Materials
Basmati rice 3 kg, water 12 cups, saffron 6-7 tsp, milk 2 tbsp, ghee 200 gm, cashew nuts 150 gm, raisins 50 gm, hot spices 2 tbsp, nutmeg one pinch, jayitri one pinch, hot spice powder half Spoon, a few drops of keora water, a few drops of rose water, 100 grams of sugar, salt to taste, to decorate rose petals.
Method
First soak the basmati rice in water. After a while, wash the rice well and drain the water. Soak saffron in warm milk. Now heat ghee in a pan and add rice.
When the rice is slightly fried, add cardamom, cloves, cinnamon, a little salt and sugar. Now cover it by stirring it well with the same amount of water. When the rice is boiled and the water is dry, take it down.
Heat ghee in a pan and shake the almonds lightly. At the same time with raisins, nutmeg, jayitri. Now mix the spiced almonds, keora water, rose water and hot spice powder in the polao.
Mix the saffron soaked in milk in a pot of polao, cover it and shake it well once. Sprinkle rose petals on top and serve hot with sweet polao.
