Memories, memories...
As we're getting back some lost traditions and customs in our household, one can't help to feel a bit nostalgic about the fact that not all of us can enjoy the return of those happy moments.
For many people Covid has taken their loved ones, in my case it was a mixture of another illness and depression and as a result, we lost our father. However, as I often say, day by day we try to cope with that loss one baby step at a time, even if it still hurts, so when I make Pizza, I always remember my dad and his hilarious quote "When I had my Pizzeria in Naples..."
You see, we have never been a wealthy family, even when I was little, we had many struggles and had to get by with whatever my parents could afford. That being the case, stuff like Pizza was never on the menu, because it was unaffordable, but, as time went by we could get it from time to time. I remember that the first time we made pizza at home came from a box, from a brand called Robin Hood.
Within that box were the flour, yeast, ground oregano, and a can of pizza sauce. All you had to do was mix that flour with the yeast, oil, and water and let it rest, then place it into a baking tray and pour the sauce, the mozzarella, and the toppings of your choosing. That was the first time my dad said: When I had my pizzeria in Naples, to joke about how good the pizza tasted, even though it was pre-fabricated by Robin Hood.
I didn't understand why he always said that he never traveled outside the country and even less had any businesses or anything like that, but as I got older I understood. You see, Pizza is said to be originated in Naples-Italy when the peasants started to flavor their bread with tomato sauce, and on occasion added something else. So as a joke my dad said that in reference to the Origins of Pizza and like saying that he was the master in making them.
After a while, as I was developing my skills in the kitchen we started to make the whole thing at home. I use a simple dough with All-Purpose Flour, instant yeast, Olive Oil (when we have in the cabinet), salt, and water, and I do a double proof, 40 minutes each, to get an elastic texture without kneading it that much. For the sauce a simple but tasty tomato sauce, with a hint of garlic, oregano, basil, and black pepper. and for the toppings, mozzarella, of course, pepperoni is a must, mushrooms and black olives. As time progressed, every time we decided to eat Homemade Pizza, I had to make several trays, veggie, with bell peppers, onions, mushrooms, and olives, only pepperoni, the Venezuelan Classic here which is ham, sweet corn, and bacon, and the one exclusively for my dad which was with anchovies. Those were good times...
Later on, the crisis over our country took us back to the times of hardship, and all those tasty pizzas we used to make were gone. In 2019 a group of friends of the orchestra got together and made some pizzas with cheap ingredients and they send one to my dad. His eyes light up as soon as he saw it and then said "When I had my pizzeria in Naples..." we laughed long and hard.
Two weeks ago, we made pizza again, remember? The one I shared with you in The Blessings we receive from Read.Cash and BCH. That day after we tasted it, mom, sister, and I all said, "When We had our Pizzeria in Naples", remembering my dad and his joyful ways.

I tell you something, when I made pizza first time at home, pizza pizza tastes was so bad π , my brother started vomit after first bite. But Now after many and many preparations I can make a super delicious pizza at home.
