Santan Cafe burnt cheesecake

After my lunch at the Mid Valley Megamall, I visit Santan Cafe to have some dessert. It is opened by AirAsia Berhad, a Malaysian multinational low-cost airline company. 

After looking at the chiller, I ordered a slice of burnt cheesecake which cost RM12.70.

Burnt cheesecake is actually Basque cheesecake.

Basque are members of a people who live in both Spain and France in areas bordering the Bay of Biscay and encompassing the western foothills of the Pyrenees Mountains. The origin of this way of preparing this cheesecake is from Spain.

The Basque cheesecake has no separate crust but, rather, develops its crust through hard, high-temperature baking. It is characterized by a burnt, scorched top that conceals a soft, gooey filling of cream cheese, sugar, eggs, and cream which oozes like molten lava when cut.
