One of The Most Unique Filipino Foods
Every country across the world has their own delicacy and way of eating the food they love. We Filipinos love to share gratitude and appreciation through the foods we cook. We love to eat together and we always have a sense of camaraderie at the table. Everytime we eat, we always invite someone to join with us. This is how the foods shaped our nationality.
Lechon
One of the most appealing foods to our eyes is the Lechon. It makes our belly sound and it makes our mouth watery. Lechon is a pig spit and roasted over the coals, once it will attain the crisp and golden brown skin it is already ready to be served on the table. Inside the stomach of Lechon are spices of pepper, spring onions, lemongrass and many more which makes it very tasty. We prepare it on special occasions. Lechon is also one of the influenced we got from the Spaniard colonizers.
Dinuguan
While it might be peculiar to hear about this food, it is a common unique food in Philippines. It is a combination of pork or chicken intestines, liver and other organs. The main ingredient in cooking this is the "pig's blood." The word Dinuguan comes from the word dugo which means blood. There is actually an issue about this food, since the Philippines is a Catholic country, other people opposed eating a pig's blood but since we are a free Christians, it doesn't seem forbidden to us. Dinuguan is one of the tastier food served in the Philippines.
Balut
Balut is a fertilized duck eggs with developing embryo. It takes 14-21 days to incubate the embryo and during that time the eyes will develop and sometimes a beak or feathers will already come out. It is one of the most favorite street food in the Philippines and the people like to sip the juices of the embryo egg.
Kinilaw
Kinilaw is a raw seafood in Philippines. The fish is eaten "raw" mixed with vinegars and other few spices to add taste. It is one of the most favorite foods by the Filipino and even the fish is eaten raw, there are no health problems reported.
Isaw
Isaw is one of the most popular street food in the Philippines. It is a chicken intestine grilled on sticks. Before the intestines are grilled, they have been cleaned to remove contents and eliminate pathogens. The food is usually dipped in the vinegar to make it even more tasty.
Dagang Bukid
The Dagang Bukid also known as field rat is one of the unique food found in Philippines. They are not a typical rat because they are rats found from the farm eating rice plantation. According to the people who have eaten rat, it taste like a chicken and it's also delicious. If somebody will serve you a home cooked field rat, you won't know it's a rat because you would assume that it's a chicken.
Salawaki
Salawaki are fresh sea urchins. It is a seafood eaten raw in Philippines paired with condiments such as vinegar or soy sauce. You don't have to cook this seafood and all you have to do is to crack the shell open and you are ready to devour it inside your mouth.
Just like the other countries, Philippines also has a unique and cultural way of eating foods. The people find foods based on the accessibility, availability including the norms. While most of the foods mentioned above are unhealthy with high fats, sugars and cholesterol, it doesn't hinder the love of every Filipinos in eating those foods. It is what our ancestors have passed down throughout the generations. I don't think I can ever try Balut. I feel so bad for the little ducks 😔😢😔. I can still try the Isaw. I've heard a lot about Lechon or pig as we call it here. I was told it's so delicious but I've never tried it before.
