's good that now the age of different electric devices. And before we did it by hand. Yes, without tears exactly can not remember. Rubbing horseradish root was a little punishment for me and my sister. At least no one got sick.
Now who's to say I don't have any no horseradish in the fridge...

It's very simple and it tastes so much better than the store-bought stuff. And this is what horseradish root looks like:
No store-bought crap compares to homemade horseradish, at least as far as yumminess goes. Yes, if you've never made horseradish, be warned! Tears from onions are pathetic drops compared to tears from grated horseradish it will be crocodile tears. Therefore, it is advisable to carry out the grinding process either in the fresh air or, at least, with the window open. To act in this case should be as follows... chopped in the combine ... opened the lid and, without haste, run away from the kitchen. Wait for it to check, then come back in five minutes. Then there will probably be few tears.
Actually, this is not even a recipe... but a mini recipe I want to dedicate to my dad, because it was the first time I made horseradish with him (and apparently the first time my dad made it with me), and it was unforgettable! Forgive me, Dad, for having such an unsightly recipe associated with you, but it was unforgettable!
Dad and I rarely did anything together. He was too tough for that. And the "fun" we had was too different. Mom played dolls with me. Dad loved to cook, but he hated to have anyone under his feet. I even inherited a few recipes from him, like how to bake bread and pies. I also learned how to know about spices. We talked about this not in the kitchen, but outside of it. But he did let me in on the horseradish-making process once. I don't know why. Did he need help? Or was he bored? I don't remember. Or maybe as punishment for our pranks.
I remember cleaning that horseradish with him. It was a painful job, but we didn't notice it. I remember putting it in the combine and turning on the infernal machine. I remember opening the lid... And I remember how we crawled out of the kitchen with our eyes goggling, crying and sneezing, and knee-high snot, while laughing wildly, because it was the most ridiculous situation. It was the first time I had ever seen my dad cry.
After weeping and blowing our nose and sitting in an ambush for half an hour, we finally made it back to the kitchen. What else was there to do? And there, the dickhead was still waiting for us. Strange that she had not escaped, and we had hoped so much. I don't remember how daddy dealt with it afterwards. I only remember that from then on, we only made horseradish outside in the summer house. I wasn't the only one who remembered that lesson very well! Well, that is, until today... when I ventured to make horseradish at home. Naturally, with maximum precautions! No, I cried a few tears. Not without that. But not as completely as I did the other day... with my dad.
Many dishes that we cook especially often in the winter, just need to be accompanied by horseradish root or mustard. For example, cold cuts, boiled meats and tongue, grilled sausages, baked pork, and just about any kind of stuffing in general. Of course, horseradish is sold in all stores, but if you know what homemade root horseradish, it's not just that the store-bought stuff doesn't but if you know what horseradish is, then purchased horseradish won't seem so "juicy" but it will make you think that there's too little horseradish in a jar;)
And as for homemade - it seems to me that not a single microbe has a chance to undermine your health, even if just if you just smell homemade horseradish seasoning.
I'm lucky, the horseradish roots are my own, from our patch, but you can also buy it from grannies from hands. I also have a large horseradish root in the freezer that I bought at the nearest supermarket just in case. Well, who has dumplings in the freezer, who - a horseradish root, it's so to each - his own, as they say. And about the way of storage - yes, the root perfectly tolerates freezing, nothing with nothing happens to it.
*Take:*
The actual horseradish roots.
Salt.
Sugar.
Vinegar.
Olive oil, or any vegetable oil.
*Prepare:*
Peel the horseradish root.
And somewhere like this we shred, so that the blender was more convenient to deal with it.
Shred with a combine, blender (in a closed bowl), meat grinder (on the meat grinder package), or what else will you think of shredding? And on a grater, it's a sea of tears.
Add salt, sugar, vinegar and oil to taste.
The horseradish shouldn't be too dry, but it shouldn't float either.
Put it in a jar and put it in the fridge! That's it! You can eat it almost immediately. Well, okay... Well, not right away, well, wait a day and boil some cold cuts, or what do you eat with horseradish? Tongue and stuff like that and eat it to your heart's content!
Horseradish is very poisonous, especially at first, even sniff carefully. But for amateurs, it's very good!
Don't think in any way that it's stinky. No!!! It smells nice)) Ginger smells like ginger, celery smells like celery, and dill smells like dill. These smells are very different! Each one has its own unique flavor. So does horseradish, it smells like horseradish, only its smell is very pungent, but no flu and covid you are not afraid of!!!! I would classify this recipe as the most useful and effective in the fight against colds. Oh how!!!
I also add horseradish leaves to winter preserves, like pickles, they spice them up and make them super crispy (and even horseradish cheers up🤣)
And of course, to make our horseradish pink, you can add the juice of freshly squeezed beets. And how does it taste? Mustard, hot pepper, ginger, they are very spicy, and now increase the spiciness by five times! This will be the taste of grated horseradish. My husband is so full of it, but I can't. It's too spicy for me, it gets so bad that it's impossible to eat it without crying. So when I eat it, I mix it with sour cream. And milk has been known to suppress the burn. ***Here's a tip:*** Drink milk after hot peppers and you won't have "burning" in your mouth.
In the wintertime (and beyond). Horseradish is a must spice for just about horseradish is a must-have item on almost every dish on the table, whether it be meat, sausage, ham, fish, dumplings and on and on to infinity. :-)
Horseradish is good for both to those who make it and to those who cook it and those who eat it.

