INGREDIENTS;
Have one Kilogram of Frozen Gizzard, Riped plantains, Large onions, Tomatoes, Jalapeno peppers (use as many as you want depending on your pepperish taste), large sweet bell pepper, Scotch Bonnet, lots of Gizzard stock, cubes of Maggi, salt to taste and vegetable oil to fry.
PROCEDURE;
Rinse or wash your Gizzard and put them in a pot, then chop one large onions, then seasoned with Maggi cubes and salt. Make sure it's well cooked.
You are doing great, then while your Gizzard is cooking, prepare your other ingredients. Then chop your tomatoes, onions and peppers.
It's not ideal you use much of these ingredients, you can just use little of the ingredients. Get at least averagely chopped of these ingredients, with your bell pepper included. Then when the Gizzard is cooked, save the stock, chop the Gizzard into normal sizes and fry.
Now get your plantains, unwrap it and cut into likable sizes, then fry till it turns golden brown , and set aside.
Use some of the oil you used in frying the Gizzard, add the pepper blended, add 1 cup of the Gizzard stock, seasoning cubes, and if it's necessary, add little more cubes.
Turn the heat down completely and add the Gizzard, stir it in well and pour in the fried Plantain. Stir all using a wooden or plastic spoon so as not to marsh up the plantain.
