At the time of writing, Wednesday, I had much time to draft more articles, yet, after posting my entry to the LoH contest, I was stuck on a blank page and couldn't think of how I would start my new draft. Thoughts were stuck in my synapses again.
In the afternoon, I decided to try something new to lift my mood. When I saw a zucchini in the fridge, I immediately thought of a recipe for it. I saw one online that was zucchini fries, and I did what my mind desired, albeit with no guarantee of success. It was yet another experiment in cooking for me. Cooking is one of the things I want to do whenever I need to lift my mood.
This is just a spoiler of what I will post on FBH this week. Since I also love this platform, I will share it here. The menu is zucchini fries and I cooked them by coating the slices of zucchini with batter (a mixture of flour, egg, butter, olive oil, and Italian herbs). Next was baking them to avoid using too much oil. You can air fry them too to make them crispier. The accompaniment is udon noodles in cherry tomato sauce, also seasoned with Italian herbs. The sauce for fries is also tomato sauce garnished with Italian herbs and sesame seeds. This is ideal for vegetarians, except that I added a little meat to my udon noodles. You can omit it and add crushed tofu instead, which I forgot to buy.

You probably have noticed that my diet recently is consist of more vegetables and fruits and lesser meat. This is getting back to the healthy lifestyle I once had. Along with it is taking supplements to support my joints and muscles, for a better physique. It's almost a month since I've been doing this, and I noticed a little difference.
I feel a little lighter as those food aren't heavy in my stomach. I wasn't sure though about my weight if it decreases, but it wasn't my main purpose. In fact, I want to add more, so I'm taking alternative sources of protein from the food I am taking.
Choosing which food to serve is quite easy for me who's been used to eating vegetables. But maintaining it is the toughest part, especially if there is yummier food around. I am disciplined when I am at home as I can simply cook any kind of food I want, and I can choose which ingredients to add.
However, on holidays, those are the days that I tend to cheat on my diet as I have no choice but to eat anything from the restaurant since I can not cook at home. Although I am allowed to, I just don't want to, as the house owner might think that I am abusing their kindness. I am just grateful for the space given to me to do whatever I want in this house. As if it is my own.
Due to circumstances, some people will find it difficult to stick to a diet or achieve a specific goal. However, with self-discipline, anything is possible. Not just in terms of diet, but also in terms of setting and achieving goals.
So if you want something that will be beneficial to you, do it religiously, not intermittently. Above all, don't just set goals, take action, and make it happen!

I love vege at moderate lang ako sa karne. My mouth salivates whenever I see foodies even in pictures only since am on my way to 2nd trimester. My appetite starts to become normal.
Fruits and vege are my favorite and always wanted to have some in my meals instead of meats, eggs, fried chicken etc.
