Mini pizzas
One day there was half a roll of salami, a piece of cheese, a mushroom and a bunch of spring onions in the fridge. What can you cook with this stock of ingredients? That's right, pizza!
But when I was about to roll out the dough, I had an idea: What if I didn't make one big pizza, but several small ones? And I was so excited to make these mini pizzas that I immediately put my idea into action. I divided the dough into 8 pieces, made a pizza dough for each, put the toppings on a plate and invited the family to pick something of their choice and make the pizza.
Everyone loved the idea, and the pizzas were so cute that we made them twice in one week! You should try it too! Easy, interesting, fun and delicious:) Mini pizzas are perfect for parties with friends, so everyone can make a unique, exclusive pizza with their favorite toppings. And how delicious to treat yourself afterwards with something you helped make! Kids especially love these little pizzas, and little chefs will love helping to make them!
For 8 pieces -.
For the dough:
15 g fresh yeast,
2 teaspoons sugar,
170 ml hot water,
2 cups of flour (260 g),
1 teaspoon of salt,
2 tablespoons vegetable oil.
This time I used 1.5 cups of wheat flour and 0.5 cups of durum wheat flour (it's more yellow in colour, healthier and tastier!). Also 1 tablespoon of sunflower oil and 1 tablespoon of mustard. It made the pizzas delicious!

Tomatoes: tomato sauce, tomato sauce, salami,
Sautéed mushrooms,
Tomatoes,
paprika,
cheese,
peas,
green onions.
And anything else you can think of (almost anything you can find in the fridge:)) Fresh peppers and frozen tomatoes are equally suitable. When the idea came in winter, I made mini pizzas with frozen tomato slices and frozen pepper slices. No need to defrost - just put the vegetable slices on the pizza just before you put it in the oven. That way, the cold topping won't stop the dough from rising and the pizza will be juicy and delicious.
How to bake:
The pizza dough is based on a recipe for a very tasty green onion pizza. I now use it as the base for all my pizzas:)
The yeast is crushed together with the sugar, warm water is added, mixed, a cup of flour is sifted, mixed again and the dough is left in a warm place for 15 minutes. When the dough is light and fluffy, sift in the second cup of flour, add salt and vegetable oil, and knead the dough. Knead the dough for at least five minutes to make it smooth and elastic. Place in a bowl, cover with a towel and leave to rise for about 40 minutes. During this time you can prepare the ingredients for the filling - you can fry the mushrooms, slice the salami, grate the cheese.
Divide the dough into 8 parts. Roll out the dough into a circle. Place it on a baking tray with baking paper and leave to rise for 10-15 minutes. Meanwhile, preheat the oven to 200 C.
Spread 1-1.5 tablespoons of tomato sauce on the pizzas.
Put the filling on top: tomatoes, peppers, salami and a little grated cheese. At this point, everyone can join in and use their culinary imagination! Work for us... And we added more frozen green peas.
Then we sprinkled the pizzas with onions.
Four pizzas fit in the pan, and the other four can be placed on baking paper on a baking sheet until the first batch is done. Then put the baking paper on the baking sheet and put the second portion on the baking sheet and bake it.
While the first portion is baking, place 4 pizzas on the baking sheet and the other 4 pizzas on the baking paper on the baking sheet. Then place the parchment paper on the baking sheet and bake the second batch.
Place the pizza crust in the oven for 15-20 minutes, until the cheese is melted and the pizza crust is a light golden colour. You can prevent the pizzas from drying out and burning by placing a baking tray or ovenproof pan of water in the bottom of the oven.
Remove the mini-pizzas with a spatula and place them on plates.

When you see the pizza - warm and delicious - you'll want to cut it open and eat a big slice right away. For a children's party, make cute little pizzas and hand them out to all the guests.
