At 7 pm Venezuela time we made a video call to our son who is in Spain and we received the year in Spain at that time, we were talking for a while and toasting. At home we were listening to music and talking until 12 o'clock, to give each other the respective happy new year, hugs, kisses and go out to greet the neighbors. Before leaving home, we had another video call with our son who was awake until this time to call us and tell us happy new year. We were with the neighbors in front, dancing, toasting until 3 am, we went to bed until 10 am. The days before we had bought vegetables and meats to make a soup and invited my sister-in-law and her children and grandchildren. After breakfast, we started to peel and cut the vegetables, we played music, we were celebrating with rum and pepsi. At about 1 pm the guests arrived, we were chatting and drinking some liquor, while the soup was being made, lunch was ready at about 2 pm. After lunch we had a game of dominoes, the one who lost stopped to wait for another team to lose to play again. It was a lot of fun, the kids were also playing until they fell asleep, their parents did not want to go and leave them at home, until we convinced them and they left, when we got to their case we had to tell them to come back, since the kids had woken up. At about 5 pm coffee and chocolate cake from the day before was served. After dinner, which we had at about 8 pm, guess what was for dinner .... Hallacas, of course there are still a few hallacas left, we have to finish that as soon as possible. In the afternoon I started making the ham bread at 3 pm, I expected to finish in less time, but it took me 4 hours to make it, but it was very good, as long as I follow the same instructions it will be fine, hehe. My wife prepared the chicken salad, we made ourselves some drinks (rum and lime and pepsi) in the meantime. Today we had to buy the missing ingredients for the preparation of the traditional Christmas dish, the popular Hallaca. Early in the morning, not so early because I always get up late, hehe... we went to the market to buy mainly banana leaves, the other ingredients were already bought, peppers, paprika, garlic, chives, onion, pork and beef. **These are my wonderful Sponsors, I invite you to review their articles, they are very good and fascinating, I am sure you will like them.** A few years ago we dedicated the whole family to cut meats and vegetables, but now we are few, my eldest son lives in Spain, my daughter is in Puerto La Cruz, a few hours from Cumaná but she comes for the end of the year, we are few people, however we make our Christmas dish, My sister-in-law who lives nearby, also prepares her Christmas dish and then we get together in one of the houses to share, everyone brings hallacas, ham bread, Christmas cake, pork leg (this year is discarded, the money was not enough), among others. For yesterday night we cut the meat into cubes, we bought 2.5 kg of beef and 1.5 kg of pork to prepare 4 kg of meat in total, the rest of the ingredients we cut into very small cubes (Brunoise), onion, peppers and paprika, garlic, chives, peel the garlic and keep in the fridge, that took us about four hours because we forgot to take the meats out of the fridge and they were frozen, we had Christmas music and a rum to pass the moment, we made a mixture of raisins with rum and let it macerate for a few hours so that the raisins would hydrate, then we removed the raisins and drink a toast with the raisin liqueur, haha, it was delicious. We finished at about 2:30 am and stored everything in the fridge. Today when I got up and went to the kitchen, I found that the stew for the hallacas was ready, I missed the preparation, so I owe them, after returning from the market we arranged the banana leaves, washed them and cut them into squares of about 30 cm x 30 cm. The corn flour dough was prepared, in the afternoon after lunch we dedicated ourselves to make the hallacas. Take 2 banana leaves, grease them with oil containing onoto (achiote, caituco), take a ball of dough, make a circle with your fingers, fill it with the meat stew, add whole olives, raisins, a slice of potato, a slice of boiled egg and capers. Then it is folded to the sides until it is all covered, making a rectangle, then it is covered with a square of banana leaf, it is turned over and covered again with another banana leaf, it is tied very well with thread. In a separate pot boil water with salt and add some chopped banana leaves, when the water is boiling place the hallacas for 15 minutes. Then remove them and let them cool, you can eat them immediately if you like, but it is better if you let them rest completely, keep them in the refrigerator and the next day you boil water again and immerse them for 5 to 10 minutes, this way the flavor is superior to the previous day. For the first preparation that took us all afternoon, 50 hallacas came out, the amount of meat stew that was left is enough to make about 20 hallacas more, but we leave that for the 27th or 28th, it depends if we still have hallacas, because there is no other food, whoever wants to eat that hot hallaca and do it, accompany it with bread, hahaha.... The schools participate from preschool to agricultural technical schools, they elaborate products such as: cakes, creole sweets, hallacas, breads, cassava, fermented beverages, wines, chicha, handicrafts, plants, presentation of folkloric dances, songs and Christmas parrandas. Each school is given a space to exhibit their products. This activity only takes place in Sucre State, there is great enthusiasm among the people, the schools prepare groups of children to sing, recite and folkloric dances. It is a pleasant meeting between teachers, professors and students from different institutions, the joy is mixed with the songs throughout the tour. In the past, schools from other localities participated in the event, and the items produced by each school were marketed and shared, and pedagogical experiences were exchanged among teachers. A few years ago my wife worked at the Cumanagotos Agricultural Technical School, located in the Las Manoas sector of the Ribero municipality, approximately 1:30 hours from Cumaná. She was in charge of the Agricultural Sciences department, where pigs, sheep, broiler chickens, quails, rabbits, beef cattle, chives, parsley, peppers, eggplant and worm farming were grown. The participation of this school in the fair, was presented mainly with the sale of pork at a very low price, absolutely everything was sold, this was one of the most sought after items by the community, I had secured a pork leg of at least 7 kg, about 2 kg of ribs and freshly harvested vegetables. After my wife moved to a closer school, whenever the fair arrived, the workers of the Cumanagotos Agricultural Technical School, who were in charge of selling the meat, always kept our respective pernil for us, it was a safe purchase. Due to the pandemic these schools stopped participating, now they only participate with the schools that are in the city. At present my wife works at the Fishing Technical School, located in the city of Cumaná. At the moment she is in charge of the Bolivarian Center for Informatics and Telematics (CBIT), the Fishing Technical School has also participated in this fair since its beginnings, this school has two mentions: Food Techniques and Fishing Technology, where students are taught the elaboration of fishing gear, manufacture of nets, longlines, pots, among others, the study of nautical charts, in food technology: conservation of fruits, vegetables, fish. In this school they have the equipment for the canning of any type of food, be it fish or vegetables, the aluminum cans were obtained from donations from the canning companies in the area, previously the Ministry of Education provided them with the raw material to make the canned food. They also had equipment for the production of bread, kneading machines and ovens. Unfortunately much of this equipment has deteriorated and has fallen into disuse, for some years now they have not been making canned goods and the kneading for the breads is manual, they also have a carpentry workshop that is still in operation.
