Homemade "Tom Yum" Soup with Chicken and Rice - Flavors of Asia - yum, yum, yum
I ate Tom Yum soup for the first time during my Asian travels at the airport in Kuala Lumpur. There is a so-called food garden, where you can taste the flavors of Asia. While traveling around Asia, I have eaten Tom Yum soup ten times, even in Africa I have tried it. It tasted different everywhere, but it was always good. The flavors that dominated these soups were ginger, coriander, hot pepper, sour tomato, lemongrass, coconut milk, soy sauce - these are the basis for a good soup. Depending on your preference, the soup was completed with shrimps, calamari or chicken meat.
Ingredients
0.2 kg of chicken breast, a few large mushrooms, two tomatoes, one onion, a few cloves of garlic, kaffir, lemon juice, lemongrass, Tom Yum paste, coconut paste, green coriander, ginger, turmeric, galangal, olive oil or oil vegetable, salt, pepper, hot ground paprika.
Preparation soup
Thoroughly wash the chicken breasts and cut into thick cubes, peel the onion and dice it into small cubes, chop the peeled garlic finely. Also peel the mushrooms and cut them into small pieces.
Scald the fresh tomatoes with boiling water, peel them and cut them into thick cubes.
Put chicken pieces on the oil heated in a frying pan and fry for a few minutes on all sides. Then add the diced onion and garlic and fry for a few minutes as well.
Finally, add the chopped tomatoes and mushrooms and fry briefly until they are firm.
We are preparing the Tom Yum stock. Pour 600 ml of water into a pot, bring to a boil and add Tom Yum paste.
Add the previously prepared meat with mushrooms and vegetables to the stock made from Tom Yum paste. Add kafir, a little ginger, hot pepper, possibly lemongrass, soy sauce, ground pepper and cook it for about 3 minutes. Tom Yum soup is ready.
Way of giving
The soup can be served with fresh white bread or rice. I prefer it with loose-cooked rice, because it introduces me to the atmosphere of Asian travels.