Krex! Fex! Pex!, or the story of a Christmas cupcake
Good day to all and good mood my dear readers read.cash. I would like to say that I write about cooking and cuisine, as well as everything related to it.
I continue to publish recipes, menus, and other stuff, that solve one problem: "how to make sure that at home there is always a healthy, delicious homemade food, and you spend a minimum of time, effort and money.
Cupcakes, stollen and panettone... Without them, the holidays are like pastries without raisins.
Candied cherries, along with raisins, look wonderful in Christmas muffins, and candied cherries as bright as the cheeks of young skiers after four hours of skiing.
I usually bake Christmas cake every year, mostly for myself, because with it I... travel back to my childhood: when I was little and winters in Ukraine were snowy, my mother had no time to bake her famous Napoleon, Kolobok, or Tiny cake, she spoiled me with a store-bought Stolichny (Capital) cake... And it was a real Christmas miracle! So, attention, moms: be vigilant, dodgy and a little lazy - buy your kids ready-made pastries, wieners and chips (just kidding). Where's your farm products to the glucomate-sodium power of the general public! :)
And while a fastidious young lady, frowning and shifting eyebrows, forges raisins, and one teenager concentrated sniffing and carefully avoiding reproaching Mom's gaze chews the purchased cookies, I chew a cake from my childhood and remember how I was walking in winter with my grandmother, a sled, a heavy fur coat and a prickly knitted scarf, and a downy scarf, and above me, against the velvet sky, shiny, fluffy new snow shimmering furry spruces. And then for afternoon snack was a cupcake.
Now, the cupcake: a woman recently revealed America to me by stating on Facebook that "you put leavening agent in a cupcake. Leavening agent for dough. It's a white powder. It's also called baking powder. It consists of flour, baking soda and citric acid. And no yeast, no."
But my childhood cupcake is not a stollen. First of all, mine is fluffier - there is no milk in it. Second, the cupcake is eaten immediately, while the stollen is eaten after three proverbial (fiends!) weeks. Third, the stollen is sometimes soaked in fragrant alcohol, so it won't dry out in three weeks (who would have let it dry out at my house!).
But then I remember again my maman, who for Orthodox Easter used to bake something traditionally Polish, I suspect Christmas, vanilla-scented, with raisins and candied fruits right to the heart, and sprinkled with powdered sugar. As I look at these beauty treatments, I sometimes allow myself the sacrilegious thought that my mother doesn't squawk over her grandchildren as much as she does her bakery creation...
Still, baking-but powder. I put yeast in the cupcake, and the cupcake turns out lopsided - with one side turned around - and so touching, homemade and truthful: you certainly can't find such disabled people of selfless labor in a candy store. And from this wound you can see a scattering of yellow-orange-green candied fruits, and scarlet spots of cherries, and all the raisins stashed in the house. And it smells like vanilla and my childhood.
And God forbid the cupcake is actually Italian.
Yes, it became mine by happy coincidence: a yellowed page with a recipe from a cookbook 50 years ago was suddenly shared with me by my mother-in-law. And more in such impulses of the soul has not been noticed: along with a recipe for cake and red velvet handbag, and top with glass beads, and a long skirt of taffeta were not given to me, but only borrowed. Right when we were first shut down for a month-long quarantine-and after the first scare, they took it back.
The cupcake would be very pretty on the Christmas table. It can also be used as a Christmas gift. There's still time, but hurry: it's only 27 days until Christmas (I'm not Catholic!!! And we celebrate Christmas the old style--January 7!!!)
My Christmas is unthinkable without stollen. It symbolizes the swaddled baby Jesus - hence its peculiar shape. Nowadays, most of the time, special industrially made molds are used to bake the stollen, but true connoisseurs consider this a violation of tradition and almost blasphemous. Their argument: make a mold in the shape of a baby and start a discussion about whether to cut off the legs or the head first...
Now there are recipes all over the internet where natural products and spices have been replaced by all kinds of essences: essence instead of lemon peel, and essence instead of aromatic bitter almonds... And there is even a "all in one bottle" version - essence flavored stollen! Nightmare horror!!!
There are many recipes for stollen: regional, family recipes, author's recipes, with marzipan, with cottage cheese... The one I'm offering today is real!!!,Italian and where its tradition and fame came from.
*Here's the recipe:*
750 grams of flour
125 grams of sugar
250 ml of milk
350g butter
2 eggs
80g yeast
2 tsp. sugar
1 sachet of vanilla sugar
150 g brown raisins
150g yellow raisins
150 g raisins
6 tbsp. rum
100 g chopped peeled almonds
50 g ground bitter almonds
100 g candied orange candies
100 g candied lemon
1/2 lemon peel
1/4 tsp. ground cardamom
1/4 tsp. ground ginger
1/4 tsp. salt
75 g melted butter for greasing
1/2 cup powdered sugar for sprinkles
Rinse the raisins, pour over the rum and let stand for an hour or more.
Rinse raisins, fill with rum and let stand for an hour or more.
Mash the yeast with two teaspoons of sugar until a homogeneous liquid mass is obtained. Leave it on for 10 minutes, so that they are slightly creamy.
Sift flour, mix with sugar and salt. Dissolve yeast with warm milk and pour into flour, add spices and vanilla sugar. Gradually add butter at room temperature and knead well to make a smooth and soft light dough.
Dry the raisins. Chop candied fruits finely, mix with raisins. Add chopped almonds. Sprinkle everything with two tablespoons of flour and stir - this will distribute the mixture evenly in the dough.
Mix everything with the dough with your hands, do not knead any more, otherwise the dough will darken. Shape the dough into a ball, place in a bowl, cover with plastic foil and set in a warm place to approach for 30 minutes.
Knead the dough and set it again for 45-50 minutes. This is what the dough looks like.
Divide the dough into 2 parts, form an oblong loaf of each, with the edge of your palm or a rolling pin make a longitudinal depression, dividing the dough in a 2: 1 ratio. Loosely, without pressing, bend the smaller part into the larger one to create a stepped fold - a typical shape for a stollen. These are the "lyalekki" that turn out. Stollen should look like a swaddled baby.
Transfer the formed stollens to a baking sheet lined with baking paper, cover and allow to stand for 30 minutes. 12. Preheat oven to 190 ° C. Bake the shtollens for 70-90 minutes. If the top is going to darken a lot (and it will!), Cover it with baking paper or foil with the shiny side up. Remove the finished shtolls from the oven.
Brush immediately with melted butter. Their surface is likely to crack - don't worry, this is not a defect, but a feature! It should be so!
Sprinkle with powdered sugar on top.
By the time you eat it, it will have turned into a lovely, sugary, marshmallowy substance.
Now the stollen should be out of sight for a few hours, such as overnight overnight so they can cool completely.
I put one loaf of Christmas muffin in a corner somewhere of the middle shelf of the refrigerator until Christmas. A fully cooled stollen, if they want to put it away until the holiday, put it on clingfilm, or baking paper, sprinkled with powdered sugar and sprinkled with powdered sugar on top, then tightly wrapped tightly. In the film or baking paper stollen ***leave it for a few days to let it mature for a few days, about 2 to 3 days to 3 weeks***.
If you are going to eat it right away, you can sprinkle the stollen with icing, sugar or chocolate, let it cool completely and serve.
Traditional Christmas cupcakes last not just not just a month, but years. The stollen holds its shape well when it is proofed, but when baked, because of the large amount of oil in the dough, it begins to spread wide. To avoid this, for the first 30 minutes of baking, support the sides with, for example, cardboard boxes from rolls of foil or clingfilm
Over time, the stollen becomes softer and more flavorful, so it's best to bake it at least 2 weeks in advance.
I baked the stollen tonight, and this morning I couldn't resist cutting it up: gotta taste the balo, and first of all, take a picture! :)))
I was pleased with the taste without reservation, but I have to agree with many generations who have baked Stollen before me: it should rest, it will only do him good!
Well, the holiday spirit has reached me too! And today I would like to urge you to make Stollen!!!! To my taste (and the taste of 5 other people) it turned out oooooo tasty, to be honest, I didn't even expect it to be this good. Overall, it tasted a lot like Stollen, but tastier because first, it has more filling, and second, I liked that it is not very sweet, and all the sweetness is concentrated in the powder that we sprinkle on top of the Stollen! Of course, it would be better to let the Stollen infuse for a week or two, but my one was barely cooled down.... A real fight broke out over the last piece and the men. The men greedily and quickly finished the Stollen, while we were indignant as to why they didn't pour us tea while they quietly finished it themselves))))) In short, I want to say, bake!!!! it is soooooo delicious))))

