ingredients
4 pcs semi-permanent smoked sausage
300 g smoked meat bacon
A can (800 g) of brown beans
2 pcs onion yellow 6 cloves garlic
2 pcs red pepper 2 pcs carrots 50-100 g of celery root
1 tablespoon of tomato concentrate
2 teaspoons sweet ground pepper
1 teaspoon smoked ground pepper
1 teaspoon thyme 1/2 teaspoon hot ground pepper
1/2 teaspoon cayenne pepper
1 teaspoon thyme
1-2 teaspoons freshly ground pepper a little salt (for onions)
1-2 teaspoons chopped parsley leaf
4-5 tablespoons oil (to cover the bottom of the paddle)
0.2 l red wine (Cabernet)
1 vegetable cube
Preparation
1. Peel a squash, grate it and cut it into small cubes.
2. Slice the sausages
3. Peel the peppers (wash and cut into cubes / strips)
4. Peel a carrot and celery (wash) and grate them
5. Cut the onion into ribs and chop the garlic (or press)
6. Chop the parsley and vegetable cube
7. Boil the vegetable cube in 1/2 liter of water and stir on the side
8. Put oil (to cover the bottom) in a large paddle and put it on the fire
9. When the oil heats up, add the sausages and fry (stirring) for about 10 minutes (to bake the sausages). Remove the fried sausage from the pan and cover (not to cool)
10. Put chopped hamburger skin on the same oil (from which we took out the sausages) and "fry" for a few minutes and add the onion (lightly salt it)
11. When the onion starts to release its "juice" scrape off the bottom of what is left of the sausage fry
12. "insert" the chopped bacon (sprinkle with a teaspoon of sweet pepper) and continue to fry for another 10 minutes
13. In the pan, "insert" first the peppers (cut into cubes / strips) and after a few minutes the carrots and celery (grated)
14. Continue to fry and if it remains "dry" add a little liquid from the can of beans
15. All together, this "frying of vegetables" lasted for 10-15 minutes, after which I "added" garlic, stirred and when it was simmering (and that was almost immediately), I returned the fried sausages (with the juice they released) to the paddle.
16. Drizzle the contents with a little wine (I covered it as it "disappeared" on 3 occasions with a total of about 0.2 l of wine)
17. When the wine evaporates, add those 0.5 l of in which we dissolved the vegetable cube and tomato concentrate (stir)
18. Add spices (cayenne pepper, hot pepper, freshly ground pepper, thyme .... if desired) but not parsley
19. Cover and cook on low heat for about 30 minutes (stirring occasionally)
20. After about 30 minutes, add the beans from the can (with the "thick liquid from the bottom of the can") to the paddle. Cook for another 10 minutes, then add a teaspoon of sweet (or even better smoked) peppers and chopped parsley. Boil for a few more minutes and remove from the heat.
