Good evening guys! Just want to share this cute little vegetable garden that we have. We decided to plant eggpant since we love eating it during breakfast together with the famous "sinangag".
Everyday we water the plants. It's twice a day, morning and afternoon. I love it when we do this habit with my husband and daughter. It's like a simple family bonding everyday. And at the same time at a young age, we are already teaching our child how to plant and take care of it.
But after some research, I discover that this vegetable is not only delicious but very healthy too.
The eggplant provides fiber and a range of nutrients . This low calorie vegetable features in the Mediterranean diet. A serving of eggplant can provide at least 5% of a person’s daily requirement of fiber, copper, manganese, B-6, and thiamine. It also contains other vitamins and minerals. In addition, eggplants are source of phenolic compounds that act as antioxidants. Among the antioxidants in eggplants are anthocyanins, including nasunin, lutein, and zeaxanthin. (hmmm.... see it's very healthy).
Eggplants are good for the following:
heart
blood cholesterol
cancer
cognitive function
weight management
eyes
Risk:
Some people should not consume too much eggplant. I will discuss this on my next post once our eggplants started to flowers. Can't wait for that.