I continue to publish recipes, menus, and other stuff, that solve one problem: "how to make sure that at home there is always a healthy, delicious homemade food, and you spend a minimum of time, effort and money.

Anyone, almost anyone, knows that: It's easy to learn how to cook vermicelli - you put it in salted water and you're done. The main thing is not to overcook it, or it will turn into glue.
But in fact, it's a little different. In most cases, the pasta is cooked al dente - that is, half-boiled - half-cooked, with a hard center inside. And then they are poured into a pan and stewed in a previously prepared sauce. But that's not all.

So here we go. Let's get the broth. You don't have broth?!!! Well, take two or three thighs and boil it. You can also boil a lot and freeze the rest for those occasions. Or you can boil it and then freeze it.
Ah, no chicken or time, bummer? Okay. Add bouillon cubes to the water, half as much as they say. Oh, we don't eat that? Boil it in water, that's all. But the taste will, of course, a little different.
Meanwhile, in the castle... pour a little vegetable oil into a high-walled skillet - for starters. Put some freshly chopped parsley in it.
We take the rabbit stew (either pantry-prepared or store-bought) and chop it into pieces right in the jar.
Pour into the pan and stir. We add a little salt, spices. Let it stew for a while, and then we turn to the original source - the broth in which the pasta is cooked. We add 1-2 ladles. Stir and stew. We add dry white wine, about 100-150 grams. No? What is it ... Just kidding - I also did not have it.
That's why I recommend this stuff. Wine apple cider vinegar from Modena. I'm not partial to this city, but honestly - anything with its name on it is always delicious. After all, Emilia-Romania is one of the tastiest places on earth and home to many famous products like Parmesano, mortadella, bolognese sauce and so on. And this here vinegar keeps for a long time and no one will drink it. A little splash of vinegar. But something is missing. Looking at the previous photo... it's obvious! Any photographer will tell you it's not red enough.
Wash one bell bell pepper and cut it up. We add them. It's a different story, isn't it? Let it stew until the peppers soften.
And move the pasta into our sauce. And the broth, there should be just a little bit left. Finish it off.
For beauty, sprinkle carelessly with dill.
That's it. Stir, turn off, cover with the lid.Ready dish serves as a complete dinner. Serve it to the table immediately after cooking it hot.

But in English-speaking culture cottage cheese is considered as a type of young soft cheese, while in modern Russian-speaking environment cottage cheese is usually not considered as a type of cheese.
I'll teach you how to make it properly at home)))
***Cottage cheese at home or Disposal of sour milk.***
Cottage cheese on its own is a great dish, much healthier than fast food. It's the perfect snack or dessert for tea, an invigorating breakfast or a light dinner you can make cottage cheese as often as you like! The easiest thing you can make with cottage cheese is a sweet or unsweetened cottage cheese mixture.
Mix cottage cheese with sour cream, add honey or sugar, nuts or dried fruit, candied or fresh fruit or berries, and a hearty afternoon snack is ready!
You can make sour milk without your involvement if you haven't had time to drink the milk before the expiration date. If you already have, go to the store for milk or to the market for "homemade milk."
*You need:*
2 pots
colander or sieve
2 or 3 layers of 50 x 50 gauze
a ladle
3 liters of milk (to make 400 grams of cottage cheese)
You should start by buying the right, souring milk after 3-4 days. Such milk can be found for a long time. It is sold everywhere, but it is packed in uncomfortable soft packets. It is generally healthier to use, since it does not add preservatives and antibiotics.
Some hostesses ferment "long life" milk by adding kefir. I tried to do so, and the cottage cheese turned out bitter!!!! Probably because the additives disturbed the process of natural fermentation. The milk successfully curdles, but the fermentation process is no longer there.
*Let's make our curd:*
Pour the milk into a pot and leave it to ferment at room temperature. You could leave it overnight, for example. Or 24 hours. You don't want to leave it very long, or the curd will be sour. However, if you like it sour, leave it for a longer time.
Put a pan with sour milk on a small fire and heat it properly. But do not bring it to a boil! Otherwise grains will be ground and slip through the gauze. How to determine when it is time to take it off the heat? As soon as you see that steam rises over the pot and the yogurt separates into white flakes and a yellow-green liquid, you can take it off the fire.
But while the sour milk is heating, you can prepare gauze to separate the curd from the whey: put a colander in the second saucepan, line it with two or three layers of gauze, prepare a lid if there are cats in the house :))))).
Without bringing the sourdough to a boil, take it off the heat and carefully transfer the main mass with a ladle to the colander. Put the colander in an empty pot and let the curd drain, and pour the whey into bottles.
That's pretty much it. My mom used to let the cottage cheese drain overnight, which is probably why I didn't like it - it was very dry. So now I let the cottage cheese drain for 10-15 minutes and eat it right away or put it in plastic containers.
If you like your curd drier, cover the pot with a colander and let it drain for an hour or two or three. Until the curd comes to the right consistency.
Many housewives poured out the whey. And in vain, because milk whey is a treasure trove of nutrients, and what pancakes are made of it!
The cottage cheese itself is an excellent dish, much healthier than fast food. Lemon wedges are cut into small cubes (marmalade).
Mix it with the cottage cheese. If it turned out liquid, you can add flour, but in principle it is not needed there.
Now sprinkle the board with flour and form the cheesecakes.
And fry until brown.
Then we cook the cheesecakes in the oven for about 10 minutes.
Serve with whatever you like. The lemon wedges melt while cooking and explode in your mouth with a fountain of flavor. The kids love it! And the adults love it too. My grown-ups ate it with condensed milk. Enjoy!

