The author of the cracker test is geneticist and doctor of medicine Sharon Moalem. According to him, this is the easiest way to find out how well your body digests carbohydrates, and accordingly, how much and at what speed you should eat, depending on your genetics.
All you need is an unsalted cracker and a stopwatch.
Before you start, try to fill your mouth with as much saliva as possible. Then take a cracker, record the time and start chewing it. Chew until the cracker changes taste and becomes sweet. Pay attention to time. If the taste of the crackers has not changed after 30 seconds from the start of chewing, then stop the test.
The time from the beginning of chewing to the moment when the taste has changed speaks about the speed of your metabolism:
0–14 seconds - complete
15-30 seconds - moderate;
more than 30 seconds - limited.
What do these results mean and why has the taste changed?
The scientist explains that digestion begins long before food reaches the stomach. Our saliva contains the enzyme amylase, which breaks down complex starch molecules into simple sugars (which is why the taste of crackers changes to sweet). In some people, the concentration of amylase is up to 50 times higher than the average, while others do not have it.
The results primarily indicate a high concentration of amylase in the mouth. A person who has such indicators can eat multiple norms (more than 130 grams of carbohydrates per day) and not gain weight.
A result of 30 seconds or more indicates a low concentration of amylase, which means that you should refrain from carbohydrates (adhere to the norm), otherwise there will inevitably be an unnecessary increase in body weight.
