What is Muscovado and What Does it offer?
Muscovado sugar is known as a healthier option as a sweetener because of it’s pure, whole, unrefined, and a non-centrifugal cane sugar that retains all the natural water, minerals and vitamins of sugarcane. It is a high natural energy food source that quickly replaces lost vigor. Muscovado is also known as poor man’s sugar because of its traditional way of processing. It is produced without needing to add any ingredients or chemicals. The muscovado sugar is produced by boiling the cane juice until it reaches a certain viscosity and letting it dry to produce a powdered form with the distinctive aroma and flavor of the sugarcane. In every production of muscovado sugar, the color ranges from golden yellow to dark brown and the formation of muscovado rocks which are hard and pellets in size are always present (PNS/BAFPS 144:2015).
There are four types of muscovado produced in the Philippines which are class A (golden brown), B (brown), C (wood brown) and panocha. Unrefined sugar is darker in color than refined sugar because it contains what sugar producers call impurities – which are essential minerals such as calcium, potassium, magnesium, copper, iron, small amounts of fluorine and selenium. Unlike brown and white (refined) sugar, muscovado retains the molasses in the final product and thus, giving it its unique flavor and aroma. Since the molasses contains vitamins and minerals, the "crude" process by which muscovado is produced ensures its higher nutritive value compared to refined sugar (Baroña, 2003).
Refined white sugar is almost totally void of these healthy bio-chemicals therefore, consumer interest in healthy and organic foods has revived awareness of the health benefits in muscovado sugar.
