Good day guys!
Let me show you how one of my colleagues prepared this dish called Bicol Express. This dish is cooked in coconut milk with Bagoong(Shrimp paste) and Chilies. Bicol is a region in the Philippines and they are known for their spicy dishes.
Here were the ingredients that he used
1 kilo of pork
Onions, Garlic and Tomatoes
Bagoong(Shrimp Paste)
Coconut Milk
Siling Haba(long green pepper)
Siling Labuyo (bird’s eye chili)
Beans
Salt and pepper.
Here are the Instruction on making this dish
Slice the meat into s]trips
Boil the pork until it softens.
Chop the onions, garlic, tomatoes, beans and chili
Remove the water and then let the pork render some fat while stirring.
Add the onions, garlic and tomatoes while stirring.
Add 2 cups of coconut milk
Add the shrimp paste
Add the beans and let it cook, add salt and pepper for taste and then stir
Here's the finished product. We ate this with steamed rice. It was creamy, spicy and delicious.
The flavors were really rich.
