Palm wine is a sweet, tasty drink that is gotten from the sap of various species of palm tree such as the Palmyra, date palms and coconut palms. It is one of the most popular drink in the world. Oil palms all produce the sugary liquid that turns into palm wine. Fans describe palm wines taste as milky and powerful sweet, growing more sour and yeasty with time but unlike a Merlot, the taste changes in minutes rather than years. Palm wine has very high alcohol by volume at 40 to 45% above. It is an alcoholic beverages produced from the fermentation of sap of different palm species. Palm wine contains potassium which has been proven by research to improve heart health and reduce hypertension. It can help fight cancer, it contains vitamin B2, it also known as riboflavin. Riboflavin helps in the fight against free radicals.

How to make palm wine.

The person that tap palm wine is called palm wine tapper. They climb insanely tall palm trees, balancing support ropes on their waist. Once at the tree's crown, they insert a tube which slowly bring the sap out into a keg or calabash that's secured tightly against the tree. A clean gourd is tied around the tree to collect the sap,which runs into it. After about half a day, the palm wine tapper returns to collect the sap. It takes only two hours for the palm sap to become palm wine.

What palm wine is called in Nigeria.

The drink is called different names among different people of Nigeria. It is known as emu or oguno among the yoruba's, utok among the Anang people of the South South, mmanya ngwo, nkwu enu or mmanya ocha in Igbo and gya in Hausa. Palm wine tapping is a profession on its town in villages.

A gallon of unadulterated palm wine is sold for $5 in th village and go for as much as $9 to $10 in the city. That means 10 gallons of palm wine a day could fetch you between $40 to $65 daily depending on where you sold it.

How to preserve fresh palm wine.

A preservation method of palm wine has been perfected locally, it involves pasteurizing and bottling of the palm wine, which increases its shell life to over six months. The preservation and bottling of the palm wine is achieved by arresting the activities of yeast, thus stopping the fermentation of the product. To control the level of of fermentation in fresh palm wine, it becomes necessary to keep it fresh and at a controlled alcoholic content of below 5% the fermentation process can be stopped by such means of preservation such as heat, treatment of pasteurization (45 degree centigrade) or by freezing (0 degree centigrade or below).

In conclusion

Palm wine is good to improve heart health and reduce hypertension and also fight cancer. Today in Igbo land palm wine is used for the introduction of marriage institution. The man coming to take a lady as his wife must bring up to four gallons of palm wine at that appointed day. And also some women that put to bed normally drink palm wine to help them breast feed their babies very well.

Palm wine is one of the most valued drink in the country. Hardly do we have an event without palm wine being shared. Though it intoxicates when taken in excess.

I remember adding it to missus diets after giving birth. Palm wine is really my favorite. But recently, my doctor advised that I stop intake of alcoholic drinks for now, which palm wine is one of those.
