One of my tribe main dish.( Ekpang nkukwo)
So many tribes have a particular dish or dishes / meals that are the head of all meals, especially when you go to parties,the tribe of the people celebrating will determine what the dishes will be.
As you all know I am from the south-south region of Nigeria,and I take pride in my cooking abilities,let's say I make good dishes,so for we akwaibom's we have alot of dish that represents us wherever we go for celebration, or whenever we have something to celebrate, there's a list of dishes
Afang soup,Atama soup, Editan soup ,Afia afere, ekpangnkukwo, otum mboro, etc. Let's me stop here, see the thing is gave alot, but today I will be writing about the EKPANGNKUKWO.
EKPANGNKUKWO is a dish made from wateryam and cocoyam, shortly I will be giving the ingredients and recipe. This dish is so nutritious in vitamins , carbohydrates ( for strength), I would say it contains alot of nutrients for the body, one thing about this dish is when you have had one bite of it , you would always want more .
So EKPANGNKUKWO is made with
Wateryam
Cocoyam
Periwinkle
Scent leaf
Pumpkin leaf / the fresh leaf just growing from a cocoyam plant.
Crayfish
Stockfis
Palmoil
Seasoning
Dryfish
Cowskin/any other protein of your choice
Salt to taste
Onion.
1.So the first step is to peel and wash your wateryam and cocoyam, then you take a grater and grate them together , after grating , to the yam mixture You chopp some onion to it,add seasoning,salt,pepper,and mix well
2.In a pot add the palmoil first and some onion, then the washed periwinkles.
3 then you take either the pumpkin leaf or the soft cocoyam plant that You have already washed and start wrapping the yam mixture in the leaf . Like this.
And carefully place them in the pot, you then add another palmoil, seasoning that would be enough for the cooking your dryfish,stockfish that Hass been a little steamed,etc. But don't add the scent leaf yet so as to not kill the nutrient of it.
4 then placed in the gas or whatever you use for cooking , then add hot water or already hot beef broth to the pot,
5 cover and let it cook well, though it might start burning quickly ,but make sure it is properly cooked, so you can always check when you see the steal coming from the pot , then finally add the scent leaf to give it good flavour.
And tada it's done. You see this dish ,many count it as a stressful cooking cos if the time it takes to cook.
I remember last year I was having a craving of this meal while I was pregnant with my daughter, and because I was the only one who was willing to go through the stress I started perping the meal at 6pm and it was finally done around 10pm , that day I can never forget, but you know I ate to my satisfaction.
There's no akwaibom gathering that you go to ,that they wouldn't serve thus meal.it has alot of nutritional benefits and it filling too.
