Sorbetes refer to a specific tyoe of ice cream unique to the philippines. For me, these ice cream pushcarts are as iconic a symbol of pinoy culture as like jeepneys. They even look like them with their many colors, patterns and fancy lettering
It was made traditionally with carabao's milk which is cheaper than the cow's milk. Todays both types of milks are used along with other unique ingredients like coconut milk, and cassava flour. Popular sorbetes flavors are include mango, strawberry, buko, ube , chocolate and my favorite cheese.
These days, you'll find commercial ice cream churning out of a line of sorbetes flavors in honor of this iconoc street food. Sorbetes is also known colloquially as "dirty ice cream" , likely in reference to the fact that it sold on the streets. But the ice cream itself isn't actually dirty.
