Potato contains varius vitamins in addition to phosphorus, sulphur, magnesium, chlorine, silica, sodium, iron and it is one of the most alkaline of all vegetables due to its rich content of potassium.
Professor Hindhede of Denmark,a noted diet specialist advised that baked or steamed potatoes eaten freely with green vegetables and fruits would cure rheumatism and gout.
It is a powerful solvent of uric acid and other bodily acids accdg to Dr Alexander Haig.
Potato should be steamed or boiled on its jacket to get the most nutrients out of it,as peeled potatos lose of their food value in the water in which they have been boiled,according to dieticians.
