How to make the perfect homemade ice cream?

You will need: 300 ml of sweet cream 600 ml of milk 75 g of sugar 3 egg yolks


Preparation: Put the sweet cream, milk and sugar in a bowl and bring to a boil. Beat the egg yolks with a mixer. When the milk mixture boils, add one part to the yolks to prevent them from clotting. Then put everything back on the fire, on low heat and stir vigorously. When the mixture reaches a temperature of 80 degrees, you can remove it from the heat (or when it thickens enough). Allow to cool. Egg yolks give the mixture a rich and velvety texture. Sugar is needed because it helps make ice cream smooth and soft. You can also use honey, agave syrup or maple syrup instead of sugar. What is crucial is to "shake" the mixture. This refers to opening the freezer every hour and stirring the mixture until it becomes completely smooth again.

Find the right taste Once you have made the base mixture, adding the desired flavor is the least of the problem. You can do this by enriching the base mixture with milk and sweet cream, for example, vanilla pods, if you want vanilla ice cream, or by adding flavor after the whole base mixture is done.
