Festive Food to feel the Vibe!
Gajorer Halua or Gajjar Ka Halwa is one of the popular desserts in South East Asia. In Bangladesh, during winter, it's a must-try dish. The process is very simple but the taste is incredible.
Every winter I prepare this dessert and it can be preserved in the fridge for up to 15 days. We enjoy it with our breakfast or after dinner. Every time it fits well and blessed our appetite.
Let me show you how did I make this dish.
But before that, I'm gonna give you a quick list of the ingredients so you can easily follow this recipe.
Carrot 300 gm.
Sugar as per taste
Melted butter/butter oil/Ghee
Cardamon, cinnamon, bay leaves, cloves (1 or two pieces)
Milk
Coconut flecks (optional)
Crashed Pistachio or cashew nuts
saffron color (optional)
That's it. You can skip some spices or ingredients as I mentioned they are optional. Because if you put carrot with just milk and sugar, it tastes good. Adding all the ingredients will make the dish more flavourful for sure.
So let's see the process.
Boil the carrots and mash them properly. I cut off the center of the carrots as they taste a little bitter. You can do it too or add the whole carrots, as you want.
One cup of fatty milk and fresh coconut flecks. I also took some leftover desserts made out with cheese curds and lots of nuts inside. And add one cup of sugar or as per your taste.
Now add the milk with the carrot mashed. Add the spices and stir/cook them for five minutes.
When it becomes sticky, add the coconut flecks and nuts.
I added some saffron color to make it look more vibrating. But it's optional.
It doesn't take long to mix everything together. The carrots are pre-boiled so stirring them will only take 5-7 minutes.
Just before turning off the heat add one spoon full of butter oil. This small step makes this dish so much flavourful!
You can plate them like this, or give them any shape you want, or cut them in cubes.
Also, adding some milk powder/condensed milk will change the consistency. Add them as per your purpose. People like to add raisins, fresh fruits too. You can experiment with this dish, add ingredients as you like them. Don't worry if you skip one of two optional ingredients or add anything extra. This dish is flexible and it's okay to come up with new ideas.
