I have tried this Jelly Flan Recipe multiple times now. It has been requested a lot by family and friends. Jelly Flan is not so sweet compared to the usual Leche Flan and it has the firmness of the gulaman. This is very easy to make.

First, you have to make the caramel syrup.

  • Put 2 tbsp of sugar in your mold.

  • Caramelize in low heat until color turns to golden brown.

Flan Mixture

  • 4 whole eggs

  • 1 can of 370 ml evaporated milk

  • 1 can of 300 ml condensed milk

  • 1 pouch of all purpose cream

  • 1 tsp vanilla

Procedure

  1. Break the whole eggs and whisk it to get a good mixture.

  2. Mix the evaporated milk, condensed milk, all purpose cream and the vanilla flavor to the whisked eggs.

  3. Strain to remove egg lumps and impurities.

  4. Set Aside.

Jelly Ingredients

  • 4 cups of water

  • 1 pack of unflavored gelatin powder (any color you prefer will do)

  • 1/2 cup of sugar

Procedure

  1. Mix all the ingredients and put it to a boil.

  2. Once boiling temperature has reached, turn off the heat.

  3. Slowly pour Flan Mixture while continuously stirring to avoid the egg from curdling, in case you don't want to have an omelet as a result.

  4. After pouring the mixture, turn back the heat to medium and let it simmer.

  5. Transfer the mixture to the prepared molds with caramelized sugar.

  6. Let it cool to make it completely firm, then serve.

The whole part of that, except the caramelized sugar hehehe making a jelly flan makes me think its so hard to make

Oh, as long as you have the leche flan molder or llanera, you can just put the 2 tbsp of sugar and put it on top of a fire, the sugar will melt and will form a syrup. Wait for it to be golden brown. Watch for the burnt part, you have to tilt the molder side to side to avoid getting burnt caramel which tastes bitter. If you find this hard. You can just use a frying pan. Put 1 cup of sugar and 1/2 cup of water, wait for it to boil. Once boil, swirl the pan in circular motion to evenly caramelize it and avoid burnts. Dont use a ladle
