Recipe for Šampita (Delicious Bosnian dessert)

Ingredients

FOR NOISE

- 6 egg whites

- 24 teaspoons of sugar

- a little less than 1 dl of water

- a pinch of salt

FOR THE BARK

- 6 egg yolks

- 6 teaspoons of sugar

- 6 tablespoons flour

- 6 tablespoons of milk

- 6 tablespoons oil

- 1 small spoon of baking powder

PREPARATION :

First make a crust. Whisk the egg yolks with the sugar into a frothy mass, add the milk, oil, flour and pzp. Put baking paper or foil in a baking tray, grease, sprinkle with flour and bake for about 15 minutes at 200 C. The baking tray is 30 × 20. When cool, remove from the pan, remove the foil and place on a tray.

For the saum, put the sugar in a sieve, add water and put to boil you can do this as soon as you make the crust. While boiling, reduce to the lowest temperature. While the water is boiling, whisk the egg whites into a stiff batter, add the salt and continue to whisk. Until then, the sugar and water boiled… Lightly add hot sugar to the solid snow NOT ONCE… at the beginning 2-3 teaspoons, later increase and so on until all the liquid is used up.

Continue stirring at maximum power / speed for approx. 10 min. Check with a spoon when it is taken and turned, that it does not slide off the spoon, but stands firm. Put the sampita on the cooled biscuit and flatten it, sprinkle with powdered chocolate, and you don't have to. Refrigerate to cool. I cut it out right away, before it goes to refrigerate. The amount of eggs can be increased as desired. There are 4 teaspoons of sugar per 1 egg white.
