Maja Blanca is the only Filipino dessert that I love to make. It is fast and easy. The ingredients are not hard to find too.
Maja Blanca is sometimes called a coconut pudding as its main ingredient is coconut milk. I prefer to use fresh coconut milk than the canned coconut milk.
FRESH COCONUT MILK
Fresh coconut milk is pressed out from the grated coconut meat. I am so glad that we can now buy grated coconut in the market.
When my mom cooked maja blanca during our younger years, I have to do the grating of the coconut. We have what we called a “kudkuran” or a coconut grater. Sometimes we called it a horse. You have to ride the kudkuran while rubbing the coconut on the sharp edges at its head.
For the first produce of coconut milk, I directly pressed the grated coconut without adding water to it.
After pressing the milk out of the grated coconut, we then separate the milk from the grated coconut. We use a handkerchief to separate and press the milk thoroughly.
I added a glass of water for the second batch of getting the coconut milk. The same process is applied until we have a liter of coconut milk.
Now that we have the coconut milk ready, let’s see what are the other ingredients that we need.
MAJA BLANCA
These are the list of ingredients that is needed to make a Maja Blanca.
Ingredients
1 liter Coconut Milk
1 can Evaporated Milk
1 can Whole Corn Kernel
1 cup Sugar
1 cup Cornstarch
Peanut for toppings.
Directions
On a large wok, pour in the coconut milk and let it boil. Add the condensed milk, sugar and condensed milk. I also added a little peanut to the mixture. Just keep on stirring and let it simmer for a few minutes.
Add a little water to the cornstarch and mix well until the cornstarch is diluted.
Pour the diluted cornstarch to the coconut mixture and stir fast until the mixture thickens.
Pour the mixtures in the pan and smoothen the top.
Add peanut toppings. Some used shredded cheese or toasted grated coconut meat as toppings.
Put in the refrigerator for at least an hour before serving. This is to let the mixture set and harden a bit.
I decided to make maja blanca for my son’s birthday on August 30 but it seems that this won’t last the day so I just ordered a cake for his birthday instead.
