Kalamares
Calamares is the Filipino version of the Mediterranean breaded fried squid dish, Calamari. There are different methods on how to make this dish. Filipino Calamares is one of the Philippines most famous dishes, either with rice or with ice cold beer, as pulutan that is. It is also one of the easier Filipino dishes to cook. Perhaps this explains the increasing popularity of street vendors selling calamares nowadays.
Just like what I've said there are different ways to cook this. For us, it's just simple. After cleaning we set aside, slice the squid into a ½ inch rings. Marinate in calamansi juice for about 15 minutes. Dip squid rings in egg whites, then dredge in flour and fry it. Serve it with vinegar with onions and chili or mayo with ketchup.

One of my favorite street food. When I was working in Manila around Recto, I used to buy this food. I missed those days walking all over the corner to taste all street foods. Pwede to ulamin eh.hehehe
