Ingredients-
6 Cups milk full cream
1/4 Cup rice
1/3 Cup sugar (adjust as yours)
12-16 Raisin
3-4 Tb spoon chopped dry fruits (cashew, almond)
2 Tblsp grated dry coconut
Few Saffron strands
1 Tsp cardamom powder
Steps-
First of all, clean and wash rice. Take a deep pan, add milk and boil it on medium flame. Once the milk is boiled medium to low flame. Keep stirring occasionally otherwise it will burn at the bottom. It takes around 20-25 minutes to get thickness and rice cooked nicely. Add dry fruits, grated coconut, cardamom powder, raisins, and sugar. Mix nicely and cook on low flame for 1-2 minutes till sugar dissolves. Add saffron strands too if you are making kheer with saffron. Simmer for 2 minutes. Transfer into a serving bowl and garnish with chopped dry fruits. Rice kheer or rice pudding is ready to serve hot. Keep in the fridge for 30 minutes before serving.