Well, let's start with the dishes, appetizers, and drinks that can be served for the New Year and the holidays).Today's recipe is for a frothy drink - Cider. In my opinion, it is an unpretentious drink, they make sauces, desserts, serve it with meat and just drink it, and in winter, why not, in moderation, of course).
I took two types to try, and I persuaded the saleswoman to meet me halfway and sell two ciders at a lower price. So, the apple cider went clearly into the cooking, it has such a ringing tart taste, not for drinking, as far as I am concerned.
But the pear one is the best, it's softer and has a nice long aftertaste. I would still take it, and I recommend it to you if you like dry ciders.
Turkey with pears and cider a pear as a garnish is an interesting solution. It's not apples for you.
Pick a firm fruit so they don't fall apart when braising. Just don't take conference ones, as far as I'm concerned, they have weak flavor, choose seasonal juicy, fall and winter varieties.
***Ingredients:***
turkey breast fillet -600 gr
***Marinade for turkey:***
-apple cider dry - 150 ml
-paprika - 4g
-fresh chili pepper and salt to taste
***Spiced pear:***
-winter pears -3 pcs.
- butter - 40g
-cane sugar - 10 gr
-molded cardamom pinch
-freshly ground black pepper and salt to taste
***Preparation:***
Mix cider with paprika, salt and chili pepper. Slice the turkey into 2-3 cm thick slices and marinate in the cider for an hour or so.
Cut the pear into slices and fry in butter with the spices on both sides for 3-4 minutes.

I continue to publish recipes, menus, and other stuff, that solve one problem: "how to make sure that at home there is always a healthy, delicious homemade food, and you spend a minimum of time, effort and money. I remember when I was a kid, I didn't like stuffed cabbage rolls at all. Or rather, I ate the stuffing and didn't touch the cabbage :) Without a doubt, the dish was terrific, and I could smell it in the kitchen every time! You know how our moms always taste!
Probably a lot of people don't like to cook them, right?) And many people have never even heard of this dish. We have to make it quickly, and while you're preparing the cabbage, all the excitement is gone. There's no point talking about who invented it. Most of the time it's Ukrainian and Russian cuisine. One and the same dish each nation interprets in its own way and offers its own version. If the same dish doesn't change, then it suits and fits all the criteria of the ethnic group that uses it. And so it started with me going to the basement to get some cabbage. it's all shriveled up, it's all soft, just shriveled up. at the root. I was very upset, and I don't know why that I don't know why that happened. But I still made stuffed cabbage rolls.
Usually I used to make these balls I used to roll them in flour and fry them in a frying pan and pour a white sour cream sauce. I told my husband about it, that the cabbage was spoiled. During this time my husband had already managed to buy 20 kg of proper cabbage for pickling at the market, and mine was still in the cellar. I decided to cook stuffed cabbage. I went to the basement to get the cabbage.
It had been over a month since I'd harvested my of cabbage. Only 30 cabbages. I was terribly proud, so... beautiful, so thick and round and white and crisp and juicy. I salted ten cabbage heads at once, to try it out. It didn't turn out so well, my husband said it wasn't the right kind. Well, okay, not the same, but the rest - that! We put the cabbage we bought in the basement.
Yes, I, too, everything comes out not perfect, and that something can not turn out at all. But I do not despair. Everything happens in our life "by trial and error".
Ukrainian stuffed cabbage rolls are probably the most varied. There is minced pork or beef, garlic, parsley, rice, bell peppers and even millet. You put rice, mushrooms, an egg, green onions and onions. I'm very fond of I love cabbage and everything you can make with it. It is healthy, everyone knows that, and all vegetables are generally useful. But for a long time cabbage rolls presented me I can't imagine tearing the leaves off one by one and shivering.
I've told you before that women in our area do not just cook for fun, but they cook in a way that surprises the whole neighborhood with their food. And it does not matter that the food is made of simple ingredients, they have enough of them to come up with a masterpiece. How to make stuffed cabbage rolls an unusual dish, I told one mother who is preparing for the wedding-her daughter. And the stuffed cabbage rolls are just for such an event, for the invited guests. After all, everyone will say what a bride she raised, what unusual cabbage rolls she makes. And today we are going to prepare this seemingly simple but unusual dish. At first I wanted to make just stuffed cabbage rolls, but then I decided to make them on a vegetable bed. You can make them without it, but I made my life a little harder. Yes... and about the tagine... At first there was the idea of stewing the stuffed cabbage rolls in the oven, then all the same in a pot with thick walls, and then I thought - since I have a tagine, isn't it the best dish to cook stuffed cabbage rolls - a slow, methodical stewing?
*Take:*
A bale of cabbage.
Greens (parsley, dill, coriander).
Rice.
Meat (I have pork and some beef).
Fat for juiciness of meat. About a quarter of the meat.
Onions.
Carrots.
Bacon.
Freshly ground pepper.
Coriander.
Basil.
Salt.
For the vegetable pillow:
Onion.
Carrots.
Sweet bell pepper.
Quince.
Tomatoes.
Parsley.
Dill.
Salt.
Pepper.
Cinnamon.
*Prepare:* Strip the cabbage into sheets, cut off the thick veins. It is better to blanch the cabbage first, so that the leaves separate more easily, but I had a very large cabbage, so I could not find a pot for it. I had to torture myself like that.
Blanch the cabbage leaves. Finely chop the greens.
Soak the rice in warm water. For about 20 minutes. Then boil it for about 10 minutes.
Make mince out of the meat. I do it by hand, you can do it with a meat grinder. In order to make it by hand, I first cut the meat and bacon into small cubes.And then chop it with hatchets.
Finely chop a large onion and saute it. As the onion becomes transparent, add grated carrots to it. And fry together.
Cut the bacon into thin strips.
Add the rice to the minced meat.
Season with pepper, coriander, basil, and salt.
There are greens in there, too.
In the same place cooled paste. Stir.
Blanched cabbage leaves, if necessary, beat down so that there are no thick veins. Place a piece of bacon in the middle of the sheet.
On top of the stuffing.
And wrap it in an envelope.
Prepared stuffed cabbage rolls fried on both sides until brown. And set aside. Or, if you are cooking without a pillow, at this point you can place the stuffed cabbage rolls in a cooking container and begin to stew. Or continue cooking the pillow like I did.
***Prepare the pillow***. Slice the onion into half rings, or quarters of rings, and sauté. Place the cooked onions in the tagine.
Salt and pepper. Salt and pepper each layer, I will not write about it, yes. Carrots, too, we parsed (I did not grate it, but cut it into julienne pieces). In the tagine, on top of onions. Also we fry the peppers. And this is the next layer.
Quince, too, cut into strips, fried.
Place on top of the vegetables.
Salt, pepper and sprinkle with a little cinnamon. Top with peeled and finely chopped tomatoes.
Then finely chop the parsley and dill. And sprinkle over the vegetables.
Put stuffed cabbage rolls on top. Cover with the lid and put it on a low, small fire, so that nothing boils, but simmering, as it should be in a tagine - for several hours.
It's very juicy! Don't add any water at all. It will all be vegetable juice.

