Simple explain what is cracklings is well-fried pork or chicken meat.
In my country you can find a lot of variety of pork cracklings because we use a lot pork meet in our diet. Crackling is produce in a big cauldrons when we melt pork fat
in processing pork, and it is tradition during November. But if we wish to have some all over the year and don't wanna by in store we can simple produce at home.
For pork crackling we need a pork meet with a lot of fat, minimum ratio meet - fat must be 50 - 50 or more fat. What you need to do, simply you chop pork in small cubes 1 x 1 inch max, put in metal pot with cover, and add a little water and covered pot put in oven on 200 Celsius - 390 Fahrenheit. Check and mix after 30 min and continue until you got a nice golden pieces in a lot of melted fat. When they done just take out from fat add some salt (also you can add pepper and other season) and enjoy :)
For chicken crackling you need chicken back. Put a 5-6 pieces of whole chicken back in pot with cover (without adding anything) and put in oven on 200 Celsius - 390 Fahrenheit. After 40 min check do you can take meat from bones and if you can take out and let them cold. You notice that you have a lot of liquid in your pot, don't throw away this, save for next step. When meet is enough cold you simple take as many you can meat from bones and put back in pot with all liquid and put back in oven. After some time you notice how meet became golden and then you must stir multiple time until you got crackling.
