Maybe a lucky shot, but the more you cook with wine .. The more you understand the complexity. Tonight I cooked Coq au vin (Blanc, white wine). A fantastic meal, top 3 according to my wife, and yes ... I have cooked a lot during our 17 year old marriage 😄 Topped with crispy oyster mushroom that I fried with the fat from the pork loin.