Paneer Cheese Part 2 or Sweet Rasgulla

What I'm about to tell you! This is the second I can't tear myself away from paneer - I'm chewing on it piece by piece! I want to tell you more about this delicious cheese.
I have wanted to make paneer for a long time, but I have not been able to do it for nothing because it is so delicious! Paneer is an Indian cottage cheese. And we are going to make another delicious thing out of it😋
Once in a video on youtube, an Indian woman was making a traditional Indian dish with paneer cheese. She made it so deftly and quickly, and the dish was so delicious that I wanted to make it again. But here's the trouble: I didn't write down the recipe( and I never found the video again, maybe she deleted it, or maybe I typed the request wrong, since the review was in Indian. I did not write it down, it seemed that I would remember and I forgot...
So, while browsing the web, I found the recipe for paneer itself, and even a sweet dish made of it, Rasgulla. I highly recommend it, it's delicious! It's quick and easy to make. Imagine an airy sweet curd ball with lots of pores inside, which are filled with sweet syrup.
When you bite into this ball, you feel a sweet explosion in your mouth as the cold sweet syrup that this dessert is literally filled with bursts out of the pores. Instead of chocolate-covered cheesecake or supermarket cottage cheese dessert, we will now eat this Indian sweet. I recommend that you also get to know this dessert and learn how to make it.
***To make the Indian sweet Rasgulla, you need the following products:***
-2 liters of store bought milk (1,5% fat).
4 tbsp lemon juice
400 ml water
200 grams sugar
vanilla sugar to taste and taste
Prepare the paneer from the milk and lemon juice. How to make paneer.
*Paneer cheese.*
Bring the milk to a boil. While it is boiling, add the lemon juice and wait for the milk to curdle. Toss the cheese in a colander and drain the whey.
Lightly rinse the cheese under running water (preferably lukewarm). This time it is not necessary to decant the moisture completely.
The cheese should be slightly malleable.
Using a blender or by hand, make the paneer into a malleable dough. Knead the cheese by hand until it resembles dough (it will fall off the hands and easily roll into balls).
Next, you can either roll out a plate of cheese dough and cut it into cubes - this is for making salty Indian dishes with paneer cheese. And we will roll out the balls to make sweet Rasgulla.
*Rasgulla.*
From the cheese "dough" we make uncracked balls a little bigger than a hazelnut.
While the balls are being made, the syrup of water and sugar should be boiling on the stove. We boil it for 5 minutes.
Once the syrup is ready, the balls can be dropped into the pot. Choose a pot with a wide volume, as there should be plenty of room in the pot. The balls will double or even triple in size during cooking. Cook the balls under a lid on low heat for 10-15 minutes. They should increase in size and swell. The balls will swell almost twice. Close them with a lid and cook for 10-15 minutes, sprinkling cold water occasionally, then they will be porous and white.
Then put the pan in cold water and cool the syrup with the balls. Leave it in the pan for 24 hours so that they can soak in the syrup soak. serve a few balls each with a little syrup. A well-cooked rasgulla should squeak when you bite into it.
Place the pan with the cooked balls in another larger pan with cold water. Once the Rasgullas have cooled, transfer them to a container with a lid and pour the syrup in which they were cooked. We leave the cheese balls to soak in the syrup in the fridge overnight (10-12 hours if you can hold out).
***Tip.*** While cold pouring the Rasgulla syrup, you can add vanilla sugar to it to enhance the flavor. The finished cheese balls are served cold in a bowl with the syrup.

Paneer Cheese Part 1
Good day to you all, friends!
I have so much stuff piled up, I could do nothing for a week, showing the accumulated stuff. The weekend, in all its idleness, did not give me time to show you everything. So, let's make up for lost time.
I'll start with an interesting appetizer, which my culinary genius, inflamed by a draught, came up with on Tuesday.
Very original taste. The sweetness, the spiciness, the freshness, the cottage cheese saltiness, the olive oil, the nuts - it was something with something. My husband and I got high and I was smiling and saying "wow, that's a cool combination." You might not like it though, especially considering the fussiness of the recipe.
Let's start with the cheese. If you can buy paneer, be my guest. In fact, this culinary experiment came out like a squirrel from a broken egg, precisely out of interest in cheese.
In the meantime, I'll tell you how I made this most ancient of known cheeses:
2 liters of whole pasteurized milk (this is the one whose composition is described as whole milk)
40 ml white wine vinegar
1/3 tsp. salt
2 tsp. finely chopped dill (if the purpose of the cheese - unsweetened dishes).
The cooking process itself is very simple: pour the milk into a saucepan and over very low heat, stirring, heat almost to a boil, degrees to 85°-90°.As will go over the surface of the steam, indicating that soon the milk will boil and start boiling - that's it is.
Three parts, stirring with a wooden spatula, pour the vinegar. At this point the whey will begin to separate and curd flakes will rise to the surface. Once the whey is completely separated - pour the curd mass in a colander with holes, lined with 3-4 layers of gauze. Allow the whey to drain for 2-3 hours.
Put the cottage cheese in a bowl, add salt and spices, herbs, spices (to taste) and mix thoroughly.
The curd mass is very tender, it is still full of whey, so you need to return the cheese dough to the gauze, fold it and put it under the gauze. I, without any wisecracking, put a 4 kilogram hefty weight on top and left it overnight. The cheese came out close to brynza in consistency. But not brynza. I liked it very much, although I put almost a full teaspoon of salt and, as a result, over-salted it. That's what my mom told me. Truth is, she doesn't even salt soups, for me they are bland, and I really love and respect salt.
After 12 hours, when I unwrapped the gauze, I saw such a cheese.
The weight from two liters of milk came out to about 250 grams. Which is quite commensurate, given the prices of bryndza-like cheeses. The whole zimmes of this experiment is that I made this cheese myself, having only milk and vinegar, which, by the way, can be anything - apple, rice, or essence, dilute it to 5% and pour it in.
Okay, let's move on. What we have here is beets. That's easy. Wash the beets, wrap them in a couple sheets of foil, add a sprig of fresh rosemary if you want. Bake them in the oven for an hour and a half. The temperature is 150 degrees.
*Pesto Sauce.* However, from the pesto here is only the cooking technique - fold and chop. Leaves and stems of fresh parsley.
Handful of peeled hazelnuts, garlic clove, pinch of salt, pinch of black pepper, 2 tbsp. olive oil, 1 tsp. balsamic vinegar, 1 tsp. lemon juice, a few strips of lemon zest. Put together in a bowl and grind with a blender. You can grind in a mortar until smooth.
***Assembly***
Cut the beet into slices, with a thin-walled cylinder cut equal circles from the plates. Do the same with the paneer. Arrange in layers on a plate, making a pillow of pesto in the center. Beets, then cheese, grease with 1/2 tsp. pesto, then beets again, cheese, sauce and so on. Pour sauce on top, garnish with lemon zest and fresh parsley. You can add some freshly ground black pepper on top to taste.
Very tasty. It's unlike anything else, meaning it managed to taste a whole new flavor. The beets give a delicate sweetness, the cheese is salty and gives the curd crumbly velvety, the sauce is fresh, a slight sourness and a frenzy of flavor. All together it's a symphony!
Too bad it was in the evening and the picture didn't turn out so well...But I'll show you what I've got.

