Mashed potato cakes

Although it would be more modern to say that these are salty muffins, but here, I like to say that these are cakes. Now, you can make them from the rest of the mashed potatoes and you can, as my grandmother would say, make a castello just for this occasion. , you will not find the word "castle" in any dictionary, it does not exist, it does not exist, so I do not know if it is a word of Turkish origin that has undergone so many changes in our climate and sounds etymologically unknown, or it is simply my late grandmother invented it! Basically, whenever I uttered it, I always encountered questioning looks, so I started using it more in myself, and less and less out loud. Kastelj - that is when you do something outside of any plan, just to do it, because (oh my God!) It has to be done. That's when you go to the city to the castle just to buy shoes that will be there tomorrow, but here ... Or the castle is washed by black jeans because they only dress you and there are thirty more in the closet. Or make pancakes while the cake is simmered in the fridge. Or you go to the bookstore just to buy a book because that is the point you are reading. Kastelj is thus more a physical feeling of compulsion than it is compulsion per se. And I started with mashed potatoes ... I guess my digressions are well known to everyone so far, and whoever is not, must reconcile with them ... In any case , it will never be clear to me how something is made from the rest of the mashed potatoes, so you still need a kilo of it, so how much of that puree did you make the day before and so much so that you missed half the sherpa? !!! In my case, it rarely overtakes it, even then only in traces. So I make a puree for these cakes for a purposeful "castle" heheheh.

Ingredients

Needed for 10-12 cakes:

500 g mashed potatoes

2 eggs

50 g of grated cheese or some other similar cheese

with and pepper to taste, do not skimp on pepper

4-5 tablespoons finely chopped chives or chopped spring onions

2 tablespoons sour cream

1 pack (10 g) of baking powder

+

2-3 tablespoons grated parmesan for sprinkling

Preparation

1.Boil the potatoes, mash and weigh, let it be 1/2 kg. Cool down. Pour it into a bowl and add all the other ingredients. Mix well with a food processor, let the mixture even out.

2.Turn on the oven to heat to 200C.

3.Coat the muffin tin with butter or oil and spread the mixture evenly. You should get 11-12 cakes, depending on how much mixture you put in. It is desirable that the surface be uneven, so the cakes will get crispy. Sprinkle with parmesan and bake in a preheated oven.

4.Bake the cakes for 35-40 minutes, depending on the strength of the oven. They should blush evenly on all sides, when you take them out they are light and gentle.

5.Leave the baked goods in the pan for a few minutes to stand, then take them out on the grill to cool.

6.Serve them with yogurt, sour cream, cheese, ham, milk, whatever fine you have.

And if you hate to make "real" mashed potatoes, you can also use the one from the bag. So: mix 120 g of instant mashed potatoes with 4 dl of cold (!!!) water and leave for a few minutes. Then add all the other ingredients and that’s it!

And just to mention: these are not cakes made from the classic dough, so don't expect them to be in the middle. They are exactly as they should be when made from mashed potatoes - a tender and creamy environment.
