Have you ever eaten Moi Moi? This was my part of my lunch today. I had no intention of taking a picture until my mom asked me to. Hehe. I have only spent less than two weeks here, and she already knows that I post some of my photographs here. Bean pudding locally called “Moi Moi” is prepared by peeling the skin of black eyed beans and then soaking and grinding it along with Onions and red pepper (usually scotch bonnet or bell pepper or both). Proteins like chicken egg, fish or diced meat can be added to it before it is then steamed. The mixture is poured in a leaf called “Thaumatococcus daniellii,” packed, and then steamed in a pot using hot water. Personally, I like taking it with chilled cassava flakes, soaked in cold water and fried fish. I wish you a lovely weekend. Got any weekend plans? I am about to sleep.
