Cold Noodle Salad
Here is a recipe for a cold noodle salad:
Ingredients:
8 ounces thin noodles (such as vermicelli, soba, or rice noodles)
1 cup shredded carrots
1 cup diced cucumber
1 cup diced bell peppers
1 cup diced red cabbage
1/2 cup chopped fresh cilantro
1/2 cup chopped fresh mint
1/4 cup chopped peanuts (optional)
For the dressing:
1/4 cup peanut butter
2 tablespoons soy sauce
2 tablespoons honey
1 tablespoon rice vinegar
1 clove garlic, minced
1 teaspoon sesame oil
1/4 teaspoon red pepper flakes (optional)
Instructions:
Cook the noodles according to the package instructions. Rinse with cold water and drain well.
In a large bowl, combine the noodles, carrots, cucumber, bell peppers, red cabbage, cilantro, and mint. Toss to mix.
In a small bowl, whisk together the peanut butter, soy sauce, honey, rice vinegar, garlic, sesame oil, and red pepper flakes (if using).
Pour the dressing over the noodle mixture and toss to coat.
Sprinkle with chopped peanuts (if using) and serve chilled or at room temperature. Enjoy!
Note: You can customize this salad by adding other vegetables or proteins of your choice, such as diced avocado, chopped scallions, or shredded chicken.