Once I saw these beauties in Instagram, I decided to remember the recipe and cook them myself. I share it with you, my dear readers of read.cash. Looking through that article, I realized that such a bright combination of green peppers and red tomatoes definitely need to repeat. I have a variant with meat, but you can replace it with boiled chickpeas if you wish. I baked peppers in the oven, but you can make them another way: on the stove (cook under pressure for about 1 hour) or in a multicooker, on the pilaf mode.
I'm not a vegetarian... And I love meat. Every once in a while I get a craving for something I've already cooked once. I want a hot, filling meal.
Stuffed peppers - one of the most striking and naysmacking passion, which can give us a summer. They can be stuffed with meat or vegetables or
Syrus zeleni, but the passion is always distinguished by its bright color and tangy flavor of stewed peppers ...
Now of course not the season of peppers, but this problem is solvable. Sweet bell peppers, bitten with with a juicy crunch and even smells in a summery way. A recipe from memories of summer. It's good when it's hot, so it's best to reheat them just before serving.
I accomplished another "feat" yesterday. In fact, if you get someone else involved in cooking the peppers, it's quick and not at all time-consuming.
**I have to:**
This time I can give the exact number of ingredients, for those who find it hard to cook by eye :)
Peppers - 10 pcs. Try to choose about the same size.
Rice (round) - about 1 tbsp (without the hill) per pepper (ie, I had 10 peppers yesterday = 10 spoonfuls of rice)
Meat - 400 gr. Depending on your preference - pork, beef, chicken. But either the meat should have some fat in it, or you'll need to pour in a little more sunflower oil
Carrots - 3 pcs.
Onions - 2 medium onions
Tomatoes - 4-5 pcs ( 600-700 gr)
Spices - black pepper, bay-leaf, coriander greens (dill, parsley).
***Preparation:***
Grate carrots on large grater, dice onion, fry.
Add rice and spices to the minced meat.
Part of the roast. Mix well and fill the peppers with this stuffing.
Place the roast on the bottom of the pot, garlic cloves, hot peppers.
Then the greens, trimmings from the peppers. Also pepper can be trimmed.
Add the passata, paprika, bayroot, allspice.
Stuff the peppers and put them in a cauldron or a pot of multicooker, in my case in an earthenware pot. I always stack them vertically. It is easier to do than in a pot, yesterday I was in a lot of pain and sweat while making them stand upright!
Pour water over the peppers so it does not completely cover them. water so it doesn't completely coat the peppers. Taste and season with salt. Then put it in Oven to simmer over low heat (150-160 degrees) for about two hours.
The fragrant peppers are ready. Enjoy! Be sure to serve with fresh bread.
***A housewife's tip***
A lot of people put peppers in dishes "upright" so they fit more. So "standing upright" is my personal quandary, but it tastes better that way to me.

Before approaching this salad, I dug through a lot of recipes from old chefs to the vision of this salad by modern chefs in such restaurants.
To be honest, I still don't understand a few things, in particular, should I mix this salad, or cook it in layers? Some people suggested to mix it, others to layer it. As a result, I made it in several versions - mixed and layered - portioned, and on the table in bowls. The second point is the layering. What to there is no consensus about the order of the layers, that's why I relied on my intuition. But for myself I realized why the salad is so transformed in our time. And in fact, if you look at the basis of it, you'll understand it, too. In a salad that is considered a classic. В in addition to the usual set the usual set of products - lettuce, capers, crawfish necks, caviar, but all of them are essentially used for decoration only and do not affect the main taste in particular.
Although in some recipes crayfish shakes are included in the salad itself, but I still do not like the combination of crayfish and poultry, for me it is dissonant. I tried it a little bit, and I was strengthened in this thought.What else... yes... In some recipes there are eggs in the salad itself, but I didn't put eggs in the salad, and I liked it. The salad, surprisingly, turned out to be easy. As my husband said - you want to eat it and want to eat it.
The only thing I do not understand what influenced the appearance of carrots and peas in the salad. Apparently, someone saw it that way. If you take them out of the modern Olivier, you get the basis of that Olivier. That's the whole secret. The only thing without the lanspeak. Here lanspeak, by the way, plays a very important role, makes the salad tender and fresh, do not be lazy, make it.

