Poppy seed cake

We've made incredibly delicious mini cheesecake pancakes before, but now I have an original recipe for poppy seed pancakes! The idea came to me unexpectedly when I was making poppy seed pancakes and thought: What if I could put poppy seed filling in these amazing spotted pancakes? It would be a super treat with poppy seeds! And it is, try it!

The pancake mix is based on a recipe for buttermilk pancakes; it's my favourite - it's soft, smooth and therefore perfect for packing a filling into, even better than milk-based pancakes. You can use your favourite pancake recipe, just sprinkle with some poppy seeds and roll up the filling.

I don't know exactly how many pancakes you get, because I haven't counted them. We ate some as pancakes, others as pancakes without filling, entertaining our parents and friends... I can only say so much! If you want less flavor, you can halve the ingredients. But poppy seed donuts are delicious, and you can freeze them and just reheat them.

Ingredients:

Volume of a cup 200 ml.

4 eggs,

2 cups kefir,

2 cups hot water,

4 tablespoons of sugar,

2 cups of flour,

1 teaspoon baking powder,

1 teaspoon salt,

4 tablespoons vegetable oil,

4 tablespoons poppy seeds,

How to bake:

Prepare pancake mix. Prepare the pancake mix by boiling water and beating the eggs until fluffy - about 2 minutes. Pour the hot water in a thin stream, whisking as you go. This creates a frothy foam! Now pour in the kefir, pour in the sugar and stir to mix. Once you've sifted the flour into the mixture, stir again and then whisk - making sure it's not lumpy. Add the dried poppy seeds and stir with a spoon.

Finally, add the vegetable oil and stir again. The dough is ready! Now it's time to heat a pan lightly oiled with vegetable oil (just before the first pancake) and continue frying. Put a spoonful of batter on the pan, turn it and fry until golden brown.

Then turn with a thin, wide spatula and fry the second side. Here's a stack of beautiful, hot poppy seed pancakes on a plate! You can either make your own poppy seeds or use ready-made fillings. Cut the pancakes into quarters and place 1.5-2 teaspoons of poppy seed filling in each pancake. Roll up the pancake: edge to edge, then roll up.

You have a mini cake! You can serve with delicious Ukrainian nalistich with poppy seeds! Make tea and invite everyone to the table. You can also pour sour cream or jam over the ice cream - but it's sweet and delicious on its own. Small, beautiful and amazing poppies - the whole family will love them!

Poppy seed pancakes are a great breakfast option. They are moist and have a distinctive poppy seed flavour. They take a little longer to prepare than pancakes, but we're sure it's worth it. The pancakes are delicious and filling!

Because where I am now they will post something online and is something else you will be seeing, what you see beautifully display on pictures will be the complete opposite of what the person prepared or what the person will be bringing to you when you place your order.
