Apples: Prefer apples that are smooth and of good color. Do not buy them soft, with marks or bruises.
There are three basic varieties of apples: the juicy ones, which can be eaten raw; sweet and sour, which are the best for compotes, and the firmer pulp, good for baking

Salads: Good quality salad greens have a healthy, bright color; the shade of green depends on the variety. They should all look green, not appear wilted, or have black edges.

Boiling beans: Most boiling beans have dark, shiny green leaves. The most tender are the best. Eliminate leaves that have rough stems or those that appear mushy, wilted, or dry. Spinach, kale, turnip, and chard are favorites