I add seasonings to taste, mix them with a blender and an egg into a foam, followed by olive oil until the desired consistency. For one egg may take a cup or two of oil. The caviar, contagious, constantly tried to fall off the egg, well, I did not persist, left as is, and the husband and my husband wanted to eat it. Crawfish necks arbitrarily, lancic also I threw around arbitrarily.
Second option. On the lanspeak I put the already peeled crawfish necks, capers, eggs with caviar around them.
We tried the top two options. It was something like this. My husband didn't like it very much. He was used to the regular olivier, he wanted it. I liked the mixed version much less than the flaky one. I found the puff pastry more interesting.
And then I made a third version for the table. Here it was either because I had it for another day that I finally tasted the salad, or because I had it in a different layout. As I was putting it in a slightly different order - laying a few layers of meat. I didn't take a picture of the process, I'll just tell you. At the bottom - quail meat, mayonnaise, potatoes, mayonnaise, tongue, I did not pour mayonnaise on cucumbers, in general I suggest not to pour everything tightly with mayonnaise, but to sprinkle a layer with a syringe, it makes the salad lighter. And some of the authors suggest pouring mayonnaise on everything, I am afraid of such a prospect. Again, quail, mayonnaise, lanspeak, crawfish necks on it. I didn't add capers and lettuce this time. I don't need it here. And then I put eggs and caviar around it. I didn't see them on the picture, because the salad was going to be shipped (it was a cooking order 🥗), I covered it with foil and pressed it on the edge of the plate so it wouldn't roll around and made sure nothing moved! I laid the eggs on the spot. I forgot to take a picture, but my imagination will do the trick. This is where I really got into this salad. I loved it. I mean, I was so excited about it. Well, the colorful lanspeak looks really spectacular. Mine have long wondered what it is. When I told them it was olivier, their faces changed a little bit because they were expecting something like that, I guess. I continue to publish recipes, menus, and other stuff, that solve one problem: "how to make sure that at home there is always a healthy, delicious homemade food, and you spend a minimum of time, effort and money.
Sometimes I want a simple but unusual meal. In such cases, I always resort to spices and interesting dressings.
And here's a dinner option: satsivi sauce, and carrot cutlets to go with it. Great dinner👌
It's sunny today and not so cold anymore, but the air is still icy. For some reason I remembered Rhodes, I want to go to the sea, to the beach. But I can't have that...
This food is not so hard for me, the main thing is my mood. I decided to take a day off from legumes for lunch. I've already made buckwheat patties. This time I decided on carrot patties.
If that's the case, I decided to post an article today about the carrot cakes and something to go with them (I chose satsiviti sauce as a variation).
Carrot cakes are good, of course, but carrot cakes are better. At different times, I've made this dietary dish with different recipes. But gradually only one came out as a favorite. Perhaps laziness played a major role. Especially I never make a wish: tomorrow I will have carrot cutlets for dinner! No. It usually happens this way:
Why not bake or boil beets and carrots and make a vinaigrette. And I can't bake or boil two carrots. I put in a whole tray or a big pot. So it turns out that where there is a vinaigrette, there is beet caviar, and carrot cakes and borscht dressing...
The other day I had almost a kilo of boiled carrots. I used 200 grams for carrot cakes. Another 100g went into the sauce for the cheesecakes, and the leftovers just made patties according to my favorite recipe.
Vegetable cutlets are revered in our family. Carrot patties are one of our favorites... I usually add semolina to them, which makes them tender, just melt in your mouth. In your mouth. Yummy! But I wanted to make them healthier and more interesting. The usual oatmeal was off the table, I already add it to everything. I love oatmeal, but in this one.
I wanted some kind of a twist.
There are a lot of vegetable cutlets: cabbage, carrots, green peas, beans, chickpeas, onions. These recipes are popular not only with vegetarians and fasting people, as well as just a tasty dinner. Choose the option that suits you.
A lot of housewives make them with pleasure, because it turns out delicious, nourishing, bright, healthy, beautiful and economical. I want to share my favorite recipe for carrot cutlets- carrots.
I made my first ever carrot cutlets using the classic recipe: carrots and flour (or semolina). The basic recipes in most cookbooks suggest adding sugar to the carrot mince, and considerably more salt. I tried to obey the culinary authorities, but the result did not please me. The cutlets turned out very sweet, because carrots contain enough sugar, and we add more. It turns out almost a dessert dish.
For the same reason, carrot cutlets with dried apricots did not take root in my family. After various experiments, the family had only one recipe.
Ridiculously simple to make, but the result will delight you.
As the basis is taken pakor recipe (ind. vegetables in a pastry or mix vegetables with chickpea flour fried in batter, ie it is a variation of vegetable cutlets), but only as a basis, because spices are supposed to add to pakor (pakora??) not add or add, but very moderately, and then, only those who like)).
Exactly the same cutlets can be made from zucchini or other vegetables. There are many options, but in this case the description of carrot cutlets.
You will need a fine grater (with small oblique cuts).
***So 🍽 let's cook.***
*For ten patties you need:*
250g soaked chickpeas
2 medium sized carrots
1 onion
1 or 2 garlic cloves
2 tbsp lemon juice
1 tbsp. soy sauce
1 tbsp whole wheat flour + 2-3 tbsp for breading the cutlets
1/2 tsp. sugar
1/3 tsp. nutmeg
White or black pepper to taste
Oil for frying. For those who like spices, you can add some ground cilantro, coriander, turmeric... All this to taste.
Wash, peel and grate carrots on a fine grater (do not squeeze out the juice).
Peel the onions, wash and grate them as well as the carrots.
Add chickpea flour, garlic, lemon juice, soy sauce, sugar, nutmeg, salt, pepper and spices. Knead.
Leave the minced meat to allow the flour to swell. You can put it in the fridge for 12 hours and it is very convenient if you make mince in the evening and just fry cutlets in the morning. Form into balls with a small scoop or with an ice cream scoop. I made simply with my hands. Flatten the balls a little. Although you can also make them as oblong ordinary cutlets, as I did.
Form in the palms of your hands and if the cutlets are oblong, they should be twisted in the palms to one side.
Bread the cutlets in breadcrumbs.
Pour oil into a frying pan, heat it up and plunge one cutlet at a time into the boiling oil. Fry on both sides for 2-3 minutes until golden.
If the minced meat from the refrigerator, then before shaping and frying cutlets it must be allowed to warm up at room temperature for 1 hour.
These cutlets are very good to serve with sauce, my choice was satsivi sauce.
***Vegitorian version of satsivi sauce.***
Walnuts peeled - 1 - 1,5 cup (250ml glass)
Onions - 250g
Broth in which the carrots were boiled - 2 cups (salt!).
Non-vegan version: meat broth.
Suneli (garnish) spices containing fenugreek, which has a distinct nutty flavor, but I have for some reason smells like mushrooms, and yes, I grow fenugreek in my garden) - 1 tsp (no slice! and you can do even less). Black pepper - to taste.Garlic - 1 clove (you can do without garlic, I personally like it better without garlic and without cayenne pepper).
Saffron on - the tip of a knife or a small pinch and I had a real saffron and do not recommend using turmeric.
Wine vinegar (white is better) 6%, you can also apple - 1 tsp, but it is better to be guided by your own taste.
Vegetable oil, sunflower oil is better - for frying the onions - 2-3 tbsp.cilantro - 1 sprig (you can do it without cilantro).
You will need a thick-walled saucepan or a small saucepan (made of cast-iron or aluminum) in which porridge is usually cooked.
Onions, peel, wash and cut into small cubes. Peel the nuts and pass them through a meat grinder.
Nuts are better to pass through a meat grinder because it gives a special texture to the sauce. For example, for baje sauce, I would grind nuts in a mortar or with a blender, maybe. But for satsivi, in my subjective opinion, it is better to use a meat grinder. Chop the onions finely with a knife, not with a meat grinder.
In a small saucepan pour 2-3 tbsp of oil and fry the onion with very moderate heat until transparent (do not fry). Add the prepared nuts to the saucepan with the onions, stir, add a little salt to taste (remember that the decoction of carrots, which will be used for the sauce, should already be salted) and stew, stirring, all together for 3-5 minutes at the lowest heat.
Dissolve the suneli in a small amount of vinegar. And saffron, put in a small bowl and pour 2 tablespoons of hot water. Add the vinegar with the dissolved suneli to the nut and onion mixture, and pour the heated cabbage broth. The amount of broth can adjust the thickness of the sauce, but we must remember that the cooled nut sauce will become thicker.
If necessary, salt, pepper with ground black pepper and add saffron infusion.
Stir and simmer the sauce at the lowest boiling point for 15-20 minutes.
The sauce needs to cool before serving it to the cutlets). This sauce will also work with fried eggplant, battered cauliflower, and in our case carrot cutlets.
The main product for satsivi can be anything: poultry, meat, fish, vegetables.

