For years, there was concern in the population suffering from this disease, due to the intake of pasta within the diet. There were diabetics who did not control the rations favorably, this being detrimental to their organism.
It should be noted that the pasta is made of flour, and it is it that provides carbohydrates in a greater or lesser proportion. Years ago it was a prohibited food along with bread, potatoes ... for those with diabetes.
This has been changing with the advances given in medicine regarding nutrition. Now this food is included in the diet.
It is there that the nutritionist doctor should give the patient suggestions on how to eat this food and the necessary serving amounts per day. Pasta is highly sought after by most people, as is meat to consume in their diet.
These habits have been transmitted from tradition to tradition in many families worldwide, generating today an increase in variety and the different ways of preparing pasta. Its various presentations are used to make dishes with the incorporation of vegetables, either in their natural form or cooked, thus managing to balance the volume of carbohydrates.
The use of wholemeal flours contributes to the increase in fiber, which favors the carbohydrates to be digested slowly, and in turn prevents blood glucose increases. There are also pastes that contain gluten in their composition to balance the levels of carbohydrates in the diet.
In conclusion, I consider that diabetics must take care of their diet, eat small portions of those foods that raise their values, and add vegetables to their dishes to balance, this way they will have the necessary calories per day.
