Good afternoon Noise, Friday! And tonight I'm going to cook something the kids have been longing for all week, Smashburgers. I keep it simple, ground beef, salt, black pepper and a little Worcester sauce. A slice of cheddar cheese, ketchup and raw onions, no more is needed. Tonight's beer comes from the UK and the brewery Track Brewing. Beyond The Frame, IPA 6.5%. Surprisingly good! Fruity, hop-aromatic taste with clear bitterness, papaya, pine resin, and citrus. #Food #Beer

Double smash burger with cheddar and a lot of red onion. When I make smash burgers for the whole family, I fry meats to 90-95% and then fry them again, completely ready with cheddar cheese. Since it's Friday, I make a roasted garlic mayonnaise that is made from a whole roasted garlic, mayonnaise, cream fraiche, salt, pepper and a splash of lemon. #Food

Coq au vin, the French classic chicken stew. Usually red wine is used, but today I will test with a French white wine from the eastern part of France, Bourgogne. Marinate chicken thigh fillet with olive oil and garlic, 2-3 hours. Then the meat will be fried with chopped pork loin, shallots, carrots, chicken stock, fresh thyme, a real splash of white wine and cream. Maybe a lucky shot, but the more you cook with wine .. The more you understand the complexity. Tonight I cooked Coq au vin (Blanc, white wine). A fantastic meal, top 3 according to my wife, and yes ... I have cooked a lot during our 17 year old marriage 😄 Topped with crispy oyster mushroom that I fried with the fat from the pork loin. Piadina is an Italian bread baked on olive oil. Much like a tortilla, but with more oil and fresh chopped garlic. For this, I marinate chicken thigh fillet in pesto and fry it crispy, really good! Then serve the bread with chicken, cherry tomatoes, sun-dried tomatoes, mozzarella, red onion and basil. Italian street food, delicious! #Food

Saturday, my favorite day! All afternoon in the kitchen, cook without everyday stress and really let the food take its time.