No, really, I can't tell you all the history of this boring soup. But I must tell you that the first recipe for meat soup hodgepodge I read just the other day. Although I may have read it as a child, when I was studying a book about delicious and healthy food. I actually started reading cookbooks when I was about 9. I read them then and dreamed that someday I could make it all, someday when I had all the ingredients I needed. But I don't remember if I read the hodgepodge recipe then, or if I leafed through it as uninteresting. Then, I had already tried the hodgepodge at a cafe-restaurant, everything was cheaper back then. We went there for dinner with my mother, she came to visit me. But the hodgepodge wasn't even a soup at all, but a kind of fiery spicy meat stew.
And after that time I had never tasted it, but of course I had heard the legends about meat soup. It was such an elite-restaurant dish, because who could afford to put into the soup several varieties of sausages and smoked meats. Then I grew up, I mean, matured quite quickly, began to earn money and go to restaurants, cafes. So I had my first sausage soup when I was 22, in some dying restaurant. And then a lot of people who were into cooking were telling me how they cooked this stuff, and they weren't sharing the recipes, they were saying things like: "I don't make this stuff without eight kinds of sausages, black olives and lemon".
In short, all kinds of stories and remarks of my friends were making up in my head the recipe, or not even a recipe, but a way to cook meat soup. And for the first time I cooked it in , when I saw a package with sausage scraps on the counter at a ridiculous price.
The next day I told my colleague at work about it. Marina, who loved to cook, she even went to college to study cooking. So she could not help but insert her three cents, saying that in his opinion there cannot be salted beef without a broth of smoked knuckle and smoked black olives.
Oh yes, I completely forgot to say that everyone who was talking about "hodgepodge" in front of me insisted that it was necessary to add a slice of lemon to the soup.
But the main question, which has always tormented me about this soup: what else do they put in it besides sausages and olives? For some reason the name "solyanka" made me think of sauerkraut. And so for many years I could not imagine making sauerkraut soup without sauerkraut, and I even did not cook it if there were no sauerkraut in the house.
But years went by, I grew up, and I hope I was getting smarter, or at least experienced. I began to take the dogma of recipes much more lightly. And the final break in the pattern came when I tried the best salted beef I've ever had, cooked in front of my eyes, in the sense that I watched it cook rather than using my eyes as a heating device. By and large, this minimalist soup I'm not even sure can be called hodgepodge. It had beef trimmings broth, sauerkraut, wieners, and black pepper. Just like that, out of almost nothing a masterpiece was created, which I will probably never forget, just as I will never forget the person who cooked it. Maybe it was only the personality of the chef that influenced the taste of this soup, so dramatically improving it.
I would like to say that I have never once made a hodgepodge of specially purchased several varieties of sausage. I once read in a cooking magazine about how one girl was dragging herself by buying a bunch of different varieties of sausage for a 100g hodgepodge of hodgepodge. My penniless soul resented this approach. Solyanka - only from scraps, everything else - haspyage. But that's just my approach to the issue, and if some of the ladies are crazy about it, then let them do as they please.
So anyway, back to the fact that the first time I read a recipe for hodgepodge a few days ago. Or rather to the reason for which I did read this recipe. I turned to the recipe for this reason. I was literally in the store the other day.
And what do you go to the store for? Of course, first of all for the sausage! And so buying a sausage, I suddenly felt a distinct desire to eat solyanka. Immediately I asked the saleswoman to give me some sausage scraps. And I got my hard-earned money almost half a pound of various scraps of sausages, bacon, necks, carbonates, and other meat-related delicacies. I brought home this almost free luxury and began to think about how I could make a soup out of it, which would not be ashamed to call a hodgepodge.
After rummaging through the cupboards and refrigerators, I found that there were no sauerkraut in the house, but there were pickles. God had also sent me onions, garlic, a jar of tomato paste, a pod of hot peppers, capers, and that was about it. I scratched in the back of my head and decided that it could turn into the soup I was thinking about while buying sausage.
Oh, by the way, I also had some boiled pork broth in the freezer, and I had some frozen beef broth too. So I mixed them one to one. I had a liter and a half of soup base.
Solyanka can be liquid or non-liquid, meat, fish, mushroom, lean and so on, I won't list them all. And just there is some confusion in the name (whether hodgepodge, or selyanka), but this article is dedicated to to the meat dish.
The article begins with my variant of hodgepodge.
*Gotta:*
all kinds of smoked meats
onion
tomato
tomato paste
pickled cucumber
sweet bell pepper
allspice
salt
bay leaf
hot pepper
capers
olives
lemon
I took 5 pickles. Rubbed them on a grater, then fried them in ghee, fried them well, until soft, and threw them into the boiling broth mixture.
Then I chopped up three onions, not the biggest ones, and then I sautéed them in the same melted butter until they were soft. And then I added the fried onions to the salted cucumbers, which were simmering on low heat.
As it begins to brown, add chopped skinless tomato and tomato paste. Fry all together for a couple of minutes. Set aside. Return to the skillet.
In the same place chopped julienne smoked meat. Fry until lightly browned.
In the same place chopped julienne bell peppers.
Put everything in the broth or water. Cook for about five minutes, because we're essentially done. We add the seasoning.
Before turning off, add olives cut into rings and a little capers.
Bring to a boil, turn off. Let it simmer for about 20 minutes. We need to let the flavors to meld.
***And serve with lemon. Great warming soup for fall🍂 and winter❄***!
And then I poured myself a bowl of this thick soup, put a spoonful of sour cream in it, thought about it for a while and threw in another slice of lemon after all.
