FOODlog #15: Japanese Curry Pork Belly & Stir Fry Pumpkin

Super delicious dinner tonight. Mum cooked today so it was a fairly relaxing day. She cooked 2 dishes today.

- Japanese curry pork belly with carrots and potatoes

- Pumpkin with spring onions

The Japanese curry was so delicious it's a premix block of curry that you need to desolve in water but it isn't as easy at throwing everything in a cooking it.

The onions need to be cooked with some oil and stir fried for a few minutes. Then the pork belly that's cut into cubes goes in a fried for a few minutes and then the curry paste goes in. After it melts and coats the pork belly and cooked for another several minutes then water is added. The water needs to be added gradually and then after a few rounds, carrots and potatoes goes in and stewed for another 15 minutes.

The pumpkin is cut into cubes and cooked stir fried with garlic then seasoned with salt before the spring onions go in at the end. It takes about 10-15 minutes for the pumpkin to soften. If you like it with a little more bite you can reduce the cooking time and if you want it to be softer, you can cook it slightly longer.

We ate these 2 dishes with steamed white rice. Super super delicious and satisfying!
