How to make the classic Lazy Dumplings with Cheese Cheese? Prepare the products. Cottage cheese is suitable for any fat content, but the most delicious dumplings will turn out of fat, country cottage cheese. The amount of flour is approximate, may go both more and less, it depends on the moisture content of cottage cheese.
We prepare the dough for the dumplings that will not boil when boiled. Take a bowl, put the cottage cheese in it. Rub it through a sieve is not necessary, even if it is gritty. After all, it's lazy dumplings. Everything is done quickly and easily. Break the egg into the cottage cheese, add salt and sugar.
Mix the cottage cheese and egg until smooth.
Start adding flour a spoonful at a time, mixing after each batch. The dough should eventually become thick and come together in the center of the bowl. But do not overdo it, do not make it too steep - the dumplings will turn out floury, not cottage cheese. I had cottage cheese with 5% fat content and it took exactly three full and spoonfuls of flour. If your cottage cheese is very wet, put more.
Sprinkle flour on a table or work surface. Take a small portion of the dough. Dip it in flour and roll it into the shape of a long sausage 2-3 cm wide.

Cut the sausage into strips about 1 cm wide. I always cut it a little askew to make rhombuses.

This is how my mom used to do it, and she got it from kindergarten. Transfer the finished batch of dumplings to a board sprinkled with flour. Make the rest of the dumplings from all the dough in the same way.
Boil water in a small saucepan or saucepan, salt it. Throw in water a portion of dumplings. Do not throw them all at once - they will be crowded to boil and they will stick together. Stir, so that the dumplings do not stick to the bottom. Cook the dumplings for a minute after they have floated. Do not boil them any longer, they can fall apart.
Use a slotted skimmer to remove the dumplings to a plate.

Immediately throw in the next batch and cook it in the same way. Serve the dumplings hot, with butter or sour cream. They are very slightly sweet, you can serve them with condensed milk or jam. I like to sprinkle sugar on top of dumplings.

Without false modesty, I will say that I know how to make lazy dumplings. I make them for a long time and all the time. With experience came how much flour to put, so they do not fall apart and do not become stiff. I'm sure you can do it too!
