When you hear about “Kobe Beef”,you'll see tender,delicious and satisfied expression in your imaginary.What is the origin of this meat? How did they raise these cows? There is a rumor that japanese Wagyu farmers ( Wagyu ~ japan cow ) massaging cows,playing classical music or feeding them beer. Is that true or rumor?
Japan has four famous domestic breeds of cattle. Kuroge (Japanese Black),Akage (Japanese Brown),Nihon Tankaku(Japanese Shorthorn)and Mukaku(Japanese Polled).
And Kobe beef is from Japanese Black. The owner of NAKANISHI Farm who passed down from generation to generation for the last 80 years said that the massaging,feeding them beer and playing music to them is probably false may be if a TV company or commercial something else.
He raised Wagyu by creating optimal living and growing conditions for each animal that means fresh mountain air and reasonable amount of living space atleast compared to American factory farms and high quality food.
The main thing that he gives the cows is essentially just hay and water. He try to get the best from around the world. The highest quality hay from Australia, Canada and US. Not just hay but three times a day,he feeds them a mixture of corn,soy scraps and other mixed greens and roughage.
Only 3000 cattle quality as Kobe quality each year. Japan's beef cattle have better genetics and have been meticulously bred and developed for hundreds of years.
There is an organization called JMGA (Japan meat grading Association).This organization rate your Wagyu quality. In Japan, the beef grades go from b1 to a5 the higher the grade the better the quality and taste. They examine the texture,brightness and firmness of the meat. If the one from your farm get highest grade quality,you will receive the Champion Kobe Beef Award.
