Lipids are organic substances that can be of animal or plant origin. They are recognizable by the fact that they are built from glycerol (alcohol with three -OH groups) and esterified fatty acids. Because most of it is non-polar, it is thus more soluble in non-polar solvents (e.g., alcohol) rather than in water. We basically divide lipids into three groups: simple lipids, compound lipids, and steroids. SIMPLE LIPIDS are lipids based on glycerol, on which three fatty acids are esterified. We divide them into fats and waxes.COMPOUND LIPIDS are lipids that consist of two parts: a hydrophobic (a non-polar part, βafraid of waterβ) and a hydrophilic part (a polar part, βloves waterβ). They are divided into phospholipids and glycolipids.
